Steps:

  • Combine egg yolks, cream, lemon juice, and lemon zest in a bowl; whisk thoroughly.
  • Melt butter in a saucepan over medium-high heat. Add rice; cook, stirring constantly, until opaque, 3 to 4 minutes. Add chicken broth; stir quickly. Bring to a boil. Reduce heat to low. Cover and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Fold lemon-cream mixture into the rice; mix well. Stir in Parmesan cheese and parsley.

2 leeks (white and light green parts only), chopped
1 large onion, chopped
kosher salt

2 large cloves garlic, finely chopped
1 1/2 c. Arborio rice
1/2 c. dry white wine
1/2 c. fresh lemon juice (from about 2 large lemons)
4 c. low-sodium chicken broth
1/2 c. sour cream
1/2 c. grated Parmesan
1/2 c. fresh flat-leaf parsley, chopped
1 tbsp. chopped fresh tarragon

Steps:

  • Heat the oil in a large skillet over medium heat. Add the leeks and onion and cook, covered, stirring occasionally, until just tender, 6 to 8 minutes.
  • Stir in the garlic and cook for 1 minute. Add the rice, wine, lemon juice, and ½ teaspoon each salt and pepper and cook, stirring, until the wine is absorbed, about 2 minutes.
  • Add the chicken broth and bring to a boil. Reduce heat and simmer, until the liquid has absorbed and the rice is tender, 18 to 20 minutes. Remove from heat and fold in sour cream, Parmesan, parsley, and tarragon

Steps:

  • Melt butter and heat olive oil in a nonstick pan.
  • Add onions and cook for 1 minute.

2 cups arborio rice
1 medium onion, finely chopped
2 tablespoons fresh minced garlic
1/3 cup chopped fresh parsley

1/2 teaspoon dried basil (can use more or use about 1/4 cup chopped fresh basil)
1 tablespoon fresh lemon juice
1/2 teaspoon grated lemon zest (you can add in a bit more if desired)

1 cup grated parmesan cheese

  • Heat about 2-3 tablespoons vegetable oil in a large heavy pot.
  • Add in the onion and garlic; saute for about 3 minutes.
