SMASHED CARAMELIZED PLANTAINS "PLATANOS AL CALDERO"

Smashed Caramelized Plantains

Provided by Tyler Florence

Categories     side-dish

Time 30m

Yield 3 1/2 cups

Number Of Ingredients 6

4 ripe plantains
2 tablespoons extra-virgin olive oil
1/2 stick butter
4 tablespoons packed light brown sugar
Pinch salt
1 lime, juiced

Steps:

  • Cut ends off plantains, peel and slice in half lengthwise. Set 2 large nonstick saute pans over medium-high heat and add oil and 2 tablespoons butter into each pan. Add plantains and cook for 10 minutes - you don't want to move it too frequently otherwise it won't caramelize as well, flipping halfway. Once you flip the plantains, sprinkle with light brown sugar (depending on the ripeness/sweetness of the plantains, adjust the sugar amount) and salt. The plantains should be nice and golden. Squeeze with fresh lime juice just before serving.

RELLENITOS DE PLATANO

Rellenitos de Platano image

This recipe is from Guatemala and it can be used as a dessert or an appetizer or a just because recipe. My grandmother taught me how to make it and if you are looking for something really different, then you just found what you are looking for! Make as much as you want and eat with a plain or with a little sugar on top or with sour cream like we do in Guatemala!

Provided by HGAVA

Categories     Appetizers and Snacks

Time 1h30m

Yield 12

Number Of Ingredients 5

6 plantains, peeled and broken into chunks
1 (16 ounce) can refried black beans
1 tablespoon white sugar
1 teaspoon salt
1 quart oil for frying

Steps:

  • Place the plantains in water to cover in a large pot. Bring to a boil, then reduce heat and simmer until tender, 15 minutes. Drain and mash.
  • In a small saucepan over low heat, heat the refried beans. Stir in the sugar and salt. Remove from heat.
  • To make the rellenitos, form a palm-sized amount of mashed plantains into a ball; flatten and place about a teaspoon of the bean mixture in the middle; then mold the sides of the plantain around the beans, making an egg-shaped ball.
  • Heat oil in a deep-fryer or large skillet to 375 degrees F (190 degrees C), or until a small amount of batter sizzles and browns in the oil. Fry rellenitos in oil until browned. Drain on paper towels.

MASHED PLANTAINS WITH FRIED EGGS (MANGú DE PLáTANOS)

Mashed Plantains With Fried Eggs (Mangú de Plátanos) image

If you ask any Dominican what is their breakfast of choice, be prepared to hear mangú de plátanos. It is basically mashed plantains, topped with eggs, cheese, red onions, or avocado.

Provided by Diala Canelo

Categories     Breakfast     Dominican Republic     Plantain     Quick & Easy     Egg     Avocado     Onion

Yield 2 servings

Number Of Ingredients 9

2 large plantains, peeled and cut in half lengthwise
½ red onion, thinly sliced
¼ cup (60 mL) white vinegar 2 tablespoons (30 mL)
Extra-virgin olive oil or unsalted butter, divided
¼ teaspoon (1 mL) sea salt
¼ teaspoon (1 mL) freshly cracked pepper
2 tablespoons (30 mL) vegetable oil
2 eggs
1 avocado, pitted, peeled, and sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the plantains and boil until fork-tender, about 25 minutes. Drain the plantains, reserving ½ cup (125 mL) of the cooking water.
  • Meanwhile, place the red onion in a small bowl and cover with the vinegar.
  • Transfer the plantains to a medium bowl and add the reserved cooking water, 1 tablespoon (15 mL) of the olive oil, salt, and pepper. Mash the plantains to the consistency of mashed potatoes.
  • In a medium frying pan, heat the vegetable oil over medium heat. Drain the red onions and discard the vinegar. Add the onions to the pan and cook, stirring often, until soft and translucent, about 5 minutes. Transfer to a plate.
  • In the same pan (no need to wipe clean), heat the remaining 1 tablespoon (15 mL) olive oil over medium heat. Carefully crack the eggs into the pan, leaving space between each egg. Cook for 3 to 4 minutes, or until the whites are cooked and no longer translucent and the yolks are still runny. (I prefer the eggs over easy for this dish.)
  • To serve, divide the mashed plantain between plates and top with a fried egg, cooked onions, and a few slices of avocado. Season with salt and pepper to taste.

MACHUQUILLO DE PLATANOS

Machuquillo de Platanos image

Mashed Plantains with Crispy Salt Pork The crisp pieces of salt pork-known in Cuba as chicharrónes-give this dish its distinctive flavor.

Yield Serves 4 as a side dish

Number Of Ingredients 6

1 garlic clove
about 2 cups plus 2 tablespoons olive oil
1/4 pound rindless meaty salt pork or thick-sliced bacon
1 1/4 cups water
3 barely ripe (slightly yellow) to semi-ripe (yellow with some spots) plantains
1/2 teaspoon salt, or to taste

Steps:

  • Mince garlic and in a small cup combine with 2 tablespoons oil. Let garlic mixture stand, covered and chilled, 1 to 2 hours.
  • Cut salt pork or bacon into 1/4-inch dice and in a small bowl combine with 1 cup water. Let salt pork or bacon stand 30 minutes and drain.
  • In a small heavy saucepan bring remaining 1/4 cup water to a boil with pork or bacon and cook, covered, over moderately high heat until water is evaporated, about 8 minutes. Lower heat to moderately low and continue to cook pork or bacon, covered, stirring occasionally, until golden and crisp. With a slotted spoon transfer pork or bacon to paper towels to drain and discard rendered fat (or reserve for another use if desired).
  • Preheat oven to 200°F.
  • With a sharp small knife cut unpeeled plantains into 3/4-inch-thick slices. Slit skin along side of each slice and peel off. In a 12-inch nonstick skillet heat 1/2 inch oil over moderate heat until just hot enough to sizzle when a plantain slice is added. Fry plantains in batches, without crowding, until tender and just golden, 2 to 3 minutes on each side. With tongs transfer plantains as fried to paper towels to drain and transfer to a baking pan. Keep fried plantains warm in middle of oven.
  • In a food processor pulse warm fried plantains until coarsely mashed. Add garlic mixture, fried pork or bacon, and salt and pulse until mixture just starts to hold together. (If desired, mold before serving: Transfer mashed plantains to a small bowl and press into bowl. Invert bowl onto a serving plate and tap to unmold plantains.)
