1 (16 ounce) package frozen broccoli, carrots and cauliflower combination
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded Cheddar cheese, divided
⅓ cup sour cream
1 (2.8 ounce) package French-fried onions, divided
¼ teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook vegetables according to package directions; drain. In a large bowl combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Transfer to a deep pie plate.
  • Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and fried onions; bake 5 minutes longer.

⅓ cup wild rice
1 cup water
½ teaspoon salt
½ cup butter
¾ cup chopped onion
1 cup chopped celery
2 teaspoons salt
¼ teaspoon ground white pepper
¼ cup all-purpose flour
5 cups milk

Steps:

  • Thoroughly rinse wild rice. In a saucepan bring to a boil wild rice, 1/2 teaspoon salt, and water. Reduce heat and simmer 30 to 45 minutes or until tender.
  • Melt butter, add onions and celery. Cover and cook gently for 5 minutes until vegetables are tender (avoid browning vegetables). Stir in 2 teaspoons salt, pepper, and flour. Remove from heat and add milk, stirring until flour is well blended.
  • Return to low heat. Cook, stirring constantly, until soup thickens. Add the cooked wild rice and simmer a few minutes to blend flavor. Serve hot, garnished with chopped chives.

1 tablespoon olive oil, (more as needed)
1 medium onion, peeled, and finely chopped
1 cup short-grain CalRose or Arborio rice
1 can (14.5 ounce size) chicken or vegetable broth
2 small carrots, chopped
1/2 pound broccoli flowerets
1 teaspoon dried Italian herbs
1/4 cup freshly-grated parmesan cheese

Steps:

  • In a 2 1/2-quart or larger pressure cooker, heat olive oil over medium-high heat. Add onion and saute until transparent. Add rice, stirring often, until lightly golden. Add the vegetables and broth. Stir to mix. Increase heat to high. Stir in herbs. Continue to stir until mixture comes to the boil to prevent sticking. Close lid and bring pressure to the first red ring (8 pounds pressure). Immediately adjust heat to stabilize pressure at the first red ring. Cook for 7 minutes. Remove from heat and use Cold Water Release Method (run cold water over the top of the cooker). Stir in Parmesan cheese and serve.

3 cups of dry/UNCOOKED instant brown rice, cooked according to package instructions
2 (10.5 oz each) containers of organic cream of mushroom soup
1 (10 oz) bag of frozen broccoli
1 (10 oz) bag of frozen peas
3 1/2 cups peeled and diced carrots
8 large cloves of garlic, minced
2 medium onions, diced
3/4 cup fresh parsley, chopped
2 1/2 cups parmesan cheese, freshly grated
2 cups sharp cheddar cheese, freshly grated
2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon cracked black pepper

Steps:

  • Measure 3 cups of dry instant rice and cook according to package instructions, set aside
  • Combine onion, garlic, carrots, olive oil, salt, and pepper in a large skillet
  • Sautee for 10 - 15 minutes on medium high heat, until carrots start to soften and onions become translucent
  • Add peas, broccoli, mushroom soup, 1 1/2 cups parmesan cheese, and 1 cup of sharp cheddar cheese to the skillet
  • Stir on medium heat until heated through, about 10 - 12 minutes
  • Add cooked rice and parsley to skillet and stir to combine
  • Transfer mixture to a 13 x 9 casserole dish
  • Top with remaining 1 cup of parmesan cheese and 1 cup of sharp cheddar cheese
  • Bake for 10-15 minutes at 400 degrees, until cheese is bubbly and beginning to brown

1/2 teaspoon salt
1 tablespoon vegetable oil
1 onion, finely chopped
1 tablespoon curry powder (or to taste)
1 cup coconut milk
90 g broccoli, cut into florets
125 g beans, cut into short lengths
1 carrot, cut into small cubes
250 g pumpkin, cut into small cubes

Steps:

  • Place rice in a large microwave-safe bowl with 3 cups boiling water and the salt. Cook on HIGH 12 - 14 minutes.
  • (Do not cover the rice or it will boil over.) Set aside. Place the oil and onion in a large dish and cook on HIGH for 2 minutes.
  • Stir in the curry powder and cook on HIGH 30 seconds.
  • Pour coconut milk into the dish so that it is well combined.
  • Add the vegetables, cover and cook on HIGH for 10 minutes; stir after 5 minutes.

2 tablespoons olive oil
1 cup chopped sweet onion (about 1/2 of a large or 1 small onion)
2 cups diced carrots (about 2 medium carrots)
1/2 cup diced celery (about 1 stalk)
3-4 cloves garlic (minced)
1/2 tablespoon dried Italian herb seasoning
1 pound cremini or button mushrooms (ends trimmed and sliced)
1 teaspoon sea salt (plus more to taste)
1/2 cup white rice
4 cups low-sodium vegetable broth
15 ounces canned white beans (drained and rinsed. You can use any white bean, such as cannellini, navy, great northern beans)
1-2 cups water
2 cups loosely packed baby spinach (roughly chopped)
1-2 tablespoons lemon juice
black pepper (to taste)

Steps:

  • Add oil to a large Dutch oven or soup pot over medium-high heat. Once oil is hot, add onion, carrots, and celery. Cook until onion starts to get golden brown, about 2 minutes. Add garlic and Italian seasoning. Cook for 1 more minute.
  • Add mushrooms and cook, stirring occasionally, until the mushrooms are soft and most of the liquid in the pan has cooked off. About 5 minutes.
  • Season with 1 teaspoon of salt then stir in rice and vegetable broth. Scrape the bottom of the pot to release and brown bits stuck to the bottom.
  • Cover pot and bring to a simmer. Lower heat to maintain simmer. Cook until rice is soft, about 15 minutes.
  • Meanwhile, add beans and 1 cup of water to a blender. Blend until smooth.
  • Once rice is cooked, remove lid and stir in bean puree.
  • Stir in spinach and cook until wilted. Add lemon juice and additional salt and pepper to taste.
  • Enjoy warm. Allow leftovers to cool completely before storing in fridge for up to 3 days.Note: As the soup sit, the rice will absorb more liquid so stir in the additional cup of water (or more) as needed. Be sure to taste and re-season the soup after adding more liquid.
