CHICKEN SURPRISE
A one pot rice dish with chicken, tomatoes, mushrooms and seasoning of your choice. This is called Chicken Surprise because the first time we made it, we were surprised by the great taste!

Steps:
- Cook chicken in a large skillet over medium-high heat until no longer pink and juices run clear, about 15 minutes.
- Bring water, bouillon, and poultry seasoning to a boil in a large saucepan. Stir in rice, cover pan, and remove from heat. Let rice stand until water is absorbed, about 5 minutes.
- Combine the cooked chicken, tomatoes, and mushrooms in saucepan with the cooked rice, and stir over medium-low heat until heated through. Serve hot.

Steps:
- Place chicken in bottom of shallow oven pan.
- Combine cream of chicken soup, milk and half and half.
- Spread soup mixture over top of chicken breasts evenly.
- Sprinkle with pepper, garlic powder, onion powder, parsley flakes and Italian seasoning.
- Place Swiss cheese slices over soup.
- In saucepan, mix melted butter and 1 box of the stuffing (bread and all).
- Spoon stuffing mixture over cheese slices evenly.
- Cover pan with foil.
- Bake at 450 degrees for 45 minutes or until chicken is done.
CREAMY LEFTOVER CHICKEN SURPRISE
I invented this recipe a long time ago and make it when I have leftover chicken. It's quick and made with simple ingredients. Feel free to make substitutions and experiment with it. Fresh or frozen broccoli. Cream of chicken soup or cream of mushroom. Any type of cooked chicken will do, but I prefer breast. If the leftover chicken has been marinated or seasoned, it will be a bonus. Any type of small pasta. Cheeses are flexible as well. I often use a combination of whatever I have on hand. Just be sure its sliced or shredded so that it melts quickly.It's a great all in one meal to keep on the stove on nights when family members are coming and going at different times.

Steps:
- 1. Cook pasta al dente and drain.
- 2. Cook or steam broccoli until tender
- 3. In a large pot combine cream of chicken soup and milk on medium high heat.
- 4. When heated, add pasta, chicken, cheese, curry powder and pepper. Mix ingredients thorougly.
- 5. In about 3-5 minutes when cheese is completely melted, stir in the broccoli.
- 6. Give the broccoli a minute or two to heat up.
- 7. Enjoy.
