Chili powder and picante sauce add just the right dash to this hearty main dish. It's a snap to assemble since it uses convenience foods. -Teresa Peterson, Kasson, Minnesota

Number Of Ingredients 10

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 small tomatoes, chopped
1/3 cup picante sauce
1 medium green pepper, chopped
1 small onion, chopped
2 to 3 teaspoons chili powder
12 corn tortillas (6 inches), cut into 1-inch strips
3 cups cubed cooked chicken
1 cup shredded Colby cheese

Steps:

  • In a large bowl, combine the soups, tomatoes, picante sauce, green pepper, onion and chili powder. In a greased 13x9-in. baking dish, layer half of the tortilla strips, chicken, soup mixture and cheese. Repeat layers. , Cover and bake at 350° until bubbly, 40-50 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

This Creamy Slow Cooker Fiesta Chicken is a HUGE hit in my house every time I make it. It's a super easy comfort food dinner idea that really hits the spot!

Number Of Ingredients 6

3 pounds boneless chicken breasts
1 (15- ounce) can black beans, drained
1 (15- ounce) can corn, drained
1 (10- ounce) can of diced tomatoes and chilis (such as RoTel), drained
2 (1- ounce) packages taco seasoning
1 (8 ounce) block cream cheese, cubed

Steps:

  • In a large slow cooker combine the chicken, black beans, corn, tomatoes, and taco seasoning.
  • Cook on high for 3-4 hours (or low for 6-8) or until the chicken is fork tender and shreds easily.
  • Add cream cheese and cook for an additional 30 minutes.
  • Using two forks, shred the chicken and stir all the ingredients to combine.
  • Serve warm.

  • Season chicken with 3/4 teaspoon salt and 1/4 teaspoons pepper. Heat olive oil over medium-high heat in a large skillet with a tight-fitting lid. Add chicken in batches, in a single layer, and saute until brown about 7 minutes. Remove to a plate, cover loosely with foil and set aside.
  • Saute onion and red bell pepper on medium heat until soft, about 5 minutes. Add chicken broth and stir, scraping up all brown bits on the bottom of the pan.
  • Add taco seasoning, 1/4 teaspoon salt, 1/4 teaspoon black pepper, cumin, tomatoes, diced chilies, corn, black beans, and rice and bring to a boil. Reduce heat to low, cover and cook for 20 minutes.
  • Remove lid and quickly add chicken to rice. Cover and cook 8 minutes or until rice is tender and chicken is heated through. Adjust seasoning, ladle into individual bowls, sprinkle with cilantro and serve.
