- Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,, Bake at 350° for 20 minutes. Open foil carefully, allowing steam to escape. Broil 4-6 in. from the heat for 3-5 minutes or until the fish flakes easily with a fork., Meanwhile, combine the sauce ingredients until smooth. Serve with salmon.

- Preheat oven to 350 °F and grease a baking dish with butter.
- In a small mixing bowl, combine lemon juice and minced red onion.
- Place salmon in prepared baking dish and drizzle lemon juice mix over each salmon piece. Season with salt and ground black pepper.
- Bake salmon, uncovered, in the preheated oven, for about 20 minutes (15 minutes for fillets), until fish flakes easily with a fork or a thermometer reads a minimum 145 °F.

- In a medium sized skillet heat the olive oil over medium low heat. Salt and pepper the salmon and add to the skillet skin sized down. Heat for about 5 minutes and flip with a spatula the salmon to the other side and cook for another 5 minutes until the salmon is brown and center is slightly pink. Remove salmon and set aside on a plate.
- Add the garlic to the pan and cook until tender. Add the heavy cream, chicken broth, and lemon juice. In a small bowl whisk together cornstarch and water. Add to the sauce. Let simmer for 3-4 minutes or until sauce has thickened.
- Add the salmon back to the skillet and heat through. Add fresh dill to the sauce and serve.

- Bring 6 quarts water, 6 tablespoons lemon juice, lemon halves, 1 tablespoon salt, and the peppercorns to a boil in a large, wide pot. Reduce heat; let simmer.
- Season two salmon steaks with salt. Place one-quarter each of the fennel and onion and 2 sprigs each dill and parsley on a long sheet of parchment; top with salted steaks, one-quarter each fennel and onion, and 2 sprigs each dill and parsley. Fold parchment to make a packet. Repeat process to make another packet.

- Melt half of the butter in a skillet set over medium heat and saute the onions until soft and translucent. Add the milk and salmon. Bring to a gentle boil, reduce heat, and simmer for 5 to 7 minutes. Remove the skillet from the heat and cool for 3 to 4 minutes.
- Lift the fish out of the milk and peel away the skin, set aside, reserving the milk and onions.
- In a separate skillet, melt the remaining butter and whisk in the flour. Gradually add the milk mixture and bring to a boil, stirring frequently until thick and creamy.
