1 cup couscous
1/2 teaspoon chicken stock powder
1 cup boiling water
1 tablespoon butter
2 spring onions, chopped
420 g corn, drained
2 tablespoons chopped parsley

Steps:

  • Place the couscous,stock powder and water into a bowl.Cover and allow to stand for 5 mins.Fluff up with a fork.
  • Melt the butter in a pan,add the spring onion and corn,cook 2 minutes.
  • Stir corn into couscous with the parsley and serve.

1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
1 shallot, minced
1 cup chicken broth or 1 cup vegetable broth
3/4 cup couscous
1/3 cup fresh corn or 1/3 cup thawed frozen corn
1/4 teaspoon pepper
1 pinch cayenne (optional)
1/8 teaspoon salt

Steps:

  • Melt butter in saucepan.
  • Add shallot and saute 1 to 2 minutes, or until tender.
  • Add chicken broth and bring to a boil.
  • Add couscous, corn, pepper, cayenne and salt.
  • Cover; remove from heat and set aside 5 minutes.
  • Fluff with a fork.

1 1/2 cups chicken stock
1 cup couscous
1 1/2 cups corn
1 cup tomatoes, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1/4 teaspoon ground cinnamon
2 tablespoons chives, snipped
1 tablespoon lemon juice

Steps:

  • In a saucepan, bring the stock to a boil. Add the couscous. Cover the pan and remove from heat.
  • Let stand about 6 minutes or until all of the liquid has been absorbed. Fluff with a fork.
  • In a large nonstick frying pan over medium heat, combine the corn, tomatoes, garlic, chili powder and cinnamon.
  • Cook until the liquid from the tomatoes evaporates, about 5 minutes.
  • Stir in the chives and lemon juice. Add the couscous and stir to combine.

Meanwhile, bring the cream-style corn, butter, and mozzarella cheese to a simmer in a saucepan over medium heat.
