CREAMY TOMATO PARMESAN SOUP
Homemade tomato soup with fresh basil and Parmesan cheese. You many never eat the canned stuff again after trying this easy recipe.

Steps:
- Melt butter in a large stock pot over medium heat.
- Add onions, carrot, garlic, oregano, salt and pepper and cook until vegetables are tender, about 5 minutes. Stir in flour and cook for 1-2 more minutes.
- Whisk in broth and cook, stirring constantly until mixture thickens. Stir in tomatoes and heavy cream.
- Add Parmesan and heat through until cheese is melted. Season with additional salt and pepper, to taste. Stir in basil just before serving.

- Sauté garlic with the olive oil in a large stock pot over medium heat until golden brown. Be sure to keep an eye on it so it doesn't get too brown or burnt. When the garlic is done, add tomato soup, tomatoes, half and half, chicken stock and spices, and bring to a simmer. Once simmering, drop tortellini into the soup. Cook according to the package directions. After tortellini are cooked, ladle soup into bowls and top with Parmesan cheese.

- Coat soup pan with olive oil. Add onion and garlic and saute till soft.
- Add canned diced tomatoes, basil, tomato soup and two cans milk. Stir till blended.
- Add chicken broth and stir in tomato paste till blended.
- Simmer for 20 minutes
- Add light cream and parmesan cheese.
- Add tortellini and cook till tender (at least 15 minutes).
MOM'S CREAMY TORTELLINI TOMATO SOUP
This is a creamy, rich, delicious soup. Most of the people I cook for are very picky and this one turned out to be a crowd pleaser. Serve with fresh Italian bread on a cold winter's night! This soup would be great with either chicken or even meatballs instead of sausage; that just happened to be what I had on hand that particular day.

- Heat olive oil in a skillet over medium-high heat; cook and stir sausage and garlic until sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Melt butter in a large stock pot over medium heat; whisk in flour, salt, and black pepper until smooth. Gradually whisk in chicken broth and red wine. Stir in tomatoes and onion soup mix. Simmer until thickened and flavors have blended, 10 to 15 minutes. Stir in cooked sausage and basil. Continue to simmer for 45 minutes, stirring occasionally.
- Stir tortellini into soup; simmer until tortellini are tender, about 15 minutes. Add half-and-half, stirring until soup is hot, about 5 minutes more. Serve in large bowls and sprinkle with Parmesan cheese.

- Heat a nonreactive pot or enameled dutch oven over medium heat. Add butter then add chopped onions. Sauté 10-12 minutes, stirring occasionally, until softened and golden. Add minced garlic and sauté 1 minute until fragrant.
- Add crushed tomatoes with their juice, chicken stock, chopped basil, sugar (or add sugar to taste), and black pepper. Stir together and bring to a boil then reduce heat, partially cover with lid and simmer for 10 minutes.
- You can leave your soup with a chunky consistency, but if you like a blended/creamy soup, use an immersion blender to blend the soup in the pot to desired consistency or transfer to a blender in batches and blend until smooth (being careful not to over-fill the blender with hot liquid), then return blended soup to the pot over medium heat.
- Add 1/2 cup heavy cream, 1/3 cup freshly grated parmesan cheese and return to a simmer. Season to taste with salt and pepper if needed and turn off the heat.*
- Ladle into warm bowls and top with more parmesan and chopped fresh basil.

- Bring chicken broth to boil in small saucepan over medium heat.
- Meanwhile, melt butter in heavy medium saucepan over medium heat. Add onion, celery and garlic and sauté until onion is translucent, about 4 minutes. Reserve 1 tablespoon chopped tomato and 2 tablespoon chives for garnish. Add remaining tomato, chives and 1 1/2 cups tortilla chips to saucepan and sauté 2 minutes. Reduce heat to low. Sprinkle 1 tablespoon flour over and stir mixture for 2 minutes.
- Stir chicken broth into tortilla mixture. Cover and bring to boil. Reduce heat. Stir in whipping cream. Add grated Jack and cheddar cheese and stir mixture until cheese is melted and well blended. - Preheat the oven to 375 degrees F.
- Brush both sides of each tortilla with oil, using 1 tablespoon of the oil. Cut the tortillas in half, then cut each half into 1/4-inch wide strips. Arrange the strips on a baking sheet, sprinkle with the salt, and bake until crisp and golden, about 12 minutes. Remove from oven and set aside.
- Heat the remaining 1 teaspoons of oil in a large heavy skillet over medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until onion is soft and translucent. Add the garlic, jalapeno, cumin, and oregano and cook for 1 minute more. Add the broth and tomatoes, bring to a boil, then reduce the heat to low and simmer for about 10 minutes. Stir in lime juice.
- Remove the pan from the heat and puree with an immersion blender or in 2 batches in a regular blender until the soup lightens in color but chunks of tomato remain, about 30 seconds. Serve the soup topped with the tortilla strips, a dollop of sour cream, and a sprinkle of cilantro.
