Steps:
- Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
- Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

- Heat oven to 350°.
- Spray a 3-quart baking dish with nonstick cooking spray.
- Cook the spaghetti in boiling salted water following the package directions.
- Rinse, drain and set aside.
- In a large sauté pan, melt butter over medium heat.

- Prepare the farfalle according to package directions, set aside
- While pasta cooks, in a saute pan, over medium heat add 1 Tablespoon unsalted butter (Note 1), let melt. Add in diced shallots, saute about 2 minutes to soften shallots.
- Add in minced garlic, Italian seasoning, salt, and black pepper. Continue to saute another few seconds to blend flavors. (Note 6)
- Stir in the remaining butter (Note 1), let melt. Whisk in the flour, continue to whisk about 1 minute to blend flavors.
- Whisk in heavy cream to blend. Cook and stir occasionally, about 5 minutes to thicken sauce.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, saute the celery, pepper and onion in butter until tender. Stir in the soup, milk and salt. - 1. Preheat oven to 350.
- 2. Blend the tomatoes, onion, garlic & tomato sauce in a blender. Put aside.
- 3. Add the bay leaf & cloves to a big pot of water. Let it boil for about 15 minutes. Remove. Add spaghetti and cook according to instructions. Do not salt the water. Drain and set aside.
- 4. Melt the butter in a medium pan. Add blended tomato sauce & chicken bouillon.
- 5. Saute till it deepens in color ~5-7 minutes. Remove from heat.
- 6. Add the crema agria to tomato sauce. If you taste the sauce at this point it should be on the salty side. I also like to add a pinch of dried parsley at this point too.
- 7. Combine the spaghetti, ham and tomato sauce in a 9x12 casserole dish. Mix really well. Sprinkle the cheese over the whole casserole. Cover with foil and put in oven for 15 minutes or until heated through and cheese is melted.
- 8. *Crema agria can be found in the refrigerated mexican section but in a pinch sour cream can be used instead.

- Melt 2 T. butter in skillet, add mushrooms, and saute until done. Remove to large bowl.

- Put a large pot of water to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cut the ham into small strips or juliennes. Peel and finely chop the shallots. wash and chop the parsley.
- Sauté the sliced shallot gently in olive oil until it starts to soften. Add the ham pieces and sauté them for a minute or two over a slightly higher heat, until they beginto brown ever so slightly around the edges. Add the passata and simmer gently until it starts to thicken (about 10 minutes). Add salt to taste.
- Add the cream and mix it with the rest of the sauce. Let the sauce simmer for 4-5 minutes until the cream and tomato have reduced into a lovely coral coloured sauce.
- Cook the pasta slightly less than al dente according to the instructions on the packet. Save a little of the pasta cooking water and drain the pasta.
- Add the pasta to the sauce along with ½ a ladleful of the pasta water. Turn up the heat and let the pasta simmer in the sauce for a minute or two. Mix constantly, until the sauce has reduced enough to coat the pasta well. Add the chopped parsley and serve immediately, with freshly ground black pepper and a sprinkling of extra parsley.
