PORK CHOPS WITH APPLES AND ONIONS
This is by far one of the best recipes I've ever found! Succulent pork chops with a phenomenal spice rub cooked in a sweet sauce with onions and apples. A perfect autumn dish, but tasty all year-round!

Steps:
- Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook in the hot oil until browned, 3 to 5 minutes per side. Remove pork from the skillet.
- Add onion to the skillet and cook until tender, about 3 minutes. Add apples; cook and stir for 2 more minutes. Stir in apple juice, brown sugar, and reserved spice mixture; bring to a boil.
- Reduce heat to low, cover, and simmer until pork is longer pink in the center, and reaches desired level of doneness, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- Sprinkle pork chops with salt and pepper. In a large nonstick skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm., Add the remaining ingredients to the skillet, stirring to loosen browned bits from pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chops to the pan. Reduce heat; cover and simmer for 3-4 minutes or until a thermometer reads 145°. Let stand for 5 minutes before serving.

Steps:
- Pound the pork chops to 1/4 inch thickness.
- Mix the flour, 1/2 teaspoons salt, 1/4 teaspoons pepper, and the garlic powder and dredge the chops in this mixture.
- Melt 1 tablespoons of the butter and 1 tablespoons of the olive oil in a pan and cook the chops until nicely browned on both sides and done.
- Take the chops out of the pan and keep them warm.
- Melt the remaining butter and olive oil in the same pan now and sauté the onions for a couple minutes.
- Then add the apples and sauté until the onions start to get soft.
- Add the white wine and cook 5-7 minutes longer, stirring occasionally.
- Slowly add the heavy cream while stirring, and combine well.
- Add the Dijon mustard, capers, lemon zest, salt and pepper to taste, and dried basil and combine well.
- Add the chops back to the pan over medium-low heat and cook covered, until heated through and it starts bubbling. Enjoy!

- Season chops with salt and pepper. Heat 1 tablespoon EVOO in a large skillet over medium-high heat. Cook pork 5 minutes on the first side until deeply golden, turn and cook 3-4 minutes more with a loose foil tent over the pan. Remove cooked chops to a plate and cover to keep warm. Add another tablespoon EVOO, add the onions and apples. Season with salt, pepper and thyme and cook until just tender, 5-6 minutes. Douse with juice of a lemon and remove chops to a plate.
- Add 2 tablespoons butter to the skillet, melt then whisk in flour, cook 1 minute then whisk in cider and 1 cup of stock. Season the gravy with salt and pepper. Thicken 4-5 minutes over medium-low heat.
- Serve chop covered with apples and onions, gravy poured down over top.

- Brown pork chops in oil over medium high heat, remove.
- Add apples and onions, saute until apple is tender, remove apple and reserve.
- Add apple juice, bouillon granules, thyme and pork chops, bring to a boil, reduce heat, cover and simmer 15 minutes.
- Add apple and simmer until heated through.
- Remove apple and chops to a serving platter.
- Add cream, bring to a boil and cook until sauce is slightly reduced.
- Season to taste and pour over chops.
