- In a deep skillet, or pot, bring 4 cups water to a boil. Stir in penne noodles along with 1 teaspoon salt. Boil 6-9 minutes until fork-tender. Drain, toss with 1 teaspoon oil, and set aside.
- In the same skillet you used for the pasta (or a new one if you used a pot) cook sausage over medium-high heat, breaking up with a spoon or spatula as it cooks, for 6-8 minutes or until completely browned. Use a slotted spoon to transfer to a bowl and cover to keep warm.
- Reduce heat to medium and add butter to the pan. Once melted, stir in garlic 1-2 minutes til fragrant. Add mushrooms and saute 3-4 minutes until very tender.
- Stir in chicken broth and heavy cream and simmer over medium-low heat until reduced (about 5-10 minutes).
- Stir in cooked sausage and noodles. Season with salt and pepper to taste. Top with parmesan and parsley or thyme if desired and serve.

This is a recipe I concocted with ingredients on hand, including my homemade pesto. My family loved it! Serve vegetarian or top with a cooked chicken breast.

- Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still slightly firm, about 11 minutes; drain.
- Heat olive oil in a large skillet over medium heat and cook and stir broccoli, asparagus, mushrooms, onion, garlic, and 1/2 cup pine nuts until the broccoli and asparagus are tender, about 8 minutes. Season with salt to taste.
- Melt butter in a large saucepan over medium heat and stir in flour and 1 teaspoon salt until smooth. Slowly whisk in milk until thoroughly combined, bring to a simmer, and reduce heat to medium-low. Simmer sauce, whisking constantly, until thickened, about 3 minutes.
- Remove sauce from heat and whisk in prepared pesto. Season to taste with salt and black pepper.
- Pour pesto sauce into skillet with broccoli mixture; gently stir in penne pasta until thoroughly combined. Sprinkle with 1 tablespoon pine nuts to serve.

- Melt butter with oil in heavy large skillet over medium-high heat.
- Add sausage, onion and garic and saute until golden brown and tender, about 7 minutes.
- Drain any excess dripping from skillet.
- Add wine to skillet and boil until almost all liquid evaporates, about 2 minutes.
- Add tomatoes with juices and simmer 3 minutes.
- Add cream and simmer until sauce thickens slightly, about 5 minutes.
- Stir in 4 tablespoons parsley.
- Season to taste with salt and pepper.
- Remove from heat.
- Cook pasta in large pot of boiling, salted water until firm to bite.
- Drain; transfer to large bowl.
- Bring sauce to simmer.
- Pour sauce over pasta.
- Add 3/4 cup cheese and toss to coat.
- Sprinkle remaining 1/4 cup cheese and 2 tablespoons parsley.
SAUSAGE PESTO PASTA
This Italian sausage pesto pasta recipe uses simple ingredients and is easy to make. Mushrooms, tomatoes, peppers, garlic, and onions pack it with flavor!

- Boil a large, salted pot of water for the casarecce pasta. Cook it al dente (8 minutes).
- Meanwhile, prep your vegetables. You can do some prep while the sausages are cooking to save time, but feel free to prep everything prior to starting the sauce if that's easier for you.
- Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it over medium-high heat, stirring occasionally, until it's browned (about 5-7 minutes). Transfer to a plate.
- Leave the sausage grease in the pan and then add the mushrooms and onions (if there is very little grease then add about a teaspoon of olive oil). Sauté, stirring occasionally, until the mushrooms release their water and they get a nice sear and the onions brown (about 5-6 minutes).
- Stir in the garlic and cook for 30 seconds.
- Add the tomatoes, peppers, chicken broth, and sausage to the skillet. Reduce the heat to medium and cook for around 5 minutes or until the tomatoes have started to lose their shape and the chicken broth has reduced a bit.
- Add in the pesto (stir the jar first), then take the pan off the heat and ensure it's stirred in well. Add a splash of pasta water to the sauce (a couple tablespoons) prior to draining it, and then toss the drained pasta with the sauce. Season with salt & pepper as needed. Serve immediately with parmesan cheese and parsley if desired.

CREAMY SAUSAGE PENNE
This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

- Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
- After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
- Cook until sausage meat is no longer pink (about 5 minutes or so).
- Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
- Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
- Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
- Taste; add more salt and/or pepper if you wish.
- Sprinkle chopped herbs over top and serve.
