CREAMY TUNA CASSEROLE
A creamy version of a comfort food classic. This recipe is a staple in our home and when served to guests they beg for the recipe. Hope you enjoy it too. :)

Steps:
- Pre-heat oven to 375 degrees.
- Cook pasta until al dente.
- Combine tuna, sour cream, soup, veggies, and garlic in a pot and warm on stove top over low heat.
- Combine tuna mixture with cooked, drained pasta and pour into a greased 9x12 pan.
- Top with cheese and crackers and bake for 25 minutes.
- Mmmm, good.
HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Steps:
- Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
- Ladle tuna mixture over toasted bread to serve.

CHEF JOHN'S TUNA NOODLE CASSEROLE
I consider this the king of comfort food casseroles. What I love about this recipe, other than that it is simple and easy, is that it doesn't require the traditional can of cream of mushroom soup--but it still has the same amount of creamy, decadent goodness that every casserole should. Serve this with a green salad on the side.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly butter a 9x13-inch casserole dish.
- Melt 3 tablespoons butter in a medium saucepan over medium heat. Saute onion with 1/2 teaspoon kosher salt until it starts to soften up and turn translucent, 3 to 4 minutes. Add the flour, and cook, stirring, for 3 minutes, reducing heat if needed.
- Pour in cold milk and whisk for 1 minute. Raise heat to medium-high and cook, stirring often, until the sauce thickens and comes to a simmer. Remove from heat, whisk in Cheddar cheese, and reserve until needed.
- Fill a large pot with water and remaining salt and bring to a rapid boil. Cook egg noodles for 5 minutes. Drain well and add to a large mixing bowl. Stir in the reserved sauce, followed by tuna, peas, cayenne, black pepper, and Worcestershire sauce. Mix with a spatula until evenly combined.
- Pour the mixture into the prepared dish. Mix bread crumbs, Parmigiano-Reggiano cheese, and olive oil together in a small bowl until combined and resembling wet sand. Sprinkle evenly over the casserole.
- Bake in the center of the preheated oven until browned and bubbly, about 30 minutes. Let sit for 10 minutes before cutting and serving.

- Combine butter, pasta, broth, 2 cups water, and shallots in a large straight-sided skillet or stockpot; season with salt and pepper. Bring to a boil, then reduce heat to medium-high and cook, stirring frequently, until very al dente, about 5 minutes.
- Stir in asparagus; cook until crisp-tender, 1 to 2 minutes. Add arugula, Parmesan, and lemon zest; stir to combine. Fold in tuna and lemon juice. Serve immediately, drizzled with oil and sprinkled with more pepper and Parmesan.
HEARTY TUNA CASSEROLE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Bring a large pot of salted water to a boil, add noodles, and cook until al dente; drain.
- In a large mixing bowl, combine noodles, tuna, celery, and green onion. Stir in sour cream, mustard, and mayonnaise. Season with salt and thyme. Spoon 1/2 of the noodle mixture into the prepared casserole dish. Arrange a layer of zucchini over the mixture. Top with the remaining noodles, followed by a layer of zucchini. Top the entire casserole with cheese.
- Bake in preheated oven for 30 minutes, or until hot and bubbly. Sprinkle the casserole with tomatoes before serving.

CREAMY TUNA BUNDLES

- Preheat oven to 375°.Place tuna in a small bowl. Break apart with a fork. Toss with 3 teaspoon of the lemon juice set aside.In a medium bowl, stir cream cheese, chives, parsley, remaining 1 teaspoon lemon juice, salt and hot pepper sauce until blended. Stir in celery. Add tuna mixture. Stir just until blended.Separate crescent roll dough into four rectangles, pinching perforations together. Roll each into a 7 x 5-inch rectangle. Place one-fourth of the tuna mixture on half of each rectangle. Fold in half to completely enclose filling. Press edges together to seal. Place on an ungreased baking sheet. Carefully brush tops with egg and sprinkle with seeds.Bake for 15 minutes or until golden brown. Serve immediately.
