This easy Alfredo sauce calls for just a handful of ingredients and comes together in about 5 minutes. Toss fettucine in this sauce or drizzle over chicken. The recipe will generously coat 1 pound of pasta, but can be stretched to 1 1/2 pounds, depending on how saucy you like your pasta.

CREAMY ALFREDO SAUCE RECIPE
This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

Steps:
- Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
- Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
- In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
- When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).
ALFREDO SAUCE
This is my son's favorite meal. I make it with shrimp for him for his birthday every year. GREAT for company because it is so easy and yet taste wonderful! I cook this in the microwave, but I'm sure you could do it on the stove too. Times are what work in my microwave. Please use your own good judgment on times to use in your microwave. (In my quest to eat healthier, I now make it with light butter, light cream and reduced fat Parmesan cheese. It still tastes wonderful, but there isn't any guilt!) PLEASE NOTE! This is an "authentic" Alfredo sauce recipe! Real Alfredo sauce *only* contains butter, cream, Parmesan cheese and pepper. It will be thin and there is no garlic in it! If you want a thicker sauce or one with garlic like modern restaurants serve, please look elsewhere! Recipe #52892 and Recipe #8596 are two good places to start.

Steps:
- Place butter in microwave safe pot and heat on high for 30 seconds or until melted.
- Add cream and warm on high for approximately 1 minute.
- Add Parmesan cheese and warm until cheese melts.
- Add salt and pepper to taste. (If serving with shrimp, you might not need much salt.).
- Pour over 4 servings of warm noodles (I use angel hair) and toss to coat. Serve immediately.
- Notes: I serve it with cubed, grilled or broiled chicken breast mixed in with the noodles or shrimp. Add a green salad and you have a complete meal. I have used margarine and canned Parmesan cheese and it worked fine.

CREAMY GARLIC ALFREDO SAUCE IN 15 MINUTES
We created this sauce with milk because most families have milk in the fridge. If you want to use heavy cream, then just eliminate the flour and replace the milk with heavy cream. Makes about 2 1/2 cups of sauce.

NO-CREAM ALFREDO SAUCE
Traditional Roman fettucine Alfredo doesn't contain a drop of cream or milk, so whether you have none in your refrigerator or you are a traditionalist, this is the recipe for you. Just because there's no cream, however, doesn't mean it isn't over the top with richness and flavor.

Steps:
- Bring a large pot of salted water to boil. Put the butter and cheese in a large bowl and set aside.
- Add the fettuccine to the boiling water and cook, stirring occasionally, according to the package instructions for al dente. Reserve 1 cup of the pasta water, then drain the pasta and add it to the large bowl. Using tongs, gently toss the pasta with the butter and cheese, adding pasta water as necessary to create a creamy looking sauce. Top with a few grinds of pepper.

- Add butter and garlic to a saute pan and heat over low heat. Allow to cook until the butter is infused with the garlic, about 5 minutes.
- Add 1 cup of heavy cream, stir, and allow to come to a simmer. Increase heat to medium, if needed. Cook for 5 minutes, stirring occasionally.
- Remove from heat and immediately add in parmesan cheese and remaining heavy cream. (Note: the parmesan will easily melt if it was finely grated from a block. If you used pre-grated cheese that is thicker, you may have to continue heating over low heat to get it to melt.) Stir to combine. It will take several minutes for the cheese to melt. It will look goopy at first and then the sauce will be creamy and smooth. If sauce needs to be thinned, add additional heavy cream.
