1 cup mayonnaise
¼ cup white sugar
2 tablespoons seasoned rice wine vinegar
1 ½ tablespoons lemon juice
1 tablespoon prepared horseradish
½ teaspoon onion powder
½ teaspoon dry mustard
½ teaspoon celery salt
½ teaspoon salt
½ teaspoon ground black pepper
1 (28 ounce) package coleslaw mix

Steps:

  • Whisk mayonnaise, sugar, rice wine vinegar, lemon juice, horseradish, onion powder, dry mustard, celery salt, salt, and black pepper in a large mixing bowl, stirring to dissolve sugar. Fold coleslaw mix into dressing. Cover bowl and refrigerate 1 hour before serving.

1 tablespoon red-wine vinegar
1 tablespoon sugar
1/4 cup mayonnaise
1/4 cup whole milk yogurt
6 cups thinly sliced cabbage (a mix of red, Savoy or Napa)
2 scallions, thinly sliced
1 tart apple, peeled, quartered and thinly sliced
1/3 cup chopped parsley
Sea salt

Steps:

  • Whisk together the vinegar and sugar to dissolve the sugar. Whisk in the mayonnaise and yogurt. In a large serving bowl, mix the cabbage, scallions, apple and parsley. Pour over the dressing and fold together. Taste and add salt, if needed. Let sit for about 30 minutes before serving -- you may want to put it in the refrigerator, but make sure it comes to room temperature before serving.

2 carrots, trimmed, peeled and chopped coarsely
1 medium sweet onion such as a Vidalia, peeled and chopped coarsely
1/2 each red bell pepper and green bell pepper, seeded, chopped coarsely
1 head cabbage (about 2 pounds), outer leaves discarded, cored and shredded
2 tablespoons sugar
2 tablespoons distilled white vinegar
1 1/2 cups Hellmann's mayonnaise, or more to taste
1 teaspoon celery seed or caraway seed
Kosher salt

Steps:

  • In batches, pulse carrots, onion, peppers and cabbage separately, until each is finely chopped. Do not overprocess! Combine ingredients in a bowl.
  • Combine sugar and vinegar in a pan and stir over low heat until sugar melts. Pour over vegetables and mix. Add 1 1/2 cups mayonnaise and caraway or celery seeds, stir to combine and season with salt to taste. Add more mayonnaise, if desired. Chill for an hour and serve.

You may sustitute celery seeds for the caraway seeds if you like. Adapted from The America's Test Kitchen Family Cookbook, that I just got for my birthday!

6 -7 cups green cabbage, cored, shredded
6 -7 cups red cabbage, cored, shredded (or use all red or all green)
salt
2 teaspoons caraway seeds (or celery seeds)
1/2 cup mayonnaise
2 tablespoons white vinegar
1 teaspoon dijon-style mustard
1 teaspoon sugar
pepper
2 carrots, peeled and grated
1 small sweet onion, minced

Steps:

  • Toss the cabbage with 1 teaspoons salt and let sit in a colander for at least 1 hour or up to 4 hours.
  • Meanwhile, toast the caraway seeds in a small skillet over medium heat until fragrant, about 3 minutes.
  • Rinse the cabbage and pat dry with paper towels.
  • Whisk the toasted caraway seeds, mayonnaise, vinegar, mustard, sugar, and 1/4 teaspoons pepper together in a large bowl.
  • Add the cabbage, carrots, and onion and toss.
  • Chill for at least 1 hour before serving.
  • Season with salt and pepper to taste. Enjoy!
  • Note:.
  • The coleslaw can be prepared, covered and chilled a day in advance. Before serving, freshen the salad with a spoon of mayonnaise and a dash of vinegar. Season with salt and pepper to taste.
