CREAMY MACARONI AND CHEESE
Macaroni and cheese is perfect supper food. It's a kids' favorite, and adults like it too. My recipe is simple and almost as quick as the boxed variety.

Steps:
- Bring 2 quarts of water to boil in large soup kettle. Add salt and pasta. Using package directions as a guide, cook until al dente. Drain. To prevent sticking, drain and immediately pour onto a large lipped baking sheet and let cool while preparing sauce.
- Meanwhile, microwave the milk and chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steamy (not boiling). Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture. Continue to whisk until thick and bubbly, 3 to 4 minutes. Whisk in mustard, Parmesan and pepper. Turn off heat, stir in cheddar until melted.
- Add drained pasta (and optional flavoring ingredients, see notes) to sauce, and stir until everything is well combined over low heat. Stir to heat through, and thin with a little water if the sauce is too thick. Serve hot.

CREAMY MACARONI AND CHEESE
There are two schools of thought about macaroni and cheese: Some like it crusty and extra-cheesy (here's our recipe), while others prefer it smooth and creamy. But most people are delighted by any homemade macaroni and cheese. It is light years ahead of the boxed versions. This creamy version has one powerful advantage for the cook: There's no need to preboil the pasta. It cooks in the oven, absorbing the liquid from the dairy products.

- Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
- In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
- Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

- Heat oven to 400ºF.
- Prepare Dinner as directed on package, using the Light Prep directions. Remove from heat. Add 1/2 cup mozzarella; stir until melted. Stir in egg.

- 1. Line a baking sheet with parchment or aluminum foil. (If using aluminum foil, spray with a bit of cooking spray.)
- 2. In a large mixing bowl, mix together all meat ball ingredients. Shape into 3/4 inch to 1 inch meat balls. about half the size of an average frozen meatball. Place each meatball evenly on parchment lined pan. Allow plenty of time to make mini meat balls. This step is a bit time consuming.
- 3. Bake meatballs in a preheated 350 degree oven for 15-20 minutes.
- 4. Meanwhile, cook macaroni noodles according to package directions. Set aside and keep warm if needed.
- 5. In a deep skillet, melt butter over medium heat. Add all purpose flour and mix thoroughly with the melted butter for 1 minute.
- 6. Pour milk into skillet and add cheese, salt & white pepper. Stir until thickened and bubbly about 10-15 minutes. Stir in pasta and cooked meatballs.
- 7. Plate and garnish with a bit of fresh chopped parsley and/or diced fresh tomato if desired.

- Preheat oven to 325 degrees F (165 degrees C). Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- In a large bowl, mix ground beef with adobo seasoning and powdered jalapeno pepper. Roll into small, 1 inch meatballs. Heat olive oil in a large skillet over medium-high heat. Add meatballs, and cook until browned on all sides, then remove to drain on a paper towel-lined plate. The meatballs do not need to be thoroughly cooked at this point as they will finish cooking in the oven.
- While the meatballs are cooking, melt the butter in a large saucepan over medium heat. Gently cook the butter until it begins to brown, and acquires a nutty fragrance, about 1 minute. Stir in the cream, sour cream, Cheddar cheese, cottage cheese, cotija cheese, garlic powder, and cilantro. Bring to a simmer, stirring constantly until the cheese has melted. Season to taste with salt and white pepper.
- Stir the cooked macaroni and diced chiles into the cheese sauce, and pour into a 9x13 inch baking dish. Slice the meatballs in half, and place onto the pasta cut-side down.
- Bake in preheated oven until the cheese sauce is bubbly, and the meatballs are no longer pink in the center, about 25 minutes.

- Spray a 9x13" glass casserole dish with cooking spray.
- Set aside.
- Cook the pasta according to package directions, in a large pot.
- Drain, rinse, and return to the large pot.
- Set aside.
- In a large skillet, melt the butter over medium heat.
- Add the flour, and cook until bubbly (about a minute).
- Add the milk slowly, stirring after each addition and cook until slightly thickened.

BAKED MACARONI WITH MEATBALLS
Steps:
- Preheat the oven to 200C/400F/Gas 6.
- For the cheese sauce, place the milk and bay leaves into a pan and place over a medium heat. Heat the milk to scalding point (do not boil) and then remove from heat. Leave to infuse.
- In a clean saucepan, melt the butter over a medium heat, then stir in the flour and cook for three minutes. Be careful not to let the mixture turn brown.
- Remove the bay leaves from the milk mixture and add a little milk to the flour and butter mixture. Stir to combine the milk and flour paste over a low heat, then repeat the process, gradually adding milk and stirring in, until a smooth paste is formed.
- Add the rest of the milk and bring to boil, stirring all the time, then reduce the heat and simmer for three minutes.
- Remove the pan from the heat and add the cheese, mustard and season, to taste, with salt and freshly ground black pepper.
- For the meatballs, heat one tablespoon of the oil in a saucepan over a medium heat. Add the onion, garlic and oregano and fry until softened, then remove from heat and allow to cool.
- Place the onion mixture into a bowl and add the minced meat. Season well with salt and freshly ground black pepper, and mix together to combine.
- Roll the mince mixture into small 2.5cm/1in meatballs.
- Heat the remaining tablespoon of oil in a clean frying pan over a medium heat. Add the meatballs and fry, turning occasionally, until brown all over and completely cooked through.
- For the pasta, heat the oil in a large frying pan. Add the shallots and fry for two minutes to soften, then add the cooked pasta and stir well.
- Add the tomatoes and oregano and cook for 2-3 minutes, then add the meatballs and the cheese sauce. (You may need to add a little milk to loosen the cheese sauce.) The sauce should coat, not swamp, the macaroni.
- Transfer the macaroni and meatballs to either a large ovenproof dish or into 10cm/4in ramekins. Top with parmesan and place into the oven to bake for 15 minutes if using a large dish, 7-8 minutes if using the ramekins.
- Preheat the grill to its highest setting and place the dish or ramekins under the grill to melt and brown the cheese before serving.
