¼ cup butter
1 (15.25 ounce) can whole kernel corn, drained
2 jalapeno peppers, chopped
1 ½ teaspoons ground cumin
1 teaspoon garlic powder

Steps:

  • Combine cream cheese and butter in a microwave-safe bowl; heat in microwave until mostly melted, about 30 seconds. Add corn, jalapeno peppers, cumin, and garlic powder to cream cheese mixture.
  • Heat mixture in microwave until warm, 1 to 2 minutes.

A combination of puréed corn and whole corn kernels make up this creamy side dish recipe. If you don't want this dish too spicy, use only the flesh of the jalapeños and discard the seeds, which hold most of the heat in the pepper.

2 tablespoons butter
1 shallot, minced
1 jalapeno, minced (discard seeds for less heat)
2 10-ounce bags corn kernels
1/2 cup heavy cream
1/3 cup water
2 ounces Monterey Jack cheese, grated
1/2 teaspoon salt

Steps:

  • Melt butter in a heated large straight-sided skillet over medium heat. Add shallot and jalapeno. Saute for 2 minutes.
  • Puree 1/2 bag of corn in food processor or blender. Add pureed corn and remaining frozen corn to pan. Add cream, water, and cheese. Stir and cook until cheese is melted, about 2 to 3 minutes. Season with salt and serve warm.

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low until corn is tender, stirring occasionally, 4-5 hours.

3 1/2 cups frozen corn, (thawed so no additional moisture is added)
2 tablespoons unsalted butter
1 cup whole milk
2 tablespoons cream cheese
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon cornstarch
2 garlic cloves, (minced)
1/3 cup Cotija cheese
1/4 of a small yellow onion, (diced)
1-2 jalapeño, (seeds removed and minced)
1 teaspoon tajin

Steps:

  • Whisk together milk and cornstarch, set aside.
  • Melt butter over medium-high heat. Sauté the onion for 3-4 minutes until translucent.
  • Reduce heat to medium and add jalapeño, garlic, cream cheese, cotija cheese, and milk. Stir for 1-2 minutes until cream cheese is mostly melted.
  • Add corn and continue to cook, stirring frequently, for 8-10 minutes, or until corn is plump and sauce is thick and creamy. Season with salt and pepper to taste and serve.

  • Generously coat the bottom of a medium-sized saucepan with olive oil and place it over medium-low heat. Add the onions and sauté until soft and slightly golden, about 10 minutes. Add the very finely chopped jalapeños and sauté for another couple of minutes. Stir in the cumin and paprika and sauté until it's very aromatic, about 30 seconds.
