300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

6 roasted large poblano chiles, peeled, deveined and divided
1 can (8 oz.) tomato sauce
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed, softened
1 lb. spaghetti, uncooked
2 lb. uncooked medium shrimp, peeled, deveined
1 cup KRAFT Shredded Mozzarella Cheese, divided
2 Tbsp. chopped fresh cilantro
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cut 4 chiles into thin strips; set aside. Blend remaining chiles in blender with tomato sauce and cream cheese until smooth.
  • Cook spaghetti in 8-qt. stockpot as directed on package, omitting salt. Meanwhile, cook shrimp, in 2 batches, in large nonstick skillet on high heat 3 min. or until shrimp turn pink, stirring frequently. Remove from heat; cover to keep warm.
  • Drain spaghetti, reserving 1/2 cup cooking water. Return spaghetti and reserved water to pot. Add chile sauce, chile strips and shrimp; cook 2 min. on medium-low heat or until heated through, stirring frequently. Stir in 1/2 cup mozzarella; cook and stir 1 min. or until melted. Sprinkle with remaining mozzarella, cilantro and Parmesan.

2 tablespoons oil
2 teaspoons salt
1 clove garlic, peeled
1 (16 ounce) package spaghetti
5 poblano peppers
2 (8 ounce) containers Mexican crema
½ cup whole milk
salt to taste
⅓ cup shredded Parmesan cheese, or to taste

Steps:

  • Add oil, salt, and garlic clove to a large pot of water and bring to a boil. Add spaghetti to the boiling water and cook, stirring occasionally, until tender yet firm to the bite, 8 to 12 minutes. Drain spaghetti and return to the pot, reserving garlic clove and 2 cups pasta water.
  • Meanwhile, pan-roast poblano peppers in a large skillet over medium-high heat until skins become soft and charred, 10 to 12 minutes. Place peppers in an airtight container and steam for 10 minutes. Peel poblano peppers and rinse inside and outside to remove seeds and excess skin.
  • Combine peeled poblano peppers, Mexican crema, milk, reserved garlic clove and pasta water in a blender; blend until smooth.
  • Place cooked spaghetti back on the stove over medium heat. Add poblano sauce and Parmesan cheese; mix until well combined. Bring to a boil and season with salt.

This recipe relies upon a Mexican way to cook pasta. For a heartier variation stir in a little cooked and diced chicken. Poblano peppers are a dark green chile with a flavor that can range from mild to slightly spicy. They are usually around 4 to 5 inches long and are sometimes known as Ancho or Mulato chiles.

1 fresh poblano chile pepper, seeded and minced
1 clove garlic, minced
1 onion, chopped

1 lb spaghetti
3 tablespoons olive oil
1 lb shrimp, peeled and deveined
2 teaspoons salt
1 ½ teaspoons red pepper flakes
1 small yellow onion
8 cloves garlic, finely chopped, about 3 tablespoons
42 oz canned diced tomato, drained of excess water
1 teaspoon sugar
1 teaspoon dried oregano
1 cup dry white wine
⅓ cup fresh parsley, chopped
4 qt water, salted

Steps:

  • In a 6-quart Dutch oven, bring 4 quarts of salted water to a boil over medium-high heat.
  • Add spaghetti, cooking about 6-7 minutes until al dente. Drain and set aside.
  • Return the Dutch oven to the stovetop and heat 2 tablespoons of olive oil over medium heat.
  • Add the shrimp, salt, and ½ teaspoon of the red pepper flakes. Spread evenly across the bottom of the pot and cook until the bottoms pink and slightly brown, about 45-60 seconds. Flip and repeat until shrimp are just cooked through.
  • Remove the shrimp and place in a small bowl to the side.
  • Reduce heat to medium-low, and add additional 1 tablespoon of oil to the pot, as needed.
  • Add onion and garlic to the oil and cook until onions have softened, about 3-5 minutes. Stir frequently to ensure the garlic does not burn.
  • Add the diced tomatoes, remaining 1 teaspoon of salt, sugar, remaining 1 teaspoon red pepper flakes, oregano, and white wine.
  • Stir and bring the sauce up to a simmer. Simmer for 5-10 minutes until the sauce has thickened.
  • Return the shrimp (and any accumulated juices) to the sauce. Add the parsley, stirring to incorporate.
  • Add the cooked spaghetti back into the pot, toss until evenly coated and heated, then remove from heat. Serve immediately.

1 medium yellow onion diced
2 tablespoons butter ((or olive oil))
6 garlic cloves (, minced)
1 pound | 500 g raw jumbo shrimp ((prawns), peeled and deveined)
2 teaspoons dried basil
1 teaspoon salt (, divided)
1 x 14-ounce | 400 g bottle passata or marinara sauce
half a chicken bullion cube (, crushed (or 1 teaspoon stock powder))
2 tablespoons fresh chopped parsley
1 teaspoon freshly-ground black pepper (, divided)
pinch of granulated sugar
2/3 cup milk ((or half and half or heavy cream))
grated Parmesan cheese (, to serve)
extra fresh chopped parsley (, to serve)

Steps:

  • Cook pasta al dente according to package instructions. Drain and set aside. (While pasta is boiling, prepare shrimp sauce.)
  • Heat the butter in a large skillet or pan over medium heat. Add the onion and fry until transparent. Stir in the garlic and fry until fragrant (about 30 seconds), then add in the shrimp with the basil and 1/2 teaspoon salt. Sauté shrimp for 2 minutes on one side; flip and continue to sauté on the other side for a further minute.
  • Quickly add in the sauce, crushed bullion (or stock powder), parsley, pepper sugar and remaining salt. Allow the sauce to heat through for another minute before adding the milk (or cream). Continue cooking for a further minute or until the shrimp are cooked through.
  • Once the pasta is cooked and drained, stir it through the creamy tomato sauce; toss until combined. Season with extra salt if desired.

POBLANO CREAM PASTA WITH SHRIMP

6 tablespoons butter
1 small poblano chile pepper, seeded and finely chopped
1 small onion, chopped
4 cloves garlic, chopped
3 tablespoons flour
1 3/4 cups chicken stock
1/2 cup Mexican crema
1 pound medium shrimp, deveined, shelled and tails removed
chopped fresh thyme, for garnishing
Grated Parmigiano-Reggiano, for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain and reserve.
  • Meanwhile, melt 4 tablespoons of the butter in a large skillet. Add the chopped poblano and onion and cook until soft, 7 to 8 minutes. Add the garlic and cook until fragrant, another 30-60 seconds. Stir in the flour and cook for another minute. Slowly whisk in the chicken stock. Let it simmer and thicken, stirring frequently, about 5 minutes.
  • Warm the Mexican crema in a small pot over medium-low heat or in a bowl in the microwave. Whisk the warm cream into the poblano sauce, then transfer to a food processor or blender and process until smooth. Season to taste with salt.
  • In a large skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the shrimp and cook until pink. Season with salt and pepper. Add the poblano sauce and the drained pasta to the shrimp and stir combine. Serve topped with thyme and grated Parmigiano-Reggiano.

1 lb spaghetti noodles
2 tablespoons olive oil, (divided)
1 cup chopped onion
5 cloves garlic, (minced)
2 (15-oz each) cans tomato sauce
1 teaspoon Italian seasoning
1 cup heavy whipping cream
1 cup freshly grated Parmesan cheese
1 lb shrimp, (peeled and deveined, tails removed)
fresh parsley (for garnish)

Steps:

  • Bring a large pot of water to a boil. Salt generously, then add the spaghetti. Cook until al dente. Before draining, reserve a mug full (at least a cup) of the pasta water.
  • In a large skillet, heat 1 tablespoon of the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook another 30 seconds, until fragrant. Add the tomato sauce and the Italian seasoning. Bring to a bubble, then reduce the heat to a simmer. Let the sauce cook and reduce for about 10 minutes.
  • Increase the heat slightly, and stir in the cream. Once the sauce is back to a simmer, add the cheese and stir until melted. Taste the sauce and season with salt and pepper, if needed.
  • In another skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the shrimp and cook just until pink, 4-5 minutes.
  • Add the cooked pasta to the sauce, along with the shrimp. Stir to combine, adding the starchy pasta water as needed to loosen the sauce. Serve, topped with parsley if desired.
