I got this recipe from an old boyfriend, and have modified it over the years. My husband and I have this at least every two weeks with a big loaf of garlic bread. It's very easy, but very delicious and filling.

½ cup olive oil
1 large onion, chopped
6 cloves garlic, minced
1 pinch red pepper flakes, or to taste
1 ¾ cups half-and-half cream
3 (6.5 ounce) cans minced clams, drained with juice reserved
¼ cup grated Parmesan cheese for topping
1 (8 ounce) package dried linguine pasta

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add onion and red pepper flakes, and cook stirring constantly until onion is tender. Add garlic, and cook for a couple of minutes, just until fragrant. Pour in the reserved clam juice, and simmer over low heat for 10 minutes.
  • Gradually stir the half-and-half cream into the skillet, and simmer for another 20 minutes, but do not boil. At this time, I like to prepare my linguine and garlic bread.
  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, until al dente.
  • Add clams to the sauce, and cook just until clams are heated through, or they will become tough and chewy. Remove from heat, and serve over linguine pasta. Top with a sprinkle of grated Parmesan cheese.

1 pound linguine
1 medium onion, chopped
1/4 cup butter, cubed
2 tablespoons olive oil
4 garlic cloves, minced

1/2 cup minced fresh parsley

Steps:

  • Cook linguine according to package directions. , Meanwhile, in a large saucepan, saute onion in butter and oil. Add garlic; saute for 1-2 minutes longer. Stir in flour until blended; gradually add the broth, clam juice and cream. 12 ounces uncooked linguine
2 garlic cloves, minced
1 can (2 ounces) anchovies, undrained
1 tablespoon olive oil
1 bottle (8 ounces) clam juice

1 tablespoon minced fresh parsley

1 lb clams (little neck clams in shell, washed)
1 cup clams (chopped, reserve juice)
1.5 oz garlic (chopped)
2 oz wine (chardonnay)
2 oz lemon juice
3 T parsley (chopped)
4 oz red pepper (roasted, diced)
4 T butter
2 cups veloute (chicken stocked thickened with roux)
1 lb spaghetti (angel hair, cooked, drained set aside)
1/8 tsp salt
1/8 tsp pepper

Steps:

  • In a saute pan add washed clams in the shell
  • Cook for 1 - 2 minutes,
  • Add Garlic, sautee for 1 minute
  • Add wine, cook for 1 minute, add chopped clams
  • Add Lemon Juice, red pepper, butter, parsley
  • Let sauce develop as butter melts, mix together
  • Add 2 cups veloute, stir all ingredients together
  • Dip pasta in boiling water or time so that the pasta is drained just prior to mixing the two
  • Combine hot pasta with clam sauce, mix thoroughly, adjust seasonings. Serve

This one is a family tradition. I practically grew up on it. My father, grandmother, and several great-aunts made their own variations of it. Regardless of the variation, it was always delicious. This is my own variation on the recipe, originally learned from my father. It goes great with an appetizer of Traditional Caprese Salad, a side of a fresh garden salad with Raspberry Vinaigrette Dressing, and with a dessert of Italian Orange Slices. This makes for a hearty Italian dinner, that is also health conscious - though I highly recommend a walk afterwords to kick-start the metabolism and burn the carbs. (All referenced recipes/appetizers/desserts can be found in my public recipes list.) Note: as various brands of angel hair pasta recommend different cooking times, you may want to adjust when you put the pasta in to cook. Typically, dried angel hair pasta is cooked to "al dente" (tender, but firm) within 3-5 minutes.

1 lb angel hair pasta
1 (6 1/2 ounce) can clams, chopped
fresh basil, oregano, rosemary, parsley
2 teaspoons salt (or to taste)
2 garlic cloves, minced
3 tablespoons olive oil

Steps:

  • Combine all fresh herbs on a cutting board, and mince. You will need a very sharp knife to do this right.
  • Fill a large pot with water, and add salt to taste. Bring to a boil.
  • In a medium saucepan, add oil, and heat over medium heat until oil is hot.
  • Drain the canned clams.
  • Add clams and minced garlic to oil, and saute until clams are hot (about two minutes), stirring frequently.
  • While clam and garlic mixture is heating, put the angel hair pasta in the boiling water. Cook according to the directions on the box.
  • Continue stirring the clam and garlic mixture, being careful to not let the garlic burn.
  • Add chopped herbs to the clam/garlic mixture, and saute for another two minutes. Remove from heat.
  • When pasta is done to "al dente", remove from heat and drain water.
  • Put pasta into a large bowl, and add clam/garlic/herb mixture. Mix well to prevent the pasta from sticking. Serve immediately.
  • Optionally, you can add sliced or chopped fresh onion to the sauce. Also, you can substitute (or add in addition to) shrimp, chicken, scallops, crab meat, oysters, squid, etc, for the clams. It can also be topped with grated Parmesan or Romano cheese, though traditionally, it is not.
  • This sauce is highly flexible, and can be modified in any number of ways. I always recommend using angel hair pasta though, as it soaks up the flavors better than any other type of pasta.

  • Place a large saute pan over medium heat. Add a drizzle of olive oil and once hot add the prosciutto. Let the prosciutto get nice and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  • To the same skillet add in a drizzle more of olive oil. Toss in 4 cloves of garlic and cook over medium heat until fragrant and golden brown. Remove the garlic from the skillet (leaving the oil) and discard. The garlic will infuse the oil with flavor. To the same skillet add 2/3 of your clams, the white wine, water and a pinch of crushed red pepper flakes. Cover the skillet and let the mixture simmer for about 10-12 minutes or until the clams open. Remove the clams from the pan, let cool and set aside. Once the clams cool, remove the clam meat from their shells. Meanwhile bring the remaining liquid to a boil and let it reduce by about half. Once reduced, pour the liquid through a fine mesh strainer and into a bowl. Reserve the clam liquid for later.
  • Back in the same skillet add another drizzle of oil. Add those remaining 4 cloves of garlic and saute until fragrant and golden brown. Again, remove the garlic from the skillet and discard. Add the remaining clams and the reserved clam cooking liquid. Cover and cook ten minutes or until the clams open.
