Time 40m

Number Of Ingredients 25

4 chicken breasts
1 large egg
3 tbsp plain (all-purpose flour (replace with gluten free flour blend if needed))
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp paprika
1/4 tsp garlic salt
2 tbsp olive oil
1 tbsp olive oil
1 onion (peeled and sliced)
2 cloves garlic (peeled and minced)
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes (I like the bright red one from the deli counter)
1 red bell pepper (de-seeded and sliced)
1 tbsp tomato puree ((paste))
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock ((use bouillon for gluten free))
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese (grated)
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

Steps:

  • Preheat the oven to 160C/320F. Trim the chicken breasts to remove any fatty parts.
  • Whisk the egg lightly in a shallow bowl.
  • In a separate shallow bowl, mix together the flour, salt, pepper, oregano, thyme, paprika and garlic salt.
  • Heat 2 tbsp of the olive oil in a large frying pan (skillet) on a medium-to-high heat.
  • Dip the chicken breasts in the egg, then dredge in the flour mixture.
  • Place the chicken in the pan and fry on both sides until golden.
  • Take the chicken out of the pan and place on a tray in the oven for 10 minutes to finish cooking whilst you make the sauce.
  • Add the oil to the pan and heat on a medium heat.
  • Add the onion and cook for 3-4 minutes until they start to soften.
  • Add the garlic, oregano, paprika, sun dried tomatoes, red pepper and tomato puree. Cook for 2 minutes, moving around the pan with a spatula.
  • Next pour in the wine and allow to bubble for 2 minutes,
  • Now add the chicken stock, salt and pepper. Bring the boil, then simmer for 5 minutes.
  • Add the cream, parmesan and the spinach to the sauce and stir and cook for a couple of minutes until the spinach wilts.
  • Remove the chicken from the oven. Check it's done (insert a knife into the fattest piece of one of the chicken breasts - it should no longer be pink) and place in the pan with the sauce and cook for another couple of minutes.
  • Serve topped with a sprinkling of fresh parsley. Tastes great with pasta, courgetti (zoodles), rice or saute potatoes.

CREAMY TUSCAN PASTA SAUCE WITH CHICKEN AND BALSAMIC MUSHROOMS

Creamy Tuscan Pasta Sauce With Chicken and Balsamic Mushrooms image

Decadent, creamy, flavorful, and very impressive while also being simple and straightforward to prepare! This is the kind of recipe I would make to impress a date on Valentine's day, yet it's also simple and easy to whip together quickly! But how can you go wrong with anything involving cream cheese, balsamic vinegar, tomatoes, basil, mushrooms, chicken, parmesan? The combination of colors and flavors is perfect.

Provided by licked_cupcake

Categories     One Dish Meal

Time 1h

Yield 4 , 4 serving(s)

Number Of Ingredients 21

1 tablespoon balsamic vinegar
2 teaspoons brown sugar
1 tablespoon water
2 tablespoons unsalted butter, divided
2 tablespoons extra-virgin olive oil
1 lb mushroom
1/4 teaspoon kosher salt
3 garlic cloves
1/4 teaspoon black pepper
4 tablespoons butter
6 garlic cloves
1 teaspoon dried basil
8 ounces cream cheese, softened
8 ounces jar sun-dried tomatoes, drained and chopped
2 cups milk
6 ounces parmesan cheese, grated (about 2 cups)
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup fresh basil, sliced into thin strips
8 ounces cherry tomatoes, halved
1 lb chicken, cooked and chopped

Steps:

  • Set out cream cheese to soften. Then prepare your chicken. Precooked chicken strips are very easy, and this would also be a great way to use up leftover rotisserie chicken, by dicing into bite-sized pieces. Or you can bake or pan-fry your chicken breasts and then cut into bite sized pieces.
  • Prepare the balsamic mushrooms. First, in a small dish, whisk together the balsamic vinegar, brown sugar and 1 tablespoon water, set aside.
  • In a large skillet, heat 1 tablespoon of the butter with the olive oil over medium-high heat. When the butter is melted, add the mushrooms and salt and stir right away with a wooden spoon until the mushrooms have absorbed all the fat.
  • Let the mushrooms cook undisturbed for 2 minutes and then stir once. The pan will look dry, but keep the heat at medium-high and continue to cook, stirring infrequently, until the mushrooms are shrunken, glistening, and some sides have developed a deep orange-brown color, 6 to 7 minutes more.
  • Turn the heat to low, add the garlic and the remaining 1 tablespoon butter and cook, stirring, until the butter is melted and the garlic is fragrant, 15 to 20 seconds. Carefully add the balsamic mixture. Cook, stirring, until the liquid reduces to a glazey consistency that coats the mushrooms, 15 to 20 seconds. Season with pepper. Set aside mushrooms.
  • Prep remaining ingredients - shred parmesan, mince garlic (or use garlic press), halve cherry tomatoes, julienne-slice basil leaves into thin strips, boil pasta.
  • In a medium pot or skillet, melt the butter over medium heat. Add the garlic and cook for about 2 minutes, stirring constantly, taking care not to let the garlic burn. Stir in the dried basil. Add the cream cheese, stirring with a whisk until the mixture is smooth. It will look curdled at first, but with constant whisking for 2-3 minutes, it should come together to form a smooth, creamy paste. Stir in the sun-dried tomatoes.
  • Over medium heat, add the milk gradually, about 1/4 cup at a time, whisking quickly and constantly until each addition is incorporated fully into the sauce. Stir in the Parmesan cheese, pepper, salt, and half of the fresh basil. Cook over medium heat, stirring until the cheese is melted and the sauce is the desired consistency, 5-10 minutes.
  • Plate! Layer pasta, then chicken, then mushrooms, then sauce, and top with cherry tomatoes and remaining fresh basil.

CREAMY TUSCAN CHICKEN PASTA

Creamy Tuscan Chicken Pasta image

This Creamy Tuscan Chicken Pasta has the most amazing, creamy sauce. It's loaded with the flavors of the Mediterranean - sundried tomato, baby spinach, garlic, red pepper, and parmesan. Super quick and easy. A restaurant quality dish on the table in under 30 minutes.

Provided by Kelly

Number Of Ingredients 14

1 pound penne or other pasta ((454g))
1 tablespoon butter ((.5oz, 14g))
2 tablespoons olive or vegetable oil
1 ½ pounds chicken breasts ((454g))
1 medium onion (diced)
1 red bell pepper (diced)
8.5 ounce jar ((241g) sundried tomatoes in oil, drained (yields about 6oz, 170g))
5 cloves garlic (finely minced)
1 teaspoon dried Italian seasoning ((or oregano))
¾ cup chicken broth ((6oz, 170g))
1 ½ cup cream or half and half ((12oz, 340g))
¾ cup parmesan cheese ((3oz, 85g))
6 ounce bag of baby spinach leaves (whole or roughly chopped (170g))
Red pepper flakes (salt, and pepper to taste)

Steps:

  • Bring a large pan of salted water to a boil. Add the pasta and cook until al dente. Drain and toss with butter.
  • Optional: For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening.
  • Season with salt and pepper.
  • Heat a skillet over high heat. When pan is hot, add 1 tablespoon oil.
  • When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan.
  • Let chicken cool for a few minutes, then slice. Set aside.
  • Add remaining tablespoon oil to pan. Add onions and cook until softened.
  • Add red bell pepper and cook until almost softened.
  • Add the garlic, sundried tomatoes, and Italian seasoning. Stir, and cook for about 1 minute.
  • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
  • Add cream and bring to a simmer. Allow to simmer for 2 minutes. Add parmesan and cook until melted.
  • When cheese is melted turn off the heat and stir in baby spinach.
  • Salt and pepper to taste.
  • Combine pasta, chicken, and sauce.
  • Serve.

PASTA WITH TOMATO CREAM SAUCE

Pasta with Tomato Cream Sauce image

Recipe video above. Pasta in a pink tomato cream sauce! You'll love how creamy this sauce is, how there's plenty of it and yet you don't need gallons of cream. Slurp-worthy as it is, or use it as a base for add ins of your choice - suggestions in the recipe notes.

Categories     Mains

Time 20m

Number Of Ingredients 11

300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

CREAMY TUSCAN CHICKEN

Creamy Tuscan Chicken image

Creamy Tuscan chicken with fresh garlic, spinach, and sun-dried tomatoes is a meal worthy of entertaining or special occasions, yet can be on your table in 30 minutes.

Provided by Monica | Nourish + Fete

Categories     Dinner

Time 30m

Number Of Ingredients 13

1-2 tablespoons extra-virgin olive oil
1/4 cup all-purpose flour
4 boneless skinless chicken breasts (thinly-sliced (about 1-1.5 pounds) (see note 1))
2-3 teaspoons kosher salt
a few turns of freshly-ground black pepper
4 cloves garlic (minced (see note 2))
1/2 cup chicken broth
3/4 cup heavy cream
1 teaspoon Italian seasoning
1/2 cup Parmesan cheese (grated)
1-2 cups fresh spinach (roughly chopped)
1/2 cup sun-dried tomatoes (roughly chopped (see note 3) )
pasta (for serving)

Steps:

  • In a large skillet, warm olive oil over medium-high heat. Place flour in a small bowl or plate. Lightly sprinkle each side of the chicken breasts with kosher salt and black pepper, then dredge each side lightly through the flour. Shake off any excess, then place chicken breasts in the warm pan. Cook for 3-4 minutes on each side, just until browned and no longer pink in the center. Remove chicken to a plate and set aside.
  • If the skillet is dry, add a tiny bit more olive oil, followed by the garlic. Cook for about 1 minute, just until fragrant. Add chicken broth, and scrape any browned bits from the bottom of the skillet.
  • Add cream, Italian seasoning, and Parmesan cheese. Cook over medium heat for 5-7 minutes, stirring frequently, until the sauce visibly thickens.
  • Stir in spinach and sun-dried tomatoes, and simmer for 1-2 minutes, until spinach wilts.
  • Add chicken back to the skillet, spoon a bit of sauce over each piece, and serve with pasta or other sides as desired.

TUSCAN CHICKEN PASTA

Tuscan Chicken Pasta image

This Tuscan Chicken Pasta recipe is an easy one pot recipe that you can make using any kind of pasta! You'll love the creamy sauce, seasoned chicken, sundried tomatoes, and spinach.

Provided by Stephanie

Categories     Main Course

Time 45m

Number Of Ingredients 17

2-3 tablespoons olive oil
1 large boneless skinless chicken breast (equal to 1 lb.)
3 teaspoons Italian seasoning
Salt/Pepper (to taste)
1 tablespoon salted butter
3 cloves garlic (minced)
¼ cup dry white wine (see notes)
1 tablespoon tomato Paste
1 teaspoon dried oregano
1 pinch red pepper flakes (optional)
2 cups chicken broth
1 ¼ cups half and half ((half cream/half milk))
1/3 cup sundried tomatoes (drained and chopped)
½ lb. pasta (any kind. I used pappardelle)
½ cup Parmesan cheese (grated)
¼ cup Romano cheese (grated)
2 cups spinach

Steps:

  • Slice the chicken into 3 thinner slices and pat completely dry. Season each side with Italian seasoning and salt/pepper.
  • Heat olive oil in a large pot over medium-high heat. Add the chicken and sear on each side for 4-5 minutes, until a golden brown crust has developed. Set aside once cooked through. Remove any leftover oil but keep the brown remnants in the pot. Let the chicken rest for 5 minutes, then cut into bite-sized pieces. Add any juice from the chicken plate to the pot.
  • Melt butter over medium heat. Add the garlic, wine, tomato paste, oregano, and red pepper flakes. Use a silicone spatula to "clean" the bottom and sides of the pan to incorporate more flavor into the sauce. Cook until thickened and reduced by half, 3-4 minutes.
  • Add the chicken broth. Slowly stir in the half and half. Add the sundried tomatoes and bring to a gentle boil. Add the pasta and submerge it into the liquid. Let it come to a boil again and cook according to package instructions. Stir a few times throughout cooking to ensure pasta doesn't stick to the bottom. Taste test a noodle for doneness before proceeding.
  • Reduce heat to low. Slowly sprinkle in the cheese and stir to incorporate until smooth.
  • Add the chicken and spinach and stir to combine. Heat 1-2 minutes, until chicken is heated and spinach is wilted. Serve!

  • Add the remaining tablespoon of olive oil and reduce heat to medium. Cook the onion for 2 to 3 minutes until softened then add the garlic and sun dried tomatoes and cook for 1 minute, stirring frequently to avoid burning.
