1 cup milk
2 tablespoons all-purpose flour
1 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract

Steps:

  • Whisk milk into flour in small saucepan until smooth. Heat and stir until it boils and thickens. Cool thoroughly.
  • Cream butter, sugar and vanilla in bowl until light and fluffy. Add thickened milk. Beat until mixture resembles whipped cream. Makes enough to fill and frost 2 layer cake, about 3 1/2 cups.

Yield Makes enough for one 3-layer 9-inch cake

Number Of Ingredients 5

6 tablespoons all-purpose flour
2 cups milk
2 cups (4 sticks) unsalted butter, softened
2 cups sugar
2 teaspoons vanilla extract

Steps:

  • In a medium-size saucepan, whisk the flour into the milk until smooth. Place over medium heat and, stirring constantly, cook until the mixture becomes very thick and begins to bubble, 10-15 minutes. Cover with waxed paper placed directly on the surface and cool to room temperature, about 30 minutes.
  • In a large bowl, on the medium high speed of an electric mixer, beat the butter for 3 minutes, until smooth and creamy. Gradually add the sugar, beating continuously for 3 minutes until fluffy. Add the vanilla and beat well.
  • Add the cooled milk mixture, and continue to beat on the medium high speed for 5 minutes, until very smooth and noticeably whiter in color. Cover and refrigerate for 15 minutes (no less and no longer-set a timer!). Use immediately.

This is the recipe that I use for the Cut out frosted butter cookies. This recipe is also in the Best Foods of Christmas cookbook. I always double this recipe so we have plenty of frosting to go around for everyone to decorate. I also divide the frosting into thirds. I'll take one bowl of frosting and add red food coloring to make it pink and add peppermint extract. In another bowl of frosting I'll add green food coloring for green frosting. In the other bowl of frosting I keep it white for white frosting. YEAH now for the FUN part.

1 1/3 cups milk (low fat is fine)
1/4 cup flour
1/2 teaspoon salt
1 1/3 cups sugar
1 1/3 cups butter, softened
2 teaspoons vanilla extract

Steps:

  • Combine milk, flour, salt in a saucepan with the heat turned off. Whisk until smooth. Cook over medium high heat, whisking until mixture thickens and comes to a boil (about 5-7 minutes). Yes! I use measuring cup on a stove top :).
  • Boil for 1 minute, remove from heat then strain into a bowl. Cover with plastic wrap to avoid skin from forming. Cool for about an hour and half.
  • When flour mixture is cool, beat butter, sugar and vanilla in a large bowl until light and creamy. Adding a dollop at a time, beat in the cooled flour mixture until the frosting is creamy and light.
  • Enough frosting for 24 cupcakes.
  • Tip: Add 2 tablespoons (30ml) unflavored gelatin in the frosting to help stablize the cream. (In 50ml hot water add 1 gram of unflavoured gelatin or depending on the packet instruction.

12 tablespoons butter
2 teaspoons vanilla
3 1/2 cups powdered sugar
4 tablespoons whipping cream

Steps:

  • Cream butter in a standing mixer for about 5 minutes or until fluffy.
  • Keeping the mixer on, add the vanilla.
  • Add the powdered sugar, a little at a time until fully incorporated. With about half of the sugar in, add 2 tbls. of whipping cream.
  • Pour in the rest of the powdered sugar and then the remaining 2 tbls. of whipping cream. Continue mixing until you get a nice, fluffy, creamy consistency.
  • Add any other flavorings or color and store in the refrigerator until it's ready to be spread. Can be made ahead of time. Double recipe for two 9 inch cakes.
