- Bring a cast iron skillet to a medium high heat before placing pork chops in the pan (4 at a time is good)

- Preheat oven to 350°. In a small bowl, combine the steak seasoning, rosemary and thyme; rub over meat. Using the point of a sharp knife, make eight slits in the tenderloin. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Place the pork chops into the prepared baking dish. Mix together the butter, bread crumbs, and horseradish. Spoon the mixture onto the pork chops, and press down the mixture to completely coat each chop with about 1/4 of the mixture.

PORK CHOPS WITH CRANBERRY HORSERADISH SAUCE
I don't usually like to use recipes that you have to buy specific brand ingredients, but I had the Cranberry Horseradish Sauce on hand, and I created this recipe with it. If you don't want to buy the Stonewall Kitchen, I'm sure you can combine whole cranberry sauce and 2-3T of horseradish (to taste). Because RZ does not find this ingredient, it is not included in the calories - it is about an additonal 50 calories a serving (although more for the whole dish, you are probably only eating about 1 T of the sauce).

- Combine the cranberry horseradish sauce, chili sauce, sugar mustard, garlic powder and onion powder. Set aside.
- Put the flour, salt, and pepper in a bag.
- Heat a large covered skillet, add the oil.
- Shake pork cutlets in the bag with flour, one at a time, and add to the skillet.
- Brown pork on both sides, 2-3 minutes. (I barely had enough room for the 2lbs of pork cutlets - there were about 8 of them - in my 14" skillet, so you may need to do this in batches.).
- Add the sauce from step one and coat the pork with it. Cover and cook on med-low for 10 minutes.
- I served with white rice and carrots.

Steps:
- Preheat oven to 375 degrees.
- Remove any extra fat from chops and season with salt and pepper.
- Dredge chops in flour, covering both sides.
- Dip floured chops first into beaten eggs and then into the breadcrumbs.
- Place oil in ovenproof skillet over medium heat. When oil is hot,add chops and cook for 2 minutes on each side. Then place skillet in preheated oven for 10 minutes. Do not cover.
- Remove chops from skllet and keep warm.
- Add butter to skillet( do not clean out skillet first) and place on medium hot burner on stovetop. Add mushrooms and saute for 2 minutes.
- Add the flour and the horseradish and mix well.
- Add the chicken stock and cook for 2-3 minutes.
- Season to taste and serve with tomato wedges for garnish.

Wonderful way to easily prepare a pork tenderloin. I found this in the local newspaper and it was described as "heart healthy". The sauce adds quite a kick! The recipe calls for unsalted stone ground mustard, but I had the regular stone ground mustard on hand and used that.

- Combine garlic, pepper and salt to taste, rub over tenderloins.
- Cover and chill 1 hour.
- Preheat oven to 425 degrees.
- Lightly coat rack of shallow roasting pan with non-stick cooking spray.
- Brown tenderloins in large non-stick skillet over medium-high heat 1 - 2 minutes on each side.
- Place in roasting pan on rack.

- For the pork chops, pre-heat oven to 275F. Make the spice rub by combining the fennel, coriander, and paprika in a small bowl, mix well. Season all sides of the pork chop with a generous pinch of salt and spice rub. Let sit at room temperature for 20-30 minutes, as you never want to put cold meat into a hot oven or pan. Place the pork chop on a wire cooling rack set in a sheet tray and bake in the oven for 45 minutes, or until the internal temperature is 140F.
- When the pork is ready, take out from oven and preheat a cast iron pan over medium-high heat until hot, about 3 minutes. Add 1 tablespoon of oil, wait 30 seconds and add the pork chops. Use tongs to push the chop down so it makes good contact with the pan, and sear for 1-2 minutes, until deep golden brown. Flip and repeat on the second side, and then sear on the sides for 30 seconds. Remove and place pork on a clean plate loosely covered with foil and turn the pan off.
- Allow the pan to cool for 2 minutes then add another shot of oil along with the onions, ¼ teaspoon of salt, and a few cracks of pepper. Cook for 4 minutes then add the wine and cook until almost evaporated then add the chicken stock. Cook for 6 minutes, or until reduced by half then add the cream, mustard, horseradish, salt, and a couple cracks of pepper. Cook until sauce has thickened a bit, and the parsley and turn off the heat and check for seasoning. Adjust if necessary.
