I found this on another website, but haven't had a chance to try it yet. Hearty Italian sausage sauteed with garlic and red pepper flakes are simmered with tomatoes and cooked with vodka and cream to make a rich, spicy sauce. Toss with penne and fresh parsley to serve.

1 lb uncooked penne pasta
2 tablespoons extra virgin olive oil
4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes (or to taste)
1 (28 ounce) can crushed tomatoes
3/4 teaspoon salt
2 tablespoons vodka
1/2 cup heavy whipping cream
1/4 cup chopped fresh parsley
1/2-1 lb sweet Italian sausage

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente, drain.
  • In large skillet, heat oil over moderate heat. Add sausage, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
  • Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
  • Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve,.

The quintessential three ingredients which make a killer tasty Vodka Sauce are 1) Vodka, 2) A good quality Tomato Sauce, 3) Cream. You can pull a delicious family pasta dinner of Penne All Vodka if you have penne pasta and above three. Vodka Tomato Sauce:To make Tomato Sauce, I start by sauteing onion and garlic until onions are just soft. I use mixture of olive oil and butter for more flavor and rich creamy sauce. Once onions are soft, I cook aromatic for 1 minute before de-glazing pan with Vodka. It is important to cook-off alcohol in vodka before adding tomatoes. My family will only eat pasta Vodka Sauce with cream. For silky, signature (restaurant-style) vodka sauce, cream is must have. It is even more important than vodka. :)I add cream and heat sauce very briefly until it thickens a bit and comes together. Cream makes sauce smooth, also mellow-down the flavor of tomato sauce. For best results, use good quality heavy cream (double cream). Note: Half and half (half cream, half whole milk) does good job too and make sauce bit lite.Make Vodka Sauce Ahead of TimeVodka Sauce can be made up-to 3-4 days ahead of time. 28 Oz Tomatoes, Good quality San Marzano Tomatoes, pureed, no salt added
1/2 Cup Heavy Cream, use more as per taste
1/2 Cup Vodka
2 tbsp Olive Oil, and 1 tbsp butter
1 tbsp Italian Seasoning, or mix equal part of oregano, basil, and thyme
1/2 tbsp Garlic, 2-3 cloves, small diced
1/2 Cup Yellow Onion, small diced
1/4 tsp Chili Flakes
1 tsp Salt and Black Pepper, 1 tsp salt, 1/4 tsp black pepper, adjust per taste
1 lbs Pasta, Bow Tie Or Penne Pasta
1/2 Cup Parmesan Cheese, grated
few tbsp Basil, fresh basil leaves, chopped

Steps:

  • Cook Pasta: To boil pasta, bring pot of water to full boil and add generous amount of salt (approx. 1 tbsp). Boil pasta in this water until al-dente or cook pasta as per package directions (regular penne pasta takes about 11-12 minutes).
  • In a wide, deep, heavy bottom pan, heat 2 tbsp oil and 1 tbsp of butter. When butter melts, add diced onion, and garlic. Sweat onions in oil until they are just soft. (2 minutes. Don't let garlic/onion burn.) Add herbs, and chili flakes and continue cooking for 1 minute. Now add vodka and cook for 3 minutes so that alcohol evaporates leaving behind the flavor only. Add pureed tomatoes, with 1/2 tsp of salt. Cook covered for 7-8 minutes or until oil shows on top.
  • To make Vodka Cream Sauce, add 1/2 cup heavy cream, and crushed black pepper. Mix well, taste and adjust salt. If sauce feels tart/need more creaminess, add few more tbsp heavy cream, cook with cream for 1-2 minute and then remove from heat.
  • Add in cooked/drained pasta, all but 2 tbsp of Parmesan cheese (leave 2 tbsp for garnish) and couple of tbsps of pasta water to sauce. Toss everything very gently. Garnish with fresh basil leaves and some remaining grated Parmesan Cheese. Serve immediately and enjoy easy Italian at home!!

Creamy Roasted Tomato Vodka Sauce with Penne image

This creamy vodka sauce pasta is fulfilling on its own, but see my tips in the post above for tasty dairy-free add-in options.

2 lbs cherry, grape or mini tomatoes
3 tablespoons olive oil, divided
1¼ teaspoons salt, divided, plus additional to taste
1 to 2 garlic cloves, whole, unpeeled (optional)
1 shallots, thinly sliced or minced (optional)
¼ teaspoon crushed red pepper
½ cup vodka (or two 50 mL mini bottles)
½ cup raw cashew pieces
¾ to 1 cup unsweetened cashew milk beverage (can sub unsweetened coconut milk beverage)
4 large basil leaves, minced
12 ounces dry penne (gluten-free, if needed)

Steps:

  • Preheat your oven to 375ºF.
  • Place the tomatoes on a rimmed baking sheet and toss with 1 tablespoon oil and ¼ teaspoon salt. Place the garlic, if using, on the baking sheet. Roast for 30 to 40 minutes, or until the tomato skins have "popped" and are starting to brown in spots.
  • Let the tomatoes cool 10 minutes, then add tomatoes with juices to a blender. Squeeze garlic pulp, if using, into the blender and add ½ teaspoon salt. Puree until smooth.
  • Heat 2 tablespoons oil in a large skillet over medium-low heat. Add shallots, if using, and saute until tender, about 3 minutes. Add red pepper and continue to saute 30 seconds.
  • Remove from heat, whisk in tomato puree and vodka. Return to the heat and bring to a simmer. Reduce heat to low and simmer 15 to 20 minutes.
  • While the sauce simmers, grind the cashews in a spice grinder until powdered. Add the cashew flour, ¾ cup cashew milk beverage, and ½ teaspoon salt to your blender, and whiz until smooth and creamy. If desired, strain through a fine mesh strainer to remove any remaining nut bits.
  • Cook pasta according to package directions.
  • Whisk the cashew cream into the tomato sauce, and continue to simmer for a few minutes, or until thickened. Add more cashew milk beverage if the sauce thickens too much. Taste test, and sprinkle in more salt, to taste (we use another ¼ to ½ teaspoon)
  • Stir penne into sauce. Serve topped with fresh basil.

1 small onion (chopped)
1 large clove garlic (crushed)
3 cups tomatoes (coarsely chopped)

1/2 cup parsley
1/2 cup parmesan
3 tbsp. vodka

  • 1. Cook onion and garlic in oil over medium heat until translucent. 2. Add tomatoes, red pepper, and oregano and bring to a boil. 3. Reduce heat to low, simmer 5 minutes. 4. Stir in cream, parsley, vodka, salt to taste, and half of cheese. Heat through.

Steps:

  • In a large skillet over medium heat, melt better with oil; add onion and saute for 8 minutes or until transparent.

A staple on trattoria menus in the 1970s and 80s, pasta with vodka sauce had all but been forgotten until a recent social media revival. The alcohol burns off, so the vodka just adds a special depth of flavour to the sauce. This quick and easy recipe is a great way to serve two people with only 25 minutes' work.

1 tbsp olive oil
½ onion, finely chopped
200g rigatoni
1 garlic clove, chopped
70g tomato purée
2 tbsp vodka
100ml double cream
50g sun-blushed tomatoes (we used Unearthed Slow Roasted Tomatoes)
1 handful rocket leaves
1 handful parmesan (or vegetarian Italian hard cheese), finely grated, to serve

Steps:

  • Put a large saucepan of salted water over a high heat and bring to the boil. Meanwhile, heat the oil in a small saucepan, add the onions and cook over a low heat for 10 mins, until tender and translucent. When the onions are almost ready, add the pasta to the boiling water and cook according to packet instructions, until al dente.
  • Stir the garlic and tomato purée into the onions, cook for 30 secs, then add the vodka and cook for 1 min. Add the cream, stir well and season with salt and pepper. When the cream comes to the boil, remove from the heat and stir in the tomatoes.
  • Drain the pasta, reserving 50ml of the cooking water. Return the pasta to its pan and tip in the sauce. Stir well to combine, adding the cooking water to create a creamy sauce, then serve with a scattering of rocket leaves and some parmesan.
