3 pounds baby Yukon gold potatoes, halved
Kosher salt
2 tablespoons olive oil
1 tablespoon rosemary, minced
3 cloves garlic, minced
1 yellow onion, slice into rounds
1 red bell pepper, quartered
2/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons buttermilk
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
2 teaspoons chives, chopped
2 to 3 dashes Worcestershire sauce
Dash of white vinegar
Dash of hot sauce
Freshly ground black pepper
8 slices bacon, cooked and chopped
3 scallions, sliced thinly for garnish

Steps:

  • Add the potatoes to a large pot and cover with water. Season generously with salt. Place over medium-high heat and bring to a boil. Cook until tender, 8 to 10 minutes. Drain and set aside to cool, 5 to 7 minutes.
  • Preheat a grill pan over medium-high heat. Toss the cooled potatoes with the olive oil, rosemary, garlic, onion and red bell pepper. Place on the grill pan and cook until nicely browned, 2 to 3 minutes per side. Remove to a large bowl.
  • Make the dressing by adding the mayonnaise, sour cream, buttermilk, parsley, dill, chives, Worcestershire sauce, vinegar, hot sauce and some salt and pepper to a mason jar. Secure the lid and shake until well combined.
  • Pour the dressing over the potatoes and toss to coat. Fold in the chopped bacon, sprinkle over the scallions and serve.

¼ cup mixed chopped fresh herbs such as parsley, chives, tarragon and/or dill
3 tablespoons white wine vinegar
1 tablespoon honey or maple syrup
2 teaspoons Dijon mustard
½ teaspoon salt
½ teaspoon pepper
1 ½ pounds baby potatoes, halved
2 tablespoons Gay Lea Spreadables Butter, Original, melted
½ cup chopped celery
½ cup fresh (or frozen thawed) baby peas
4 large radishes, halved and sliced

Steps:

  • Whisk sour cream with mixed herbs, vinegar, honey, mustard, salt and pepper until combined; set aside.
  • Bring a large pot of salted water to the boil; add potatoes and cook for 12 minutes. Drain and rinse under cold running water.
  • Preheat grill to medium; grease well. Toss potatoes with melted Spreadables butter. Spread out evenly on the grill and cook, turning often, for 15 minutes or until well marked and fork tender.
  • Transfer potatoes to a bowl and toss with dressing, celery, peas and radishes. Salad can be served warm or reserved for up to 24 hours in the refrigerator.

8 medium red potatoes (about 2 pounds), cut into 1-in. slices
2 tablespoons olive oil
1/2 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1 cup fat-free mayonnaise
2 hard-boiled large eggs, chopped
1 dill pickle spear, chopped
3 tablespoons dill pickle juice
1 tablespoon spicy brown mustard

Steps:

  • Place the first five ingredients in a large bowl; toss to coat. , Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill potatoes, covered, over medium heat until tender, 25-30 minutes, turning once. Cool. Cut into quarters and place in a large bowl., In a small bowl, combine remaining ingredients. Pour over potatoes; toss to coat. Serve immediately. Refrigerate leftovers.

16 oz. Tasteful Selections® 1-Bite or 2-Bite potatoes, halved
1 tsp. coarse sea salt
1 c. (4 oz.) fresh sugar snap peas, halved or 1 c. frozen peas
1 c. packed fresh cilantro leaves
½ c. packed fresh flat-leaf parsley
1 large clove garlic
1 medium lime, juiced or 2 tsp. red wine vinegar
2 tbsp. olive oil
1 large ripe avocado, halved, pitted and peeled
Salt and red pepper flakes, to taste

Steps:

  • Place potatoes in a large saucepan with 1 teaspoon salt; cover with water and bring to a boil. Reduce the heat and simmer about 15 minutes or until just tender. Add the peas during the last 2 minutes of cooking. Drain and rinse with cool water.
  • Meanwhile, chop the herbs and garlic together until very fine (or place them in a food chopper or processor). Mix with the lime juice and oil in a large bowl. Add the avocado; mash well with a fork until well blended with the herb mixture. Season with salt and pepper flakes.
  • Gently stir the potatoes into the avocado-herb dressing; serve at room temperature.

1 pound red potatoes, cut in to 1-inch cubes
1 bunch scallions, washed
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon spicy brown mustard
1 teaspoon chopped garlic
1/2 teaspoon kosher salt
Pinch freshly ground black pepper

Steps:

  • Bring a medium pot of salted water to a boil over medium heat. Add potatoes and cook for 8 minutes or until slightly tender. Strain, place in large bowl and let cool until slightly warm.
  • While potatoes are cooking, set up grill or grill pan for direct cooking over medium heat. Place scallions on hot oiled grill and cook for 4 minutes. Transfer to a cutting board and set aside.
  • To the bowl with the potatoes add mayonnaise, sour cream, mustard, garlic, salt and pepper and gently mix until well blended and potatoes are coated. Slice grilled scallions and mix into the potatoes. Serve immediately or keep covered in the refrigerator for up to 2 days.

1/2 tsp (2 mL) salt and freshly ground pepper, each
1 1/2 lb (750 g) potatoes, mini and halved
2 tbsp (30 mL) GAY LEA - Spreadables Regular
1/2 cup (125 mL) celery, chopped, or peas
1/2 cup (125 mL) radishes, chopped

Steps:

  • Whisk sour cream with mixed herbs, vinegar, honey, mustard, salt and pepper until combined; set aside.
