SOUTHWEST CREAMY CORN SOUP

This southwest creamy corn soup recipe combines plenty of fresh corn, sweet potato, bell pepper and smoked paprika all in a rich, satisfying broth. Garnish with crispy bacon, jalapeno and cilantro for one belly satisfying meal you're gonna love!

4 ears corn (kernels removed from cob)
5 cups low sodium chicken broth
3/4 to 1 cup heavy cream (whipping cream) (depending on how creamy you want the soup to be)
1/3 pound bacon (cut into lardons (about 4 to 5 slices))
1 tablespoon olive oil
1 yellow onion (peeled and diced)
3 cloves garlic (minced)
2 bell peppers (small dice)
1 jalapeno (minced (remove seeds and ribs if you want))
1 sweet potato (peeled and cut into about 1-inch cubes (about 2.5 cups))
1 tablespoon smoked paprika
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Crispy bacon (chopped)
Green onion (sliced)
Sour cream
Jalapeno pepper (sliced)
Cilantro (chopped)
Tomato (diced)

Steps:

  • Remove kernels from ears of corn and set aside.
  • In a large pot, combine ears of corn (not the kernels), chicken broth and heavy cream. Bring to a simmer (you want a gentle simmer, not vigorous) and cook, uncovered, for 15 minutes. Remove ears of corn and discard those.Note: Use 3/4 cup of heavy cream or up to 1 cup (for a richer consistency).
  • Meanwhile, in another large pot over medium heat, cook bacon, stirring often, until crisp (about 10 to 12 minutes). Reserve some for garnish (if you like). Otherwise, leave all bacon in the pot. Remove bacon grease.
  • Heat olive oil in the pot (the same pot you cooked the bacon in). Add onion and cook, stirring often, until softened, about 5 minutes.
  • Stir in garlic and cook for 1 minute.
  • Stir in reserved corn kernels, bell peppers, jalapeno pepper, sweet potato, smoked paprika, salt and black pepper.
  • Pour in broth/cream mixture, stirring to combine.
  • Bring to a simmer (don't boil) and cook, uncovered, for 10 to 12 minutes or until sweet potato is tender.
  • Optional: Remove about 1 cup of the soup and place in a heat-safe container and blend with an immersion blender. Pour back into soup, stirring to combine.
  • To serve, divide the soup into bowls and garnish, if desired, with any of the garnish ideas. Enjoy!

Corn cob - 1 medium sized or Corn kernels - 1 cup
Water/milk - 1 cup
Garlic - 2 small cloves finely chopped (optional)
Salt - as needed
Butter- 1/2 tbsp
Oregano - 1/2 tsp (optional)
Pepper powder - 1/4 tsp
Corn Flour- 1/2 tsp (optional)

Steps:

  • Take the corn cob and pressure cook it for 3 whistles. Then collect the corn kernels and set aside.
  • Then grind the cooked corn kernels (reserve some corn kernels to use it in the soup) in a blender with 1/4 cup of water or milk. Grind it to a smooth paste.
  • Heat a pan with a tsp of butter add finely chopped garlic. Stir it for 2 minutes.Then add sweet corn paste and bring it to a boil in low flame.
  • Now add the remaining milk/water and bring it to a boil again. After that add in required salt, oregano & pepper powder.Give a quick stir.
  • Add corn flour in 2 tbsp of milk and mix well without lumps. Then add the corn flour mixture to the soup and boil it for 2 minutes. Switch off the flame once done. This is an optional step.

1 tablespoon olive oil
1 medium onion, chopped (150g)
1 garlic clove, crushed
4 cups chicken stock (made from cubes is fine)
1 cup frozen corn kernels
310 g canned creamed corn
1 medium potato, chopped coarsely (200g)
1/4 cup cream (optional)
white pepper
50 g plain corn chips (optional)
ground black pepper
2 tablespoons fresh chives, chopped

Steps:

  • Heat the oil in a large saucepan, add the onion and garlic and cook, stirring, over a medium heat until soft.
  • Add the stock, creamed corn and potato.Bring to the boil then simmer, uncovered, for about 15 minutes or until the potato is soft.
  • Blend or process the soup until smooth adding white pepper to taste. Return the soup to the same pan then stir in the remaining corn and cream. Stir over a low heat until corn is tender.
  • Serve soup topped with crumbled corn chips, pepper and chives.

1/2 cup Pumpkin
1 Green Chili
1/4 tsp Red Chili Powder
1/2 tsp Garam masala

Vegetable stock

Steps:

  • Heat olive oil in a pan. Add garlic and finely chopped onion. Mix well.
  • Cook it for 5-6 minutes.
  • Add corn, pumpkin. Pumpkin gives creaminess and texture to the corn soup.
  • Add green chili, red chili powder, garam masala and salt to taste. Stir well.
  • Add vegetable stock. Mix well.
  • Cover the pan and cook for 8-10 minutes. Turn off the gas.
  • Transfer the mixture into a blender pot and make puree of it.
  • Strain the soup through a strainer.
  • Pour out the mixture in the pan and put on the gas.
