- In a large bowl, mix instant pudding mix with crushed pineapple; mix well.
- Add coconut, nuts and marshmallows; mix to combine.
- Add Cool Whip; mix.
- Refrigerate for 2 or more hours, before serving.
- This mixture can be served in individual serving dishes or in a Graham pie shell.

CREAMY COCONUT SALAD
I modified a Watergate Salad recipe to better suit my tastes and came up with this. I think it is super creamy and so so good! I just love this stuff and it's something a little different and super easy to make too!

Steps:
- Mix marshmallows, dry pudding mix & pineapple in a large bowl until well blended.
- Add whipped topping; stir gently until well blended. Cover.
- Refrigerate 1 hour or until ready to serve.
- (Note: Cook time is chill time!).

- If you are using coconut milk open the can and carefully drain off 1/4 cup of the clear liquid. Put the remaining coconut milk in a small bowl with the sugar, poppy seeds, and lime juice. Blend well with an immersion blender. You can also use a whisk, but I like the texture you get from blending. Take a taste. You may want to add more lime, or adjust the sweetener.
