Steps:
- In a small saucepan combine the sugar and vinegar and heat, stirring occasionally, until sugar is dissolved. Set aside to cool completely before proceeding.
- Assemble remaining ingredients in a large, non-reactive mixing bowl and pour cooled sugar-vinegar mixture over all. Toss well to combine, cover with plastic wrap, and refrigerate overnight before serving.
- When ready to serve, season with salt, freshly ground black pepper, and Essence, to taste, and toss thoroughly to combine.

- Shred the cabbage and carrots with your food processor. Put in a large bowl.
- Slice up the green onions and add to the coleslaw/carrot mixture.
- Combine the mayo, sugar, vinegar and celery seed, salt and pepper. Shake it up in a jar. Taste this to make sure it's seasoned properly.
- Add it to the cabbage/carrot mixture until well moistened. Taste again...if it's too sweet add either more vinegar or may to make it a bit more tangy. Store in a container in the fridge until well chilled.

- Shred the cabbage on a large box grater. Chop or finely slice any remaining cabbage pieces or large leaves. Mix the cabbage and salt together. Place the cabbage in a colander set over a large bowl. Cover the cabbage with plastic wrap then place a couple of heavy salad plates or small skillet on top to compress. Place the colander and bowl in the refrigerator and rest for at least 1 to 4 hours to drain. Once drained, pat the cabbage dry using paper towels and pour into a large serving bowl. Discard the drained cabbage water.
- In a small bowl combine the remaining ingredients from carrots through the celery seed. Whisk until blended. Pour the mayonnaise mixture over the shredded cabbage and fold together until blended.
