3/4 cup finely grated carrot
1/4 cup finely chopped celery
1/4 cup finely chopped green pepper
1/4 cup finely chopped cucumber
1/4 cup finely chopped onion
1 tablespoon lemon juice
8 ounces cream cheese
1 1/2 tablespoons mayonnaise
salt
pepper
garlic powder

Steps:

  • Combine vegetables in a cheesecloth.
  • Squeeze out as much juice as possible.
  • Discard juices.
  • Place vegetables in large bowl.
  • Add seasonings and stir.
  • Add lemon juice, cream cheese and mayonnaise.
  • Stir until thoroughly blended.
  • Serve on bread for sandwiches, or as a spread with crackers.

2 (8 ounce) packages light cream cheese
3 finely minced garlic cloves, pressed
1 medium red bell pepper, cut into chunks
3 medium cucumbers, peeled, seeded and chunked
2 medium carrots, cleaned and cut into chunks
1/4 cup minced green onion
2 tablespoons Hellmanns Mayonnaise (no substitute)
salt

Steps:

  • Prepare vegetables and put all of them except the onion and garlic into a large food processer. Add the cream cheese, mayo, garlic and onion and blend until creamyand the veggies are finely minced. Make sure the veggies are dry-to-touch (no extra moisture in the recipe) when you add them to the food processer. Chill until serving. Any of the health nut breads or a whole grain with nuts are delicious with this spread.

1 (16 ounce) jar creamy salad dressing (such as Miracle Whip®)
¼ cup thousand island salad dressing (such as Kraft®)

Steps:

  • Place the pickle relish into a colander set in the sink, and allow it to drain for about 30 minutes. Mix the drained relish, creamy salad dressing, and thousand island dressing in a large bowl until thoroughly combined. Place into a 1-quart jar, and refrigerate overnight to blend flavors.

Tantalizing Roasted Vegetable Sandwich With Secret Spread image

HOLY COW, this sandwich is marvelous. I'm only 3 bites into this amazing creation, and I had to come post this recipe lest I forget it. You can vary in any way you like from the original recipe, but the most important part is the cream cheese spread! (Do note that the measurements are approximate, as I didn't measure while inventing this sandwich, and adjust accordingly.)

2 tablespoons cream cheese
1 1/2 teaspoons balsamic vinaigrette
2 garlic cloves
1 tablespoon fresh basil, chopped roughly
1/2 roasted red pepper (I used peppers from a jar)
1 tablespoon sun-dried tomato (also from a jar)
2 pieces bread
1/2 roma tomato, sliced into 1/4-inch slices
1/2 green bell pepper, sliced into 1/4-inch slices
2 tablespoons balsamic vinaigrette
salt & pepper
1 teaspoon fresh basil, finely chopped
3 leaves fresh basil
1 roasted red pepper (from a jar)
1/3 cup loosely packed baby arugula
3 slices mozzarella cheese

Steps:

  • For the sandwich: Preheat oven to 400 degrees Fahrenheit. Put 2 tbsp of balsamic vinaigrette into a small bowl, and add tomato and green pepper slices, turning to coat. Put on a pan and sprinkle with the finely chopped basil, and salt & pepper. Roast for about 20 minutes, or to your liking.
  • For the spread: Put all the spread ingredients into a blender or food processor and process until a smooth paste has formed (more or less).
  • To assemble: Spread the spread over two slices of bread. Layer the arugula leaves and the fresh basil leaves, followed by the roasted red pepper. When your tomatoes and green peppers are done roasting, layer them on. Top with the sliced mozzarella while it's still hot-- so the cheese melts.
  • Enjoy!
