PASTA WITH SUN-DRIED TOMATO CREAM SAUCE
A super easy pasta dish with the most amazing, creamiest sun-dried tomato sauce ever, made in less than 30 min!

Steps:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes; set aside. To make the cream sauce, melt butter in a large skillet over medium heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in heavy cream, sun dried tomatoes, Parmesan, oregano, basil and red pepper flakes until slightly thickened, about 1 minute. Season with salt and pepper, to taste. Stir in pasta and sausage until well combined, about 1-2 minutes. Serve immediately, garnished with parsley, if desired.

- Pour the artichokes, with their oil into a pan and mash them down with a fork.
- Add the garlic, parsley and thyme and heat through for a couple of minutes and then pour over the warm pasta.
- Add the lemon juice and toss thoroughly.
- Serve in bowls topped with shavings of parmesan cheese.

Steps:
- Cook Bowties according to package directions.
- Reserve 1 cup of the cooking water.
- Heat oil in a large pan.
- Add garlic and onion, cook until translucent.
- Add tomatoes and roasted peppers.
- Cook for 3 minutes; stir in red pepper flakes.
- Add artichoke hearts and cook for 3 minutes.
- Add whipping cream and asiago cheese.
- Allow to simmer until it starts to thicken.
- Stir in basil and green onion.
- Season with salt and pepper if desired.
- Toss with bowties.
- Add 1 cup reserved pasta water to make it saucier.

- First, you need to roast the bell peppers. I like to do this by placing the peppers directly over a gas burner turned over medium heat. Rotate the peppers every 1-2 minutes charring all of the skin of the pepper. Then let cool, slice the peppers into 3 or 4 large chunks, and peel off the skin.
- Add the roasted bell peppers to a blender. Strain the sun dried tomatoes removing any excess oil and add them to the blender along with all of the remaining ingredients. Blend on the highest setting until smooth. Taste and add more salt and pepper if necessary. If the sauce is still slightly bitter add some more basil.
- When using this sauce for pasta, heat the sauce while you cook the pasta. Once the pasta has cooked, add about 1/2 cup of pasta water (simply the starchy water from cooking the pasta) and the cooked pasta, stir, and let simmer for 1-2 mintues before serving.

- Cut the large red bell pepper or 2 small ones in half and remove the white part inside and the seeds. Rub the pepper inside and out with olive oil (around 1/2 tbsp) and place cut side down on a baking tray lined with baking parchment. Roast in the oven for 30 minutes or until completely soft and slightly charred on the outside.
- When the pepper has been in the oven for 20-25 minutes bring a large pot of salted water to a boil. Cook the pasta until al dente (follow packet instructions). Before draining reserve 2 cups/500ml of pasta water for later.

- Add the paste to the drained pasta and gradually add the reserved pasta water a little at a time and stir the pasta to coat it in the sauce. You will not need all the water, it’s important to add just a little at a time and then stir the pasta until it’s just coated in the sauce. Add a pinch of salt and pepper if needed.
