This soup was great, so creamy. I add some carrots and green beans to it and it has a little more fiber and a little more heartiness to it.

3 ½ cups peeled and diced potatoes
½ cup chopped carrots
½ cup chopped green beans
⅓ cup diced celery
⅓ cup finely chopped onion
¾ cup diced cooked ham
3 ¼ cups water
2 tablespoons chicken bouillon granules
1 teaspoon ground white pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups nonfat milk

Steps:

  • Combine potatoes, carrots, green beans, celery, onion, ham, and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10 to 15 minutes. Stir in chicken bouillon and pepper.
  • Melt butter in a separate saucepan over medium-low heat. Whisk in flour with a with fork and cook, stirring constantly, until thick, about 1 minute. Slowly stir in milk so lumps do not form until all of the milk has been added. Continue stirring until thick, 4 to 5 minutes.
  • Pour the milk mixture into stockpot and cook soup until heated through, about 5 minutes. Serve immediately.

You'll love this creamy LowSodium Potato Soup in the coming cold winter months. This is an easy to prepare soup with really a little amount of hands on time.

Number Of Ingredients 16

3 lbs Yukon potatoes peeled and diced into pieces 1/2" (choose how much to peel)
6 strips sliced pork belly (8oz. cut into small pieces)
1 Tbsp butter unsalted
1 medium yellow onion chopped about 1.5 cup
2 Tbsp garlic pre-minced (a little more if you like garlic)
1 tsp liquid smoke
1/3 cup all-purpose flour
4 cups chicken broth unsalted
2 tsp Herb Ox chicken bouillon no sodium
2 cups milk
2/3 cup heavy cream
2 tsp ground pepper
2-3 tsp Italian seasoning no salt
1-2 tsp chipotle chili powder (add more if desired after tasting)
2/3 cup sour cream
1 cup Swiss + Gruyere cheese (optional adds 36mg sodium per serving)

Steps:

  • Place chopped pork belly pieces in a large pre-heated Dutch oven or soup pot over medium heat and cook until bacon is crisp.
  • Remove bacon pieces and set aside, leaving bacon fat in the pot.
  • Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes). Stir 2 or 3 times.
  • Add garlic and celery and about 1 minute.
  • Sprinkle flour over the ingredients in pot and stir until blended to make a roux.
  • Add diced potatoes, chicken broth, milk, heavy cream, pepper, and chipotle chili powder to the pot. Stir to combine.
  • Bring to a boil and stir occasionally. Cook until potatoes are tender when pricked with a fork (about 10 minutes).
  • When getting puree reduce heat to simmer. Choose either to use an immersion blender or stand blender and puree about half the soup. (about 6 cups) I personally recommend the hand immersion blender.
  • Return the pureed soup to the pot if using a blender. Add sour cream and reserved bacon pieces, stir well.
  • Allow soup to simmer for at least 15 minutes before serving. I like to let it low simmer for a good half hour.
  • When serving sprinkle with additional sour cream, bacon, cheddar cheese, or chives on top. Optional

1 onion, chopped
½ cup chopped celery
¼ cup chopped carrots
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
5 tablespoons margarine
4 tablespoons all-purpose flour
1 ½ cups chicken broth
1 ½ cups whole milk
3 potatoes, cut into 1/4-inch slices
2 teaspoons Worcestershire sauce
1 ½ teaspoons mustard powder
1 pinch ground allspice
¾ teaspoon celery seed
½ teaspoon dried thyme
½ teaspoon seasoning salt
2 tablespoons dry white wine
¼ teaspoon ground cayenne pepper
¼ teaspoon chicken bouillon powder

Steps:

  • In a large stock pot, saute onion, celery, carrots, garlic and parsley in butter until soft but not browned. Sprinkle in flour and cook, stirring for 2 minutes. Add broth slowly, stirring as you add.
  • Add milk, potatoes, Worcestershire sauce, dry mustard, allspice, celery seed, thyme, seasoning salt, dry white wine, cayenne pepper and chicken granules. Allow to simmer and thicken, stirring frequently, until the potatoes are cooked through, approximately 25 minutes. During cooking, break up potatoes with the back of a spoon. Serve warm.

2 tablespoons olive oil
1 cup onions (diced)
1 cup carrots (diced)
½ cup celery (diced)
4 cups potatoes (peeled and chopped into 1 inch pieces (about 1 lb or 5-6 medium sized potatoes))
4 cups vegetable broth
1 teaspoon garlic powder
1 teaspoon fresh rosemary (chopped finely)
½ teaspoon salt
½ teaspoon pepper
2 cups milk of choice

Steps:

  • Set the Instant Pot to sauté mode for 15 minutes. Heat olive oil. While oil is heating, chop veggies.
  • Sauté onions, carrots, and celery until onions are translucent. Turn off sauté mode. Make sure to scrape off any pieces of food on the bottom of the Instant Pot or you will get a burn notice during cooking.
  • Pour in remaining ingredients, except milk.
  • Set the Instant Pot to sealing, pressure cook for 10 minutes on high pressure. It will take about 10 minutes for the pot to come to pressure before it starts to count down.
  • Manually release pressure when timer goes off.
  • Stir in milk. Use an immersion blender or regular blender to make the soup smooth. Serve with your favorite toppings like bacon, chives or cheese.

1 (14 1/2 ounce) can reduced-fat chicken broth
3 tablespoons cornstarch
1 (12 ounce) can fat-free evaporated milk, divided (can use fat-free half and half)
1 cup shredded reduced-fat cheddar cheese
fresh ground black pepper (to taste)
salt (to taste) (optional)

Steps:

  • In a saucepan combine the cubed potatoes with onion, celery, cayenne, garlic powder and bouillon powder and chicken broth (start with 2 teaspoon bouillon powder) bring to a simmer over medium heat.
  • Reduce heat cover and simmer for about 20 minutes or until veggies are tender (at this point you may add in more bouillon powder if desired).
  • In a small bowl whisk together 1/4 cup evaporated milk with 3 tablespoons cornstarch until smooth; stir into the simmering broth mixing constantly.
  • Add in the remaining evaporated milk; bring back to a boil, reduce heat to low and simmer for about 3-5 minutes or until bubbly and thickened.
  • Remove from heat season with black pepper and salt if desired, then stir in the shredded cheese.

20 ounces frozen cauliflower
1/2 cup onion, chopped

4 slices cooked drained & crumbled turkey bacon (low-sodium)

Steps:

  • Pour 4 cups vegetable broth into large pot; add potatoes; bring to a boil and simmer until fork-tender; drain and slightly mash potatoes; reserve broth.
  • Pour remaining 1 cup vegetable broth into medium pot; add cauliflower and onions; bring to a boil and simmer until very soft.
  • Scoop cauliflower mixture into blender and process until smooth. Add reserved broth from cooked potatoes if necessary.

2 celery ribs, diced
1 medium onion, chopped
1 quart water

1 quart milk
Sour cream and shredded cheddar cheese, optional

Steps:

  • In a Dutch oven or soup kettle, combine potatoes, celery, onion, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are tender. Cool slightly.
