CREAMY PASTA WITH PEAS
Peppery arugula and toasted pine nuts add grown-up flavors to a kid-friendly pasta dish. The bowties (farfalle) are always popular with kids, but you could use other short pasta shapes in this recipe, such as fusilli, orecchiette, or penne.

PARMESAN PEAS 'N' RICE
Parmesan Peas 'n' Rice are a wonderful complement for any meal. My husband, John, likes rice but isn't crazy about peas, and I'm just the opposite. It's a great compromise!

Steps:
- Fill a medium sized saucepan 3/4 of the way with water. Add about 2 tsp salt. Bring to a boil and add frozen peas.
- Keep the stove temperature on high and once water is again boiling, add the potatoes. Reduce heat to medium. Boil potatoes & peas for about 15 minutes- until the potatoes are fork tender, but not falling apart. (Check often after you've boiled them for about 12 minutes - you don't want them to get too soft!)
- Drain potatoes & peas and set aside.
- In the same saucepan, melt butter. Add onion powder and flour. Quickly begin whisking in milk as the flour-butter mixture thickens, adding the milk a little bit at a time. Allow the milk to heat up and the mixture to thicken again before adding more, until all the milk is incorporated.
- Keep whisking until the mixture is smooth and creamy. Add a bit more milk if it gets too thick. Add in Parmesan cheese and whisk gently, until cheese is mixed in and melted.
- Add the potatoes and peas back to the saucepan. Stir gently to combine. Serve with additional Parmesan cheese sprinkled on top.

Steps:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. To make the garlic parmesan cream sauce, melt butter in the skillet skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth, thyme and basil. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in half and half and Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more half and half as needed; season with salt and pepper, to taste. Stir in spaghetti, ham and peas, and gently toss to combine. Serve immediately, garnished with parsley, if desired.

Steps:
- Melt butter in a large pan (grab one that's deep enough for your orzo + sauce) over medium-high heat and sauté your shallot and garlic until tender, adding the garlic towards the end to prevent burning. If extra butter is needed, feel free to add as desired.
- Add your milk, broth, salt, pepper, and garlic powder. Stir with a whisk to deglaze the pan.
- With your burner set to medium (I had mine set to 6) add the orzo and stir. Set timer for 10 minutes. Once the orzo starts to really boil and bubble, reduce heat to low (2 worked great on my stove) and continue to simmer, stirring occasionally.
- Once the pasta is al-dente or your ideal softness, remove from heat. Sauce will be thin and thicken as it cools. Add your parmesan cheese and chopped spinach and fold into the orzo.
- Season to taste as desired, garnish with any additional cheese your heart desires and dig in while it's hot!

- Add quartered red potatoes to a large pot, fill with just enough water to cover potatoes. Add 1/4 teaspoon salt to the pot. Bring the pot to boil, and boil the potatoes for about 10-15 minutes, until they turn tender. Towards the end of boiling the potatoes, add frozen peas, and let the water boil for another 2-4 minutes to cook the peas. When the potatoes and the peas are both tender and cooked, drain them.
- Heat olive oil and butter on medium heat in a large skillet, add minced garlic and cook for about 1 minute on medium heat, without burning.
- Add half and half to the skillet with cooked garlic. Bring to boil, stirring. Once the liquid is boiling, immediately add cheese, 1/8 teaspoon salt, and keep stirring everything together (cheese and the half and half), while boiling, until the cheese melts, for about 30 seconds or 1 minute. Reduce to simmer and continue to cook, constantly stirring, to thicken the sauce - for another minute.
- Immediately add cooked and drained potatoes and peas, stir them in and coat them with the sauce. Remove from heat. Taste, and add more salt if needed.

Whisk in the Parmesan cheese, salt, and nutmeg. Cook an additional 1 minute, whisking, then remove from the heat, set aside, and cover to keep warm.

Cook without stirring until they get golden brown, about 3 minutes. Stir and sprinkle in the onion powder. Pour the mushrooms into a medium bowl and cover to keep warm.
- Add the remaining 1 tablespoon of the oil to the hot skillet, then pour the microwaved potatoes into the pan in a single layer, not stirring for 1 minute until golden brown on one side. Sprinkle with the thyme, stir and cook for 2-3 more minutes.
