Irish Colcannon (Creamy Potatoes and Cabbage) image

This dish is a favorite to be served on All Saints Day in Ireland. It is also said that it was a favorite of Jonathan Swift.

1 lb cabbage or 1 lb kale
1 lb potato, peeled and diced (about 4 potatoes)
2 small onions or 6 green onions with tops, chopped
1/2 cup cream or 1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon mace

Steps:

  • Strip outer leaves from cabbage.
  • Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
  • Reduce heat and simmer until crisp-tender, about 5-10 minutes.
  • Drain well.
  • (opt.) Liquefy in blender.
  • Boil potatoes in a separate kettle, covered with water, until tender.
  • In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
  • Mash potatoes then season with salt, pepper and mace.
  • Mix in the onions and milk.
  • Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
  • Pour into a deep warmed dish.
  • Dab with butter or margarine.
  • NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
  • OPTION: Substitute ground nutmeg for mace.

1kg potato, well scrubbed (cut any large ones in half)
100g butter
140g sliced back bacon, finely chopped
1 small Savoy cabbage, finely shredded
150ml double cream

Steps:

  • Tip the potatoes into a large saucepan of water. Bring to the boil, then simmer for 15-20 mins, or until the flesh is tender when pierced.
  • Meanwhile, heat quarter of the butter in a saucepan, then fry the bacon and half the cabbage for 5 mins (see Kevin's tip, below, for how to use remaining cabbage). Turn off the heat and set aside. Drain potatoes in a colander and peel while still hot.
  • Mash potato until smooth. Heat cream with remaining butter and, when almost boiling, beat into the potato. Add bacon and cabbage to potato and mix. Season if you want.

1 pound potatoes
4 cups shredded cabbage
1 large onion, chopped
½ cup skim milk
1 tablespoon butter
1 (3 ounce) package cream cheese
1 pinch salt and ground black pepper

Steps:

  • Place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and reserve the cooking liquid. Allow potatoes to cool until they can be handled.
  • Boil cabbage and onion with the reserved potato water in a pot until softened, about 5 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart casserole dish.
  • Peel and cut potatoes into chunks; place in a large bowl.
  • Mash skim milk and butter into potatoes until mixture is smooth.
  • Stir drained cabbage and onion into potato mixture.
  • Fold cream cheese, salt, and black pepper into potato mixture, stirring until the cream cheese melts.
  • Pour potato mixture into prepared casserole dish.
  • Bake in preheated oven until browned, 30 to 35 minutes.

Colcannon Recipe - Delicious, light and fluffy mashed potatoes with spring onions (scallions), cabbage, cream, plenty of butter and seasoning. Topped with chives, this Irish potato recipe is the ultimate comfort food side dish.

1 kg Potatoes (Peeled and cut into large chunks)
4 Cloves Garlic (Peeled and chopped (or use frozen preprepared as I do))
200 g Butter
300 g Cabbage (Finely sliced, I like Savoy but you can use whichever you prefer)
100 g Spring onions (Finely chopped, including the green parts)
100 ml Single cream
20 g Fresh chives (Chopped finely)
Plenty of sea salt flakes and freshly ground black pepper
A pat of butter and a sprinkling of fresh chives

Steps:

  • Boil the potatoes with the garlic for 15 - 20 minutes until cooked through.
  • While the potatoes are cooking, melt 100g of the butter in a small frying pan and saute the cabbage and spring onions for 3 - 4 minutes until softened.
  • Drain the potatoes and mash (leave the garlic in).
  • Add the cabbage and spring onions (including the butter they were cooked in) to the potatoes.
  • Meanwhile warm the remaining butter and cream until the butter is melted (I do this in the pan I fried the cabbage in). Add to the potato and cabbage mixture.
  • Add the chives and plenty of salt and pepper and stir until throughly combined. Serve immediately with extra butter and chives to garnish.

½ cup half-and-half cream

  • Place the potatoes, cabbage, and green onions into a large sauce pan, fill with water, and bring to a boil. Reduce heat, cover, and simmer until the potatoes are tender, about 20 minutes.

A traditional Scottish dish made with mashed potatoes and cabbage. I've seen other recipes for this which call for parsnips and carrots. This particular one does not. Great comfort food.

2 lbs potatoes
1 savoy cabbage, shredded
4 ounces butter
1 bunch spring onion, chopped (*see note below)
7 ounces milk
salt and pepper
nutmeg

Steps:

  • Boil the potatoes in their skins until tender. Drain and leave until cool enough to handle.
  • Put the cabbage in a large pot and pour about 4 cups of boiling water over it. Cover and bring back to a boil and let steam about 10 minutes. Using tongs, pull the cabbage from the bottom to the top every few minutes for even cooking. Remove from heat and leave to sit.
  • Peel the potatoes and finely mash.
  • *NOTE: Spring onions are also known as scallions. You may also use one or two small onions, minced if you prefer.
  • Melt butter and add onion and cook until just tender. Add milk and heat through. Beat into potatoes. Season with salt and pepper.
  • Drain the cabbage thoroughly. Add potatoes and mix together.
  • Tip the mixture into a serving dish and sprinkle with a bit of nutmeg.
  • Enjoy!

  • Warm the butter and milk in a small pan on the stove. Don't allow it to boil! Just warm it enough to melt the butter and warm the milk.
