1 cup orzo pasta
2 tbsp butter
2 cloves garlic (minced)
1 shallot (minced)
1 tbsp all purpose flour
1 cup milk (I used whole)
1/3 cup parmesan cheese
1/2 tsp salt
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
1 tbsp fresh parsley (chopped)

Steps:

  • In a large pot of boiling water, cook orzo according to the package's directions.
  • Meanwhile, in a large skillet set over medium heat add the butter. When the butter has melted, add the garlic and shallot, cook until fragrant and translucent, about 2-3 minutes. Whisk in flour, cook for 1 minute (whisking continuously). Slowly whisk in the milk, cook until slightly thickened, about 4 minutes.
  • Stir in parmesan and season with salt, black pepper and cayenne pepper. Add orzo and cook for an additional minute. Garnish with parsley and serve immediately.

2 cups uncooked dry orzo pasta
1/3 cup butter
1 small onion, finely chopped
2 tablespoons fresh minced garlic (you may adjust to taste)
1/4 teaspoon crushed red pepper flakes (optional or adjust to suit heat level)
1/2 cup grated parmesan cheese
1/4-1/3 cup light cream (such as half and half or 18% table cream)
2 -3 tablespoons chopped fresh parsley
1/2 teaspoon salt (or to taste)
fresh ground black pepper (to taste)

Steps:

  • Cook the orzo according to the package directions; drain well.
  • In a large skillet melt the butter over medium heat; add in the onion and saute until just softened (about 3-4 minutes).
  • Add in fresh garlic and chili flakes the last 2 minutes of cooking.
  • Reduce the heat to low and add in the cooked orzo, Parmesan cheese, milk or cream, parsley and salt; toss to heat through.
  • Season with fresh ground black pepper to taste.

3/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 pound orzo (rice-shaped pasta)
2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1 (14.5-ounce) can diced tomatoes, juices drained
1 1/4 cups whipping cream
1 cup frozen peas, thawed

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes. Add the tomatoes and cook until they are tender, about 8 minutes. Stir in the cream and peas. Add the orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan to the pasta mixture and toss to coat. Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with salt and pepper, and serve.

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

2 tsp unsalted butter
2 cloves garlic ((minced))
1 large shallot* ((1/4 cup minced))
2 cups broth ((chicken or vegetable))
1 cup milk
1/4 tsp garlic powder
1/4 tsp sea salt
1/4 tsp black pepper
1 cup dry orzo pasta
3/4 cup freshly grated Parmesan cheese
2 cups chopped fresh spinach

Steps:

  • Melt butter in a large pan (grab one that's deep enough for your orzo + sauce) over medium-high heat and sauté your shallot and garlic until tender, adding the garlic towards the end to prevent burning. If extra butter is needed, feel free to add as desired.
  • Add your milk, broth, salt, pepper, and garlic powder. Stir with a whisk to deglaze the pan.
  • With your burner set to medium (I had mine set to 6) add the orzo and stir. Set timer for 10 minutes. Once the orzo starts to really boil and bubble, reduce heat to low (2 worked great on my stove) and continue to simmer, stirring occasionally.
  • Once the pasta is al-dente or your ideal softness, remove from heat. Sauce will be thin and thicken as it cools. Add your parmesan cheese and chopped spinach and fold into the orzo.
  • Season to taste as desired, garnish with any additional cheese your heart desires and dig in while it's hot!

  • In a large pot over medium heat add a drizzle of olive oil, then place in half your mushrooms. Leave to brown on one side, flip them over then season with a pinch of salt and pepper. Continue frying until nicely browned then remove to a side bowl and repeat with the second batch, adding more oil as needed. Remove again once done. It's important to not cram in the mushrooms or they'll steam and lose flavour. Also important to not move them about too much or they won't brown.
  • Melt in 1 tbsp butter, then add your onion. Fry until it begins to brown/soften, then add in the garlic. Continue frying for another min then pour in white wine. Allow the wine to simmer and reduce for a good 5mins, until it's almost all evaporated, deglazing the pan as necessary. It's important to ensure you reduce down the wine or it'll be too strong in the sauce.
  • Pour in the orzo and add back in your mushrooms. Pour in stock and cream, then sprinkle in parsley, thyme and salt & pepper. Important your cream is at room temp and your stock isn't piping hot or it'll curdle the cream. Give it a good stir then bring it to simmer. Keep the heat on low, stirring frequently until the orzo is cooked and the sauce has thickened.
  • Remove from heat and stir through your second tbsp of butter and your parmesan. If you over reduce the sauce just add a splash more stock. Serve with extra parmesan/parsley!
