CREAMY PASTA WITH PEAS

Creamy Pasta with Peas image

Peppery arugula and toasted pine nuts add grown-up flavors to a kid-friendly pasta dish. The bowties (farfalle) are always popular with kids, but you could use other short pasta shapes in this recipe, such as fusilli, orecchiette, or penne.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 30m

Number Of Ingredients 8

Coarse salt and ground pepper
12 ounces farfalle pasta
1 package (10 ounces) frozen green peas
3/4 cup heavy cream
1/3 cup canned reduced-sodium chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons pine nuts
1 bunch (5 ounces) arugula, tough stems removed, chopped

Steps:

  • For the kids (serves 2): In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; add peas 1 minute before end of cooking. Drain; return pasta and peas to pot.
  • Meanwhile, in a large skillet, combine cream and chicken broth; simmer until thickened slightly, 7 minutes. Stir in Parmesan until melted.
  • Add sauce to pasta and peas; toss to combine. Season with salt. Divide half the pasta among serving bowls; reserve remaining in pot for the adults.
  • For the adults (serves 2): Toast pine nuts in a skillet over medium heat, shaking frequently, until golden, 1 to 2 minutes. Add to reserved pasta along with arugula; season with pepper. Toss to combine, and serve immediately.

CREAMY PARMESAN POTATOES AND PEAS

CREAMY PARMESAN POTATOES and PEAS image

Creamy parmesan potatoes and peas is a simple and delicious side dish that's perfect for any occasion. Old fashioned creamed peas and potatoes recipe made with frozen peas, red potatoes, butter & cheese compliments any main dish perfectly!

Provided by Jessica & Nellie

Categories     Side Dish

Time 30m

Number Of Ingredients 8

8 red potatoes (scrubbed & cubed (I cut mine small- probably about 3/4" cubes))
16 oz frozen peas
¼ cup butter
¼ cup flour
1 cup milk
1 TBSP onion powder
½ cup Parmesan cheese (grated)
salt & pepper (to taste)

Steps:

  • Fill a medium sized saucepan 3/4 of the way with water. Add about 2 tsp salt. Bring to a boil and add frozen peas.
  • Keep the stove temperature on high and once water is again boiling, add the potatoes. Reduce heat to medium. Boil potatoes & peas for about 15 minutes- until the potatoes are fork tender, but not falling apart. (Check often after you've boiled them for about 12 minutes - you don't want them to get too soft!)
  • Drain potatoes & peas and set aside.
  • In the same saucepan, melt butter. Add onion powder and flour. Quickly begin whisking in milk as the flour-butter mixture thickens, adding the milk a little bit at a time. Allow the milk to heat up and the mixture to thicken again before adding more, until all the milk is incorporated.
  • Keep whisking until the mixture is smooth and creamy. Add a bit more milk if it gets too thick. Add in Parmesan cheese and whisk gently, until cheese is mixed in and melted.
  • Add the potatoes and peas back to the saucepan. Stir gently to combine. Serve with additional Parmesan cheese sprinkled on top.

Number Of Ingredients 13

8 ounces SimplyNature Organic Spaghetti
1/4 cup Countryside Creamery unsalted butter
4 cloves garlic, minced
2 tablespoons Baker's Corner all-purpose flour
1 cup Chef's Cupboard chicken broth, or more, as needed
1 teaspoon Stonemill dried thyme
1/2 teaspoon Stonemill dried basil
1/2 cup Countryside Creamery half and half
1/2 cup freshly grated Priano Parmesan
Kosher salt and freshly ground black pepper, to taste
2 cups chopped Appleton Farms Spiral Sliced Hickory Smoked Honey Ham

Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in half and half and Parmesan until slightly thickened, about 1-2 minutes. GARLIC PARMESAN ORZO

Garlic Parmesan Orzo image

Creamy Garlic Parmesan Orzo is a perfect side dish for dinner tonight! This grown up twist on mac and cheese will have you going back for seconds.

Provided by Jenn Laughlin - Peas and Crayons

Categories     Side Dish

Time 20m

Number Of Ingredients 11

2 tsp unsalted butter
2 cloves garlic ((minced))
1 large shallot* ((1/4 cup minced))
2 cups broth ((chicken or vegetable))
1 cup milk
1/4 tsp garlic powder
1/4 tsp sea salt
1/4 tsp black pepper
1 cup dry orzo pasta
3/4 cup freshly grated Parmesan cheese
2 cups chopped fresh spinach

Steps:

  • Melt butter in a large pan (grab one that's deep enough for your orzo + sauce) over medium-high heat and sauté your shallot and garlic until tender, adding the garlic towards the end to prevent burning. If extra butter is needed, feel free to add as desired.
  • Add your milk, broth, salt, pepper, and garlic powder. Stir with a whisk to deglaze the pan.
  • With your burner set to medium (I had mine set to 6) add the orzo and stir. Set timer for 10 minutes. Once the orzo starts to really boil and bubble, reduce heat to low (2 worked great on my stove) and continue to simmer, stirring occasionally.
  • Once the pasta is al-dente or your ideal softness, remove from heat. Sauce will be thin and thicken as it cools. Add your parmesan cheese and chopped spinach and fold into the orzo.
  • Season to taste as desired, garnish with any additional cheese your heart desires and dig in while it's hot!

Creamy Orzo With Peas and Parmesan Cheese image

This Creamy Orzo With Peas and Parmesan Cheese is an easy and delicious side dish that goes with just about anything and is especially good when fresh spring peas are in season (but frozen peas work too, so you can enjoy it any time)!

Provided by Michelle / Now Cook This!

Categories     Side Dish

Time 30m

Number Of Ingredients 10

1 tablespoon olive oil
1 cup chopped onion (about ¼-inch pieces)
2 cloves garlic (minced (about 1 heaping teaspoon))
2 cups water
2 teaspoons roasted chicken base (such as Better Than Bouillon)
1 cup dry orzo pasta
2 cups peas (fresh or frozen (thawed if frozen))
½ cup grated Parmesan cheese
¼ cup heavy cream
salt and pepper (to taste)

Steps:

  • Heat the olive oil in a medium sauce pot (I use a 3-quart saucepot) over medium heat. Add the onion and sauté, stirring occasionally, until the onions begin to soften.
  • Add the garlic and sauté, stirring frequently, for another minute.
  • Combine the roasted chicken base and water in a bowl or large measuring cup and add the mixture to the pot. Increase the heat and bring to a boil.
  • Once the broth comes to a boil, add the orzo and give it a quick stir.
  • Reduce the heat, cover the pot, and simmer for 15 to 20 minutes or until the orzo is tender and most of the liquid has been absorbed.
  • Stir in the peas.
  • Add the parmesan cheese and heavy cream. Stir to combine.
  • Continue to cook over very low heat just until the cheese is melted and the peas are heated through. Taste and season with salt and pepper if needed.

  • Add quartered red potatoes to a large pot, fill with just enough water to cover potatoes. Add 1/4 teaspoon salt to the pot. Bring the pot to boil, and boil the potatoes for about 10-15 minutes, until they turn tender. Towards the end of boiling the potatoes, add frozen peas, and let the water boil for another 2-4 minutes to cook the peas. When the potatoes and the peas are both tender and cooked, drain them.
  • Heat olive oil and butter on medium heat in a large skillet, add minced garlic and cook for about 1 minute on medium heat, without burning.
  • Add half and half to the skillet with cooked garlic. Bring to boil, stirring. Once the liquid is boiling, immediately add cheese, 1/8 teaspoon salt, and keep stirring everything together (cheese and the half and half), while boiling, until the cheese melts, for about 30 seconds or 1 minute. Reduce to simmer and continue to cook, constantly stirring, to thicken the sauce - for another minute.
  • Immediately add cooked and drained potatoes and peas, stir them in and coat them with the sauce. Remove from heat. Taste, and add more salt if needed.
