- Place pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
- Drain sausage and stir in onions. Cook until slightly tender, about 2 minutes. Mix in diced tomatoes with green chile peppers. Stirring occasionally, allow the mixture to simmer approximately 15 minutes.
- Blend cream cheese and sour cream into the sausage mixture. Season with crushed red pepper.

- Cook the penne pasta in a large pot of salted boiling water according to package directions.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
- Cook the Italian sausage along with the onion, garlic, red pepper flakes, and salt until the sausage is no longer pink.
- Drain excess fat from the skillet if necessary and return the meat mixture to the pan.
- Turn the heat to low and add the cream to the skillet. Bring to a simmer and add in the spinach.
- Cook, stirring for about 3 minutes until the spinach is wilted.
- Stir in the parmesan cheese until melted. Stir the pasta into the sauce.
- Serve immediately.

- 1. Gather your ingredients.
- 2. Remove the skins from the tomatoes (blanching) and small dice.
- 3. De-seed the jalapeños and small dice.
- 4. Place the Italian sausage in a skillet over medium heat.
- 5. Cook until no longer pink.
- 6. Chef's Note: As the sausage is cooking, break into small bits with a wooden spoon.
- 7. Pour out any excess oil, and then add the tomatoes, chilies, and crushed red pepper.
- 8. Cook for about 5 minutes, and then cover, turn heat down to low, and allow to lightly simmer for an additional 5 minutes, or until the peppers are softened.
- 9. Remove from heat, and then add the cream cheese.
- 10. Stir until fully incorporated.
- 11. Add the sour cream.
