1-1/2 cups heavy whipping cream
4 large eggs, lightly beaten

1/2 teaspoon salt
FILLING:
1 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
ICING:
1/4 cup butter
2 ounces unsweetened chocolate
1/2 cup heavy whipping cream
1 teaspoon vanilla extract
3 cups confectioners' sugar, sifted

Steps:

  • In heavy saucepan or microwave, melt butter and chocolate; stir until smooth. Cool. , In a chilled large bowl, beat cream until soft peaks form. Add the eggs, vanilla and cooled chocolate mixture; beat on low speed just until combine. Combine the flour, sugar, baking powder and salt. With mixer on low speed, add dry ingredients to creamed mixture until just combined. , Pour into three greased and floured 8- or 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For filling, beat cream in a chilled small bowl until soft peaks form; set aside. In a large bowl, beat cream cheese until smooth. Beat in confectioners' sugar and vanilla. Add whipped cream, beat until smooth. , Split each cake into two horizontal layers. Place one layer on a serving plate; top with about 1/2 cup filling. Repeat four times. Top with remaining cake layer. Cover and refrigerate., For frosting, melt butter and chocolate in a heavy saucepan or microwave; stir until smooth. Cool to room temperature; transfer to a large bowl. Add cream and vanilla; mix well. Beat in confectioners' sugar. Spread over top and sides of cake. Garnish with strawberries if desired. Store in the refrigerator.

1 1/2 cups flour or 1 1/2 cups vanilla wafer crumbs
3/4 cup butter or 3/4 cup margarine, melted
1 (8 ounce) package cream cheese
1 cup Cool Whip, softened
1 cup powdered sugar
2 1/2 cups milk
2 (3 1/2 ounce) packages instant chocolate pudding mix
1/2 tablespoon powdered instant coffee (heaping)
2 cups Cool Whip (remainder of 8 oz pkg)
sliced almonds or hazelnuts, to garnish
grated chocolate, to garnish

Steps:

  • Preheat oven to 350°F and grease a 9x13x2-inch pan.
  • In small bowl, mix crust ingredients, and press into pan.
  • Bake until lightly browned (15 minutes).
  • Cool completely.
  • Beat ingredients for 1st layer until creamy, and spread over cooled crust.
  • Combine ingredients for 2nd layer and mix thoroughly.
  • Spread over cream cheese layer.
  • Cover with remaining cool whip.
  • Sprinkle with almonds and chocolate to garnish, and refrigerate until ready to serve.
  • To serve, cut torte into bars.

1 1/2 sticks (6 oz) butter
5 ounces unsweetened chocolate
4 1/2 cups granulated sugar
2 1/4 cups evaporated milk
2 teaspoons vanilla extract
1 tablespoon instant coffee granules (preferably French roast)
2 sticks (8 oz) butter (at room temperature, plus more for the pans)
2 1/2 cups granulated sugar
6 large eggs (at room temperature)
1 teaspoon vanilla extract
2 cups plus 1 tablespoon milk
4 cups self-rising flour (plus more for the pans)

Steps:

  • [Editor's Note: Be sure to make the glaze before you bake the cakes.] In a large saucepan over medium-low heat, melt the butter. Add the chocolate and stir until melted.
  • Add the sugar and stir until it dissolves. Then stir in the evaporated milk, vanilla, and the instant coffee, increase the heat to medium-high, and bring it to a boil.
  • Continue cooking, stirring constantly, until the mixture thickens to a glaze, about 20 minutes.
  • Remove the glaze from the heat.
  • Preheat the oven to 350°F (176°C). Butter and flour at least four 9-inch cake pans.
  • In the bowl of a stand mixer or in a large bowl with an electric mixer, beat the butter and sugar until smooth. Add the eggs, 1 at a time, beating just until blended after each addition.
  • In a small bowl, mix the vanilla with the milk. Add the flour to the egg mixture alternately with the milk mixture, beginning and ending with the flour.
  • Pour a very thin layer of batter-about 7 tablespoons-into each pan, shaking the pans to distribute the batter to the edges. Bake the layers for 11 to 13 minutes.
  • While the first cake layers bake, return the glaze to low heat as the glaze must be warm to spread on the cake layers.
  • When the cake layers are done, immediately remove the layers from the pans and, working one at a time, place the layers on a cake stand and immediately slather with some of the warm glaze.
  • Bake all of the remaining batter in this manner and continue to stack and glaze in this fashion. You should be able to get 12 layers from this recipe. Reserve the last of the glaze to dribble over the top of the cake.

  • Grease and flour two 9-in. round baking pans; set aside. Preheat oven to 350°. In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in vanilla and chocolate. , In a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in the remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold into batter., Pour into prepared pans. Bake or 30-35 minutes or until a toothpick inserted in the center comes out clean. 2 tablespoons hot water
6 tablespoons Kahlúa or other coffee-flavored liqueur
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups well-chilled heavy cream
3/4 cup milk
two 12-ounce boxes vanilla wafers
Garnish: chocolate shavings

Steps:

  • Chop chocolate and in a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove top of double boiler or bowl from heat and let chocolate cool to room temperature, stirring occasionally, about 15 minutes. In a bowl with an electric mixer beat together butter and confectioners' sugar until combined well and beat in chocolate, water, 2 tablespoons liqueur, vanilla, and salt. In another bowl beat 1 cup cream until it just holds stiff peaks and fold into chocolate mixture gently but thoroughly.
  • In a small bowl stir together milk and remaining 4 tablespoons liqueur. Working with 1 vanilla wafer at a time, dip wafers into milk mixture twice and arrange enough in a 10-inch springform pan, touching each other, to cover bottom of pan in one tight layer. (Do not worry about spaces between wafers.) Cover wafers in pan with one third chocolate mousse, spreading evenly.
  • Make another layer of dipped vanilla wafers on top of mousse in pan in same manner and cover with half of remaining mousse, spreading evenly. Make a third layer of dipped vanilla wafers and cover with remaining mousse. Cover chocolate with a final layer of dipped vanilla wafers. (There will be about 1/2 box cookies left over.) Chill torte, covered, at least 6 hours and up to 3 days or freeze torte, well-wrapped, up to 3 months.
  • Run a thin knife around edge of torte and remove side of pan. Smooth side of torte with a knife dipped in hot water. In a bowl beat remaining cup cream until it just holds stiff peaks and spread over top of torte.
  • Garnish torte with chocolate shavings and serve chilled or at cool room temperature.

  • Make fillings:
  • Stir chocolate, butter and 1 teaspoon coffee powder in heavy medium saucepan over medium-low heat until melted and smooth. Transfer to large bowl. Set chocolate mixture aside while preparing meringue.
  • Stir 1/2 cup sugar and 3 tablespoons water in small saucepan over low heat until sugar dissolves. Increase heat and boil syrup without stirring until candy thermometer registers 240°F, tilting pan to submerge bulb, about 4 minutes.
  • Meanwhile, using electric mixer, beat whites in large bowl to soft peaks.
  • Gradually beat hot syrup into whites. Continue beating until medium-stiff peaks form, about 3 minutes. Fold 1/3 of meringue into lukewarm chocolate mixture to lighten. Fold in remaining meringue. Set chocolate meringue aside.
  • Combine 1/4 cup cream and 5 teaspoons coffee powder in large bowl; stir to dissolve. Add 2 1/2 cups cream, powdered sugar and cinnamon and beat until firm peaks form. Fold 1 1/2 cups coffee whipped cream into chocolate meringue, forming mocha mousse.
  • Spoon half of mocha mousse over bottom of crust. Sprinkle 3 tablespoons reserved crumb mixture over mousse. Spoon half of coffee whipped cream over crumbs. Sprinkle with 3 tablespoons crumbs. Repeat layering with remaining mocha mousse, crumbs, coffee whipped cream and crumbs. Cover and refrigerate until set, about 4 hours. (Can be made 2 days ahead; keep refrigerated.)
