CHEF JOHN'S GREEN GODDESS DRESSING
This creamy, herby, addictively delicious sauce is not only my favorite salad dressing, but is one of my favorite dips as well. You can of course tweak the acidity with more or less lemon, as well as play with the salt and pepper, but please do not change the trio of herbs. The way the parsley and chive play against the sweet tarragon makes this unlike any other herb dressing.

- To make the dressing, put all the ingredients in a small food processor and process until smooth and creamy. Taste it to adjust any of the flavors. Pour into a small jar and refrigerate until needed. This can be done up to a day or two in advance, it just gets better! Double or triple the recipe for larger amounts.
- Slice off the core ends of the heads of lettuce and wash and dry the leaves well. I like to keep them whole for this salad. Arrange them in a wide shallow salad bowl, covering the whole surface of the bowl.
- Arrange the rest of the ingredients on top of the lettuce. Season with fresh cracked black pepper, and drizzle with the dressing just before serving.

- Scoop out the avocado and place in a mini-food processor with the Hellmann's Avocado Oil Mayonnaise, lemon juice, sour cream, tarragon and salt and pepper in a mini-food processor and pulse to make a creamy dressing.
- Heat the oven to 375. Spread the hazelnuts on a cookie sheet. Roast the hazelnuts until they start to turn golden, about 7-8 minutes. Remove the hazelnuts from the oven and spread on a kitchen towel. Cover with another towel and rub the hazelnuts between the towels to remove the skins. Roughly chop the hazelnuts.
- Cut the pear in half and scoop out the core. I leave the pear unpeeled but it’s your choice. Use a paring knife to cut out the middle stem. Cut the pear halves in half, leaving you with4 pear quarters. Cut the pears into thick slices, (I use a mandoline to slice the pears). Place the pear slices in a bowl and gently toss with lemon juice to keep from browning while you finish the salad.

- Combine first 6 ingredients in a bowl; stir with a whisk. Add chicken, cantaloupe, and celery; stir gently. Cover and chill 30 minutes.
- Divide salad greens and cucumber slices evenly among pita halves. Spoon about 1/3 cup chicken salad into each pita half. Serve immediately.
- Wine note: This fabulous sandwich goes well with a glass of chilled white wine. The cantaloupe's fresh fruitiness calls for a wine that's equally fresh and fruity, without any toasty oak flavors to get in the way. A dry riesling is ideal. I love the Trefethen Estate Dry Riesling 2005 from Napa Valley, California ($20). --Karen MacNeil

Using a slotted spoon, transfer green beans to a large bowl of ice water; cool for 5 minutes. Drain; allow to dry on a paper towel-lined tray. Preheat a grill wok directly over medium heat for 5 minutes. Coat green beans with cooking spray; toss to coat evenly. Add beans and mushrooms to grill wok.
