Homemade tomato soup with fresh basil and Parmesan cheese. You many never eat the canned stuff again after trying this easy recipe.

4 tablespoons butter
1 cup finely diced onion
1 cup finely diced carrot
2 cloves garlic, minced
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
4 tablespoons flour
4 cups chicken or vegetable broth
2 (14.5 oz.) cans diced tomatoes
1 cup heavy cream
1 cup grated Parmesan cheese
1/4 cup fresh basil, chopped

Steps:

  • Melt butter in a large stock pot over medium heat.
  • Add onions, carrot, garlic, oregano, salt and pepper and cook until vegetables are tender, about 5 minutes. Stir in flour and cook for 1-2 more minutes.
  • Whisk in broth and cook, stirring constantly until mixture thickens. Stir in tomatoes and heavy cream.
  • Add Parmesan and heat through until cheese is melted. Season with additional salt and pepper, to taste. Stir in basil just before serving.

2 large garlic cloves, minced
2 tablespoons olive oil
2 (10.75-ounce) cans of tomato soup
1/4 cup sun-dried tomatoes, chopped or 2 tablespoons sun-dried tomato paste
2 cups half-and-half
2 cups chicken stock
1 teaspoon onion powder
1 tablespoons Italian seasoning
1/2 teaspoons salt
1/2 teaspoons pepper
1 (9-ounce) package cheese-filled tortellini
1/2 cup shredded Parmesan cheese

Steps:

  • Sauté garlic with the olive oil in a large stock pot over medium heat until golden brown. Be sure to keep an eye on it so it doesn't get too brown or burnt. When the garlic is done, add tomato soup, tomatoes, half and half, chicken stock and spices, and bring to a simmer. Once simmering, drop tortellini into the soup. Cook according to the package directions. After tortellini are cooked, ladle soup into bowls and top with Parmesan cheese.

  • Place the tomatoes, onion and garlic in a blender; cover and process until smooth. Transfer to a large saucepan. Add chicken broth and seasonings. Bring to a boil. 1 small onion (chopped)
2 (15 ounce) cans diced fire-roasted tomatoes
2 (10 3/4 ounce) cans campbell's tomato soup
2 (10 ounce) cans milk (use soup can)
10 fresh basil leaves, chopped or 1 tablespoon dried basil
1 (14 1/2 ounce) can chicken broth
3 tablespoons Italian-style tomato paste
1/2 cup light cream or 1/2 cup half-and-half
1/4 cup grated parmesan cheese
1 (9 ounce) package cheese tortellini

Steps:

  • Coat soup pan with olive oil. Add onion and garlic and saute till soft.
  • Add canned diced tomatoes, basil, tomato soup and two cans milk. Stir till blended.
  • Add chicken broth and stir in tomato paste till blended.
  • Simmer for 20 minutes
  • Add light cream and parmesan cheese.
  • Add tortellini and cook till tender (at least 15 minutes).

This is a creamy, rich, delicious soup. Most of the people I cook for are very picky and this one turned out to be a crowd pleaser. Serve with fresh Italian bread on a cold winter's night! 6 sweet Italian pork sausage links, casings removed

½ cup butter
¾ cup all-purpose flour

Steps:

  • Heat olive oil in a skillet over medium-high heat; cook and stir sausage and garlic until sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.

1 (15 ounce) can navy beans, do not drain
1/2 cup milk
3/4 teaspoon sea salt or 3/4 teaspoon salt, to taste

2 tablespoons fresh parsley or 2 tablespoons fresh cilantro, minced
2 cups tortilla chips or 2 cups corn tortilla strips

Steps:

  • Place beans and tomatoes in a blender and puree until creamy.

4 Tbsp unsalted butter
2 yellow onions ((3 cups finely chopped) )
3 garlic cloves ((1 Tbsp minced))
56 oz crushed tomatoes ((two, 28-oz cans) with their juice, preferably San Marzano)
2 cups chicken stock
1/4 cup chopped fresh basil (plus more to serve)
1 Tbsp sugar (or added to taste)
1/2 tsp black pepper (or to taste)
1/2 cup heavy whipping cream (or to taste to combat acidity)
1/3 cup parmesan cheese (freshly grated, plus more to serve)

Steps:

  • Heat a nonreactive pot or enameled dutch oven over medium heat. Add butter then add chopped onions. Sauté 10-12 minutes, stirring occasionally, until softened and golden. Add minced garlic and sauté 1 minute until fragrant.
  • Add crushed tomatoes with their juice, chicken stock, chopped basil, sugar (or add sugar to taste), and black pepper. Stir together and bring to a boil then reduce heat, partially cover with lid and simmer for 10 minutes.
  • You can leave your soup with a chunky consistency, but if you like a blended/creamy soup, use an immersion blender to blend the soup in the pot to desired consistency or transfer to a blender in batches and blend until smooth (being careful not to over-fill the blender with hot liquid), then return blended soup to the pot over medium heat.
  • Add 1/2 cup heavy cream, 1/3 cup freshly grated parmesan cheese and return to a simmer. Season to taste with salt and pepper if needed and turn off the heat.*
  • Ladle into warm bowls and top with more parmesan and chopped fresh basil.

1/2 cup (1/2 stick) butter
1 medium onion, diced
1/2 cup diced celery
2 garlic cloves, minced
1 medium tomato, chopped
2 tablespoons minced fresh chives
1 1/2 cups crushed unsalted tortilla chips
1 tablespoon all purpose flour
1/4 cup whipping cream
1 cup grated Monterey Jack cheese (about 4 ounces)
1 cup grated cheddar cheese (about 4 ounces)
2 teaspoons chili powder
2 teaspoons ground cumin
Crushed unsalted tortilla chips

Steps:

  • Bring chicken broth to boil in small saucepan over medium heat.
  • Meanwhile, melt butter in heavy medium saucepan over medium heat. Add onion, celery and garlic and sauté until onion is translucent, about 4 minutes. Reserve 1 tablespoon chopped tomato and 2 tablespoon chives for garnish. Add remaining tomato, chives and 1 1/2 cups tortilla chips to saucepan and sauté 2 minutes. Reduce heat to low. Sprinkle 1 tablespoon flour over and stir mixture for 2 minutes.
  • Stir chicken broth into tortilla mixture. Cover and bring to boil. Reduce heat. Stir in whipping cream. Add grated Jack and cheddar cheese and stir mixture until cheese is melted and well blended. Add chili powder and cumin. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover tightly and refrigerate. Rewarm soup over low heat, stirring frequently.) Ladle into bowls. Sprinkle each with some of reserved tomato and chives and crushed tortilla chips and serve.

1 tablespoon plus 1 teaspoon canola oil
1/4 teaspoon salt
1 small onion, chopped (about 1 cup)

1 small jalapeno pepper, seeded and finely chopped
1 teaspoon ground cumin
3/4 teaspoon dried oregano
4 cups low-sodium chicken broth
2 (14.5-ounce) cans no salt added diced tomatoes. with juice
1/4 cup fresh lime juice
1/4 cup reduced-fat sour cream
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush both sides of each tortilla with oil, using 1 tablespoon of the oil. Cut the tortillas in half, then cut each half into 1/4-inch wide strips. Arrange the strips on a baking sheet, sprinkle with the salt, and bake until crisp and golden, about 12 minutes. Remove from oven and set aside.
  • Heat the remaining 1 teaspoons of oil in a large heavy skillet over medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until onion is soft and translucent.
