HAM AND NOODLE CASSEROLE
This is one of my favorite ways to use leftover ham.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

- Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook pork and onions over medium heat until meat is no longer pink. Drain noodles. Stir noodles, corn, soup, salt and pepper into the pork mixture., Transfer to a greased 3-qt. baking dish. Cover and bake 30 minutes. Uncover; bake 15 minutes longer. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- Bring a large pot of lightly salted water to a boil. Add noodles, cook for 6 to 8 minutes, until al dente, and drain.

- Cook noodles according to instructions on the packaging. Drain and rinse with cold water. Set aside.
- Preheat oven to 375 degrees F.
- In a medium saucepan, melt butter over medium heat.
- Add garlic and stir. Saute for 3 minutes, or until very fragrant.
- Add seasoning and stir in. Saute for 1 minute.
- Mix cornstarch with half and half. Slowly, pour it over garlic, stirring constantly.
- Simmer until the sauce thickens. Add cheese and stir until melted. Set aside.
- Butter a 9"x7" casserole dish.
- Combine noodles, ham, corn and the sauce and spread the mixture in a prepared baking dish.
- Combine melted butter and Panko breadcrumbs. Sprinkle over the noodle casserole.
- Bake casserole in preheated oven for 20 to 25 minutes or until it bubbles on the edges and the topping is toasty and golden.
- Remove from oven and cool before serving.

- Preheat oven to 350°F / 177°C.
- Rub a 2 quart baking dish with oil or spray with nonstick cooking spray.
- In a large mixing bowl, whisk together flour, cornmeal, sugar, baking powder, salt, and black pepper.
- In another large mixing bowl, whisk together melted butter, sour cream, ricotta, milk, creamed corn, and sweet corn.
- Combine the dry and wet ingredients, stirring well to be sure that no dry spots remain.
- Pour mixture into prepared baking dish.
- Transfer dish to the oven and bake, uncovered, until golden around the edges and nearly set in the middle (it will still have a bit of a wobble to it in the middle that will set as it rests), 45 to 50 minutes. If you'd like to top it with cheese, scatter it over top in the last 5 minutes of baking.
- Allow to cool slightly before serving. (This is also great served at room temperature.)

- Heat oven to 375°F and lightly grease a 9x13 inch casserole dish.
- Cook beef with dried onion, garlic powder, salt and pepper in large, deep skillet over medium heat until browned; breaking it up as it cooks. Drain.
- Return skillet to medium-high heat. Stir in 3.5 cups beef broth, scraping any browned bits off the bottom of the pan. Add egg noodles and corn. Bring to a boil once, then reduce heat to a simmer and cook for 5-8 minutes, stirring from time to time, until noodles are just cooked (add up to 1/2 cup more broth if noodles seem too dry). Take off the heat once noodles are done (do not overcook!) and most of the broth is gone.
- Stir through both cans of soup, sour cream and 1 cup shredded cheese. Transfer to prepared casserole dish and top with remaining cheese.
- Bake casserole for 20-30 minutes, until bubbly and cheese has melted. Let cool on the counter for 5-10 minutes, then serve immediately.
ULTIMATE CHICKEN CASSEROLE

- Preheat the oven to 350*. Generously spray a 9x13 baking dish with nonstick cooking spray. Set it aside.
- Using a large mixing bowl, whisk together the cream of chicken soup and the half-and-half until smooth.
- Add in the shredded chicken, egg noodles, corn, shredded cheese, onion, bacon, kosher salt, and cracked pepper. Stir until well combined.
