- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
- In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

- Place onion, vinegar, honey, mustard, and salt in a vitamix and puree on high speed for 20 seconds, until smooth
- Turn on vitamix and drizzle in olive oil
- Serve over your favorite greens --cooked or raw
CREAMY PEA SALAD
Steps:
- Cook bacon to crispy, cool and chop. Set aside.
- Cube cheddar, set aside.
- In a large mixing bowl, combine frozen peas (no need to thaw them), bacon, cubed cheddar and chopped onion. Toss gently.
- In a measuring cup, combine mayo, sour cream, Ranch dressing, vinegar, salt, pepper and parsley. Mix well. Pour dressing over salad. Toss gently to coat.
- Cover bowl with salad with saran wrap and chill for at least 30 minutes.

Steps:
- Cut bacon into julienne strips, place in a skillet and saute' until crisp.
- Remove bacon from pan, using a slotted spoon, and place on paper towels to absorb the grease.
- Place the garlic and onion in hot bacon fat and saute' over high heat until soft.
- Remove from the pan with slotted spoon.
- In a large mixing bowl, combine sauteed bacon, garlic and onions with prepared mustard, Worcestershire sauce, Tabasco sauce, parsley, and honey.
- Whisk all the ingredients together, using a wire whisk.
- Add vinegar, mayonnaise, cream, and milk; whisk vigorously until blended.
- Add ground pepper.
- Serve on salad greens.

To recreate that salad in THM S form, toss this dressing with the following in your desired amounts: lettuce or kale + spinach, bacon bits or cooked and crumbled bacon, chopped hardboiled eggs, shredded cheddar cheese, chopped onion, chopped tomato, something for crunch (traditionally corn chips – which are definitely not on plan – but you could try crushed pork rinds?). Top the salad with some extra bacon, hardboiled egg, cheese, and pork rinds to make it pretty.
