Loaded Mashed Potatoes are creamy and buttery, topped with cheddar cheese, bacon and scallions. They're a breeze to make and perfect for making ahead.

8 ounces bacon (or more to taste)
3 pounds russet potatoes (peeled and cut into 1" cubes)
1 stick butter
1 container (16 oz) sour cream
4 teaspoons Kosher salt (divided)
1/2 teaspoon coarse ground black pepper
8 ounces shredded Cheddar cheese
1/4 cup green onions (sliced)

Steps:

  • Preheat the oven to 375 degrees.
  • Put the potatoes into a large pot and cover with water and 2 teaspoons of the salt.
  • Bring to a boil then reduce to a simmer and cook for 20 minutes.
  • Drain the potatoes and put them back into the pot with the butter and sour cream.
  • Mash them well and add in the remaining salt and the pepper.
  • Scoop the potatoes into a 9x13 casserole dish and top with the cheese and bacon.
  • Cook the potatoes for 5-10 minutes covered with foil, or until the cheese is fully melted.
  • Garnish with green onions before serving.

Mashed potatoes that could be a meal. Hardy, filling, and savory. I started making mashed potatoes this way mainly for my daughter who loves loaded baked potatoes. The first time I tried this was because we were having company for dinner and I was running low on potatoes. It was the hit of the dinner. About a year after I started making them this way, we went to a restaurant that had a similar offering. My daughter said mine was still better.

1 pound turkey bacon
6 Yukon Gold potatoes, peeled and chopped
1 (16 ounce) container sour cream
1 (8 ounce) package shredded sharp Cheddar cheese
4 green onions, chopped
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Lay bacon strips in a single layer on the prepared baking sheet.
  • Bake in the preheated oven until browned and crisp, about 15 minutes. Drain bacon slices on paper towels. Leave oven on.
  • While the bacon is cooking, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain, place in a large mixing bowl, and mash with a fork or potato masher.
  • Chop bacon and add to potatoes. Stir in sour cream, Cheddar cheese, green onions, salt, and pepper until well mixed. Transfer to a large casserole dish.
  • Bake until potatoes are heated through and cheese is melted, about 45 minutes. Re-mix to blend cheese throughout and serve hot.

3 lbs all purpose potatoes, peeled and cubed
1 1/2 cups shredded cheddar cheese, divided (6oz)
1 cup Hellmann's mayonnaise
1 cup sour cream
3 green onions, finely chopped (optional)
6 slices bacon, crisp cooked and crumbled

Steps:

  • Preheat oven to 375. Spray 2-quart shallow baking dish with nonstick cooking spray; set aside.
  • Cover potatoes with water in 4-quart sauce pot; bring to a boil over high heat. Reduce heat to low and cook 10 minutes or until potatoes are tender; drain and mash.
  • Stir in 1 cup cheese, Hellmann's real mayonnaise, sour cream, green onions and 4 strips crumbled bacon. Turn into prepared baking dish and bake 30 minutes or until bubbling.
  • Top each remaining 1/2 cup cheese and bacon. Bake an additional 5 minutes or until cheese is melted. Garnish, if desired, with additional chopped green onions.

1/2 stick vegan butter
3/4 cup oat milk
1 tsp garlic powder
1/4 tsp onion powder
5 oz vegan shreds
6 oz vegan bacon bites
3 scallions, chopped
1/4 cup chives, chopped
8 oz vegan cream cheese
salt, pepper to taste

Steps:

  • Peel and cook the potatoes in salt water. Drain and set aside.
  • Heat half of the vegan butter in a frying pan. Add the bacon bites and fry them for around 5 minutes until they begin to brown.
  • Transfer the cooked potatoes to a large mixing bowl along with the reserved vegan butter, cream cheese, garlic and onion powder, oat milk. Use the hand mixer to mash everything together until you get a creamy consistency.
  • Now give in 3/4 of the scallions, chives, pre-fried bacon bites, and cheese (reserve about 1/4 of each for garnish).
  • Mix well and serve in bowls, topped with the reserved garnish.

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.

½ cup salted butter
½ cup heavy cream
3 to 5 cloves garlic, finely chopped
1 cup sour cream
½ pound bacon, cooked and diced small
1 cup shredded cheddar cheese
1 teaspoon salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
2 teaspoons minced chives or green onions, plus more for garnishing

Steps:

  • To a large stockpot, add the potatoes, cover with 1-inch water above them, and bring to a boil over medium heat. Boil for about 15 to 20 minutes, or until tender and done; don't overcook.
  • Drain potatoes well and then return them back to the stockpot.
  • Using a potato masher, mash them by hand until they're mostly smooth with a few lumps.
  • Add all remaining ingredients, and stir to combine. Taste and if desired, add additional salt and pepper.
  • Optionally garnish with chives or green onions and serve. Potatoes will keep airtight in the fridge for up to 1 week and in the freezer for up to 4 months.
