CREAMY ORZO PASTA SALAD
Steps:
- Cook the orzo pasta following the package instructions.
- Meanwhile, cut the pepper, tomatoes, onion and cucumber into small pieces (it does not really matter what the pieces look like so don't worry about your cutting technique). Throw these into a serving bowl, season with salt and pepper and stir well.
- Prepare the dressing by mixing all the dressing ingredients in a small bowl. Add this into the serving bowl altogether with the cooked and well drained orzo pasta.
- Stir everything around until well combined and the creamy dressing covers all the pasta and veggies. Sprinkle with finely chopped dill.
- Serve as a side or light lunch meal.

- Mix all of the ingredients in the dressing together until well blended.
- Toss the dressing with the cooked pasta and other salad ingredients and chill in the refrigerator for a t least a couple of hours before serving.

CURRIED ORZO SALAD
Steps:
- Cook orzo according to package directions.
- Combine all dressing ingredients (mayonnaise through the cayenne pepper), and mix well.
- Pour dressing over warm orzo, then add chicken (optional), raisins, almonds, onions, apples, and grapes.
- Mix thoroughly, then refrigerate overnight; serve!
- Garnish with fresh basil right before serving!
CREAMY CHEESY ORZOTTO
Orzo is rice-shaped pasta. Ree's orzotto recipe treats the orzo as one would risotto rice to create an interesting blend of ingredients and ideas.

Steps:
- Heat the broth in a small saucepan and keep warm.
- Heat the oil in a saucepan over medium heat. Add the rosemary and shallot to the oil, then cook for a minute. Add the orzo, red pepper flakes and garlic and cook, stirring, for an additional 1 to 2 minutes. Deglaze with the wine and add the warm broth. Allow the broth to come to a simmer, then cook for 5 minutes, stirring occasionally.
- Stir in the cream, cheeses, sun-dried tomatoes and kale. Cook until the kale wilts and the sauce is thick and creamy, an additional 3 to 4 minutes. Taste and season with salt and pepper.
- Garnish with the parsley and serve.

Steps:
- Bring a heavy large saucepan of salted water to boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes.
- Drain - reserving 1 cup of the cooking liquid.
- Meanwhile, heat oil in heavy large pan frying pan over medium heat. Add the shallot and garlic, saute until until tender (about 2 minutes).
- Add the tomatoes and cook until tender (5-8 minutes).
- Stir in cream and peas.
- Add orzo and toss to coat.
- Remove from heat; add the Parmesan to the pasta mixture and toss to coat.
- Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved pasta water to maintain a creamy consistency.
- Season with salt & pepper.
