We created this sauce with milk because most families have milk in the fridge. If you want to use heavy cream, then just eliminate the flour and replace the milk with heavy cream. Makes about 2 1/2 cups of sauce.

1/4 cup butter ((1/2 stick))
4 cloves garlic (, minced (or 2 teaspoons garlic powder))
1/4 cup all-purpose flour
2 cups milk
1/4 teaspoon dried herbs ((basil, oregano, thyme, etc.))
1/2 teaspoon dried mustard powder
1 cup grated Parmesan cheese
1 teaspoon salt (, or to taste)
1/2 teaspoon fresh cracked black pepper

Steps:

  • Heat a sauce pan on medium-high heat. Melt butter, then add garlic and cook translucent and fragrant (about 1 minute).
  • Whisk in flour and continue whisking to remove large clumps.
  • Slowly whisk in the milk. Whisking often to make sure flour lumps are smooth, bring sauce to a low boil. Then reduce heat to low.
  • Add dried herbs, mustard powder, parmesan, salt and pepper. Continue whisking until sauce is smooth and begins to thicken.
  • Serve the sauce with your favorite pasta. If you're saving the sauce for later, allow the sauce to completely cool.
  • Pour the sauce into mason jars or a container. Keep in fridge and use within 5 days.

½ teaspoon minced garlic
1 teaspoon garlic powder

Steps:

  • In a medium saucepan add butter, heavy whipping cream, and cream cheese. Cook over medium heat and whisk until melted.
  • Add the minced garlic, garlic powder, italian seasoning, salt and pepper. Continue to whisk until smooth. Add the grated parmesan cheese.
  • Bring to a simmer and continue to cook for about 3-5 minutes or until it starts to thicken. Toss it with your favorite pasta!

1/2 c butter
2 Tbsp cream cheese
1 pt heavy cream
1 tsp granulated garlic, up to 2 teaspoons
2/3 c freshly grated parmesan or romano cheese
1/2 tsp black pepper
salt to taste

Steps:

  • 1. In a medium saucepan melt butter over medium heat-do not brown it or burn it.
  • 2. Add cream cheese whisking until melted and smooth.
  • 3. Whisk in the heavy cream.
  • 4. Whisk in the 1 teaspoon granulated garlic and black pepper.
  • 5. Reduce heat to medium low, you want it to simmer gently, stirring often until sauce thickens, around 25 minutes.
  • 6. Remove from heat, stir in cheese.
  • 7. Now taste. Add salt if needed. I usually add more pepper and granulated garlic.
  • 8. Serve.

This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

2 cups cream (heavy, or 35% cream is best)
1/4 cup butter (cold)
1/4 cup Parmesan cheese (grated)
salt and pepper (ideally white pepper)
pasta (fettucini, penne or tortellini are great, or use a non-wheat pasta for a gluten free recipe)
fresh parsley (chopped for garnish)
1 clove garlic (chopped (optional))
extra parmesan cheese

Steps:

  • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
  • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
  • In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
  • When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).

2 tablespoons butter
3 cloves garlic (finely minced or pressed through a garlic press)
4 ounces cream cheese (softened and cut into 6 pieces (see note))
1 cup milk (see note)
1 1/2 cups freshly grated Parmesan cheese
1/2 teaspoon salt (more to taste, if needed)
1/4 teaspoon pepper

Steps:

  • In a medium pot or skillet, melt the butter over medium heat. Add the garlic and cook for about 2 minutes, stirring constantly, taking care not to let the garlic burn.
  • Add the cream cheese and let it sit over medium heat for a few minutes until it is warm and melty. Whisk the butter and cream cheese mixture together. It will look curdled at first, but with constant whisking for 2-3 minutes, it should come together to form a smooth, creamy paste.
  • Add the milk gradually, about 1/4 cup at a time, whisking quickly and constantly until each addition is incorporated fully into the sauce. Stir in the Parmesan cheese, pepper and salt. Stir until the cheese is melted.
  • Cook for 2-3 minutes for a thicker sauce or remove right after the cheese is melted for a thinner sauce. Serve immediately over hot, cooked noodles.

Salt and pepper, (to season)
2 tbsp olive oil, (divided)
1 onion, (diced)
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1/2 cup (125 ml) dry white wine, ((optional))
8 oz (250 g) brown mushrooms, (sliced)
2 cups (500 ml) chicken broth, (or stock)
1 1/2 cups (375 ml) heavy cream, divided ((thickened cream, light cream, evaporated milk can also be used))
Extra salt and pepper, (to taste)
8 oz (250 g) dry pasta, (penne or fettuccini)
1 1/2 cups freshly grated parmesan cheese
Fresh chopped parsley, (to garnish)

Steps:

  • Season chicken thighs with salt and pepper.
  • Heat half of the oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown and cooked through. Remove chicken and set aside.
  • Add the remaining oil in the pot. Fry onion until transparent, stirring occasionally (about 2 minutes). Sauté the garlic until fragrant (30 seconds), then add in the white wine and allow to reduce to half (about 4-5 minutes). Add the mushrooms and cook for about a minute, while stirring occasionally.
  • Pour in broth and 1 cup of cream (or evaporated milk); season with salt and pepper. Bring to a gentle simmer then add the pasta. Mix well, reduce the heat to a slow simmer while stirring occasionally, until pasta is al dente (about 15 minutes).
  • Stir in the parmesan cheese until it melts through the sauce. Remove from heat immediately and slowly add in 1/4-1/2 cup remaining cream if sauce it too thick for your liking. Adjust salt and pepper to your taste.
  • Slice the chicken into strips and stir through the pasta. Garnish with fresh parsley and extra parmesan, if desired

1 cup heavy whipping cream
1 cup water
1 chicken bouillon cube
8 oz shredded parmesan cheese
16 oz penne pasta (1 box )
1/2 tsp salt (for pasta )

Steps:

  • Cook penne pasta in a large pot per package directions, making sure to add ½ tsp salt to the water (cook time is about 14 minutes). Once done, drain pasta and put back in the large pot.
  • In a small bowl add 1 cup of water. Drop in the bouillon cube. Put in the microwave for 2 minutes on high heat. Be careful, the edges of the bowl will be hot. Set aside.
  • In a large saucepan, melt stick of butter over low medium-low heat. Once butter is melted add chunks of cream cheese, minced garlic, garlic powder, dried parsley flakes, italian seasoning, salt, pepper. Whisk together.
  • Add chicken broth, heavy whipping cream, and parmesan cheese. Whisk together and turn heat to medium, to a low boil.
  • In a small bowl, add 5 tablespoons of sauce and 1 tablespoon of flour. Mix well with a spoon. Add flour sauce mixture and whisk well.
  • Let the sauce simmer for about 5 minutes, continue to whisk frequently while simmering.
  • Once the sauce is done pour over noodles, stir well, and serve.
