Today's recipe is copycat of Cheesecake Factory's Spicy Chicken Chipotle Cream Sauce Pasta. I simply love their Chipotle Pasta... The hint of spice, creamy sauce, crunchy veggies, and succulent chicken.... oh, and crispy tortilla chips!!! yumm! There is nothing in this dish which I don't like. You know the best part? You can skip chicken and it still is flavorful Italian vegetarian dinner or lunch. With just 15 minutes of cooking time, Chipotle Sauce can be blended in advance and used multiple times for quick weekday dinner! Sounds even better! Isn't it? And it costs just fraction of what you will pay for dinner of four!Original recipe calls for Honey Glazed Chicken. I shared a healthier version of Honey Glazed Chicken a few days ago. If you want to try that with Chipotle Pasta, follow the recipe link in notes.I'm sure you know by now that I LOVE pasta! In India, few years back, there were not many restaurants offering pasta in menu. So obviously I have not grown up on it.Close to my office in India, there was a Pasta House by name 'Noodle Company'. Once my colleagues took me for lunch there and I ordered Fettuccine Alfredo. Oh boy, did I enjoy it? loved it.. adored it... dreamed about it for days! Perfect sign of a foodie! Isn't it? Though I was not THAT foodie kind those days.... Or should I say, I thought I wasn't. :-)So, I visited that restaurant a couple of times and every time felt like 'kid in a candy store'......... Never ever bothered to even think about the recipes. Just enjoyed eating good pasta varities. It's funny, my hometown was 3 hours drive from my office. One weekend, when I was visiting my parents, I even packed a few pastas to-go. I'm sure you can imagine, what they become by the time I reached home -pasta pancakes!!! And I felt chef not made them good. lol!!These days, story is totally different. Everything I eat out, I wanna make at home!! Often I'm not enjoying food rather thinking about recipe and ingredients. Can you relate?Not sure which days were better... though I enjoyed both! :-)We both love eating at Cheesecake Factory once-in-a-while. They happen to make a lot of my favorite foods and I wanna try cooking all of them at home. This Chicken Chipotle Cream Sauce Pasta... I can eat by buckets! and Sauce!! I can drink with straw! Specially the copycat version I made at home is utterly delicious! Lacking words to describe the flavor! I guess my chipotle-love making me speechless.This Creamy Chipotle Sauce Pasta has ton of flavor on it's own. That's why I decided to share this recipe without instructions to make chicken. You can use simply use rotisserie chicken, or sauteed mushrooms (vegetarian option) instead. Or if you wanna make exact copycat of Cheesecake Factory's 'Spicy Chicken Chipotle Pasta' then cook chicken following recipe here. (go for glazed version)My version of Chipotle Pasta differs slightly from cheesecake factory's original. Here is what I did differently:1. I have used broccolini instead of asparagus and zucchini instead of red bell peppers. (feel free to bring your own veggies.)2. Used no-oil healthy Baked Honey-Lemon chicken instead of spiced honey-glazed chicken. Get the recipe. here.3. Cheesecake Factory uses chipotle chili powder and no citrus in the sauce. I, however, have used Chipotle Adobo for pronounced chipotle flavor and lime juice to balance the richness of creamy sauce. You can skip both of these. Yet, I recommend trying it once! Chances are you will forget Cheesecake Factory's Chipotle Pasta. ;-)That's it! I believe, the 'heart' of this dish is in creamy Pasta Cream Sauce and I'm telling you that it will not disappoint you! Number Of Ingredients 16

2 Chipotle in Adobo, 2 whole peppers and plus 1 tbsp sauce
1/4 tsp Kosher Salt
2 tbsp Olive Oil
1 tbsp Tomato Paste
Black Pepper, to taste
2 tbsp Lime, juice, half of one juicy lime
3 Garlic, cloves
1 lbs Pasta, Penne or Fusilli
1 lbs Chicken, Rotisserie or Honey Glazed Chicken, check recipe in link
1 Zucchini, sliced into half moons
1/2 Cup Green Peas, frozen
1 Head Broccolini, broken into florets, or use broccoli
1/4 Cup Parmesan Cheese, or more per liking
1/3 Cup Heavy Cream, mixed with 1/4 cup pasta water
2 Tortillas, corn, sliced into strips
Canola Oil, for frying

Steps:

  • Combine all Chipotle Sauce ingredients in blender, puree to a smooth paste, transfer to a bowl, and refrigerate if not using immediately. (yields about 1/2 cup sauce)
  • Bring a large pot of water to rolling boil. Season with salt. Add half-moon sliced zucchini, and broccolini. Boil for 1 minute or until just crisp tender. Remove to a plate. In same boiling water, add pasta and cook until al-dente or follow the package directions. Once cooked, drain the pasta (reserve pasta liquid) and set aside both.
  • If serving tortillas chips. Heat oil for frying in a shallow frying pan. (you don't need a lot of oil. Just fill a small pan 1/2 inch). Slice corn tortilla into thin strips. When oil is hot, add strips and fry until light golden. Remove on a plate lined with paper towel. Season with salt. Set aside.
  • Heat a pan on medium heat. Add chipotle pasta sauce and let it sizzle for 15 seconds. Now add cream and 1/4 cup pasta water and let it cook for 30 sec more or until warms through.
  • Mix well and switch off the heat.
  • Add in pasta, boiled veggies, frozen peas, and toss to combine.
  • Transfer to serving plates. Top with sliced chicken and tortilla strips. Garnish with grated parmesan and chopped parsley. Serve and enjoy!

2 boneless skinless chicken breast (cut into 1" chunks)
1 pound penne pasta
2 tablespoons lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
2 tablespoons butter
2 tablespoons olive oil
1/4 cup honey
2 tablespoons chipotle pepper sauce from canned adobo peppers
1 yellow bell pepper (chopped)
1 red bell pepper (chopped)
1/2 yellow onion (chopped)
3 cloves garlic (minced)
2 cups heavy cream
1 cup frozen peas
1 pound fresh asparagus (the thinner the better)
6 ounces shredded parmesan cheese
cilantro and tortilla chip strips for garnish (optional)

Steps:

  • Set your water to boil for your pasta.
  • Add the asparagus to the pasta water and boil for 2-3 minutes or until tender crisp.
  • Shock it with cold water through a colander.
  • Add the pasta to a minute shy of the directions and drain into the same bowl as the asparagus but don't rinse.
  • In a bowl with your chicken add the lemon juice, salt and pepper and let sit as you cook the rest of the dish.
  • In a large skillet add the butter and melt over medium heat.
  • Add the bell peppers and onions and cook until just translucent.
  • Add in the garlic and cook an extra minute.
  • Remove the vegetables and add in the olive oil.
  • Add the chicken to the pan and turn the heat up to medum-high.
  • Brown the chicken on both sides.
  • Add in the honey and stir, cooking an additional 5 seconds.
  • Add the bell pepper mixture back to the pan
  • Stir well, then add in the adobo sauce, heavy cream and Parmesan cheese.
  • Cook for 3-4 minutes then add in the pasta, asparagus and frozen green peas.
  • Stir to coat everything and serve with any garnishes you'd like (Cheesecake Factory uses tortilla strip chips and cilantro).

8 ounces dry penne pasta
2 boneless, skinless chicken breasts, trimmed and pounded to 1.2" thickness
salt and pepper
3 tablespoons butter
2 small shallots, minced
6 canned chipotle peppers in adobo sauce, seeded and minced
2 cups half and half
1 tablespoon of the chipotle adobo sauce
For vegetables:
1 teaspoon vegetable oil
2 ears white corn
1 yellow pepper, sliced into 2" long slices
1 red pepper, sliced into 2" long slices
1/2 red onion, sliced into 1" long slices
1/4 cup cilantro, chopped plus some for garnish

Steps:

  • Cook pasta. Cook the penne pasta in salted boiling water until al dente', according to instructions. Drain and set aside.
  • Cook chicken. Heat grill pan or grill and cook chicken until opaque, about 3-4 minutes per side. Slice into 2" long slices and set aside.
  • Start sauce. Heat butter in a heavy saucepan over medium heat. Add shallot sand sauté until translucent. Add chipotle peppers, half and half and adobo sauce. Let simmer over medium heat, stirring every minute or two until sauce thickens.
  • While sauce is cooking, sauté' corn, red and yellow peppers and onions in vegetable oil in a separate pan over medium heat until tender, about 3 minutes. Set aside.
  • When cream sauce has thickened, add the vegetables and continue to stir. Add chicken and pasta and stir well to coat pasta. Remove from heat and stir in cilantro. Salt to taste and serve.

1 tablespoon vegetable oil
1 small onion, chopped
2 garlic cloves, peeled and minced
1 small bell pepper, cored, seeded, and sliced
1/2 teaspoon ground cumin
4 to 5 small fresh plum tomatoes or 10 cherry tomatoes, stem ends and seeds removed and sliced
2 to 3 canned chipotle peppers
1 teaspoon adobo sauce
1 pound peeled large shrimp
2 teaspoons fresh lemon juice
1 1/2 cups half-and-half, light cream, or evaporated milk
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
1/3 cup grated Parmesan cheese, optional

Steps:

  • Boil the pasta in a large sauce pan until al dente, according to the package instructions. Drain and set aside. Heat the oil in a Dutch oven or large frying pan on medium heat and, stirring occasionally, sauté the onions for 2 minutes or until wilted. Stir in the garlic, bell peppers, tomatoes, and cumin. Sauté for an additional 2 minutes. Reduce the heat to medium-low and stir in the chipotles, shrimps, lemon juice, and half-and-half (or cream or evaporated milk). Simmer until the shrimps are just cooked through, approximately 3 to 5 minutes, depending on the size of shrimps used. Stir in the cilantro. Taste and correct the seasoning by adding salt, pepper, and, if needed, additional chipotle to suit your taste. Return the pasta to the sauce pan in which it was cooked, sprinkle with the grated cheese (if used), and pour the shrimp sauce over it. Toss until well blended and transfer to a serving dish. Serves 4 as a main course.

8 ounces angel hair pasta ((reserve 1/4 cup pasta water))
1-2 teaspoons olive oil
1 medium yellow onion (sliced into thin strips)
1 large garlic clove (minced)
1 red bell pepper (sliced into 1" matchsticks)
6-8 ounces button or baby bella mushrooms (quartered)
Optional: 1 cup chopped kale leaves or baby spinach
1 teaspoon kosher salt (divided)
1/2 teaspoon freshly ground black pepper (divided)
1/4 cup heavy cream
1 chipotle pepper in adobo sauce (finely minced)
1/2 teaspoon dried oregano
1/4 cup pasta cooking water (reserved for use as needed)

Steps:

  • Place a pot of water on the stove and bring it to a boil. Add about a tablespoon of salt to the water and then cook the pasta until it is tender. Scoop out a bit of the cooking water and set it aside prior to draining the pasta.
  • While the pasta is cooking, heat the oil in a large skillet over medium-high heat. Add the onions and saute for about 4-5 minutes, until they are lightly browned. Add the garlic and saute until fragrant, about 30 seconds.
  • Add the bell peppers and mushrooms and stir to combine. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon of pepper. Saute for 2-3 minutes until they are hot and slightly tender, but still a bit crisp.
  • While the vegetables are finishing, whisk together the cream, the chipotle pepper, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the oregano. Add the cream mixture to the hot skillet and stir to coat the vegetables.
  • Let it cook for about a minute and then add the pasta to the skillet with all of the vegetables. Toss to combine and then continue tossing and stirring the skillet while allowing the sauce to finish thickening for about a minute until it is coating the pasta and vegetables.
  • Add a splash or two of the pasta water to the skillet, if the pasta seems dry. (If you forgot to reserve the pasta water, use a splash of cream.) Serve immediately. Enjoy!

1 medium onion, diced

1 tablespoon of dried fennel seed (optional)
2 teaspoons of dried Italian seasoning OR oregano
1/2 teaspoon of black pepper

1/4 teaspoon of crushed red pepper flakes
1 (15 oz) can of fire-roasted diced tomatoes
3 cups of low-sodium broth (beef, chicken, or vegetable)
8 ounces of dried spaghetti, broken in half
3/4 cup of full-fat canned coconut milk OR heavy cream
1 tablespoon of lemon juice OR vinegar (like white wine vinegar or balsamic vinegar)
1/2 cup of grated or shredded cheese (like Parmesan, mozzarella or an Italian blend - optional)

Steps:

  • Place a medium-sized Dutch oven, stockpot, or saute pan (with tall, straight sides) over medium-high heat and measure in the cooking oil.
  • Let the oil warm a minute, then add the onion & bell pepper. Cook 3-5 minutes, stirring occasionally. Reduce heat to medium and stir in the garlic. Cook for about 1 minute, then add the ground sausage. Cook 3-5 minutes, while breaking the meat into small chunks with a spatula.
  • Add the dried spices, diced tomatoes, broth, and spaghetti (broken in half). Stir everything and push the spaghetti down until it's submerged in the broth. If needed, add more broth or water 1/4 cup at a time until the spaghetti is just barely covered by the liquid.
  • Cover with a lid and bring the mixture to a simmer (this should take about 2-3 minutes). Stir the pasta to make sure it's not sticking to the bottom, replace the lid, then reduce heat to medium-low and cook for 10 minutes.
  • Stir in the canned coconut milk or heavy whipping cream, replace the lid again, and cook for another 5 minutes, or until the noodles are tender to your liking.
  • Remove from heat, uncover, and add the lemon juice (or vinegar) + grated cheese. Stir well, taste and (if needed) add more salt or lemon juice. Let the spaghetti sit for 5-ish minutes so the sauce can thicken up. Ladle into bowls and (optional) top with extra cheese, cracked black pepper & olive oil.

1 TBS Olive Oil
1 small Yellow Onion (- finely chopped (about 1 ¾ cup))
1 small Red Bell Pepper (- finely chopped (about 1 cup))
1 pound Ground Italian Sausage (- sweet, mild or hot (SEE NOTES))
2 cloves Garlic (- minced)
1 ¼ tsp Italian Seasoning
1 TBS All-Purpose Flour
1/3 cup EACH: White Wine & Low-Sodium Chicken Broth ((or 2/3 cup of broth only))
2 Cups Heavy Cream
½ Cup Freshly Grated Parmesan Cheese (- plus more for garnish)
Kosher Salt & Ground Black Pepper (- to taste)

Steps:

  • Cook pasta: In a large pot of boiling salted water, cook pasta according to al dente package instructions. Drain well and set aside.
  • While pasta cooks, sauté vegetables: In a large, deep skillet heat 1 tablespoon of oil over medium heat. When oil shimmers, add the onion and bell pepper. Cook, stirring occasionally until vegetables are almost softened, about 3-4 minutes.
  • Add sausage and season: Increase heat to medium-high. Add the sausage to the pan along with the Italian seasoning. Season with ½ teaspoon salt and ¼ teaspoon pepper. Cook, breaking the sausage up into large crumbles as you go, for about 4-6 minutes, or until sausage is almost browned. Reduce heat to medium and add the garlic. Cook until fragrant, about 1 minute.
  • Add flour and deglaze: Sprinkle the flour over sausage and stir well. Cook 1-2 minute to remove raw flour taste. Add the wine (or 1/3 cup broth) to deglaze the pan. Stir well, using a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Cook for 1-2 minutes, or until the liquid is almost completely absorbed.
  • Add liquids and simmer: Stir in the broth and then add the heavy cream. Bring to a gentle simmer, stirring occasionally, then immediately reduce the heat to maintain a gentle simmer. Simmer for 10-12 minutes, or until the sauce is reduced and slightly thickened.
  • Add pasta: Stir in the cooked pasta. Cook until heated through, about 1 minute.
  • Add parmesan: Turn off the heat and gradually stir in parmesan cheese, one handful at a time. Stir until cheese is fully melted and incorporated.

1 ounce olive oil
1 hot link, cut in 6 bias slices
5 (21/25 shrimp), deveined, shelled and butterflied
4 ounces heavy cream
3 ounces Chipotle Sauce, recipe follows
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
9 ounces cooked penne pasta
2 ounces Parmesan, grated
1 tablespoon diced tomato
1 tablespoon diced scallion
1 cup BBQ sauce
1/2 cup canola oil
1/4 cup lemon juice
1/2 ounce Dijon mustard
2 ounces chipotle paste
1/2-ounce red chili flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper

Steps:

  • In saute pan over high heat, add olive oil and hot links. Sear links until browned. Add the shrimp and cook until pink. Lower heat to medium. Then add cream, chipotle sauce, salt and pepper. Add cooked pasta and the cheese. Toss to combine.
  • Serve in pasta bowl and garnish with diced tomato, scallions, and more grated Parmesan.
  • Combine all ingredients in blender, puree, cover and refrigerate.
