CREAMY CHICKEN SOUP

Creamy chicken soup image

There's something restorative and satisfying about a homemade chicken soup

Provided by Sara Buenfeld

Categories     Lunch, Soup

Time 1h10m

Number Of Ingredients 10

1kg pack free-range chicken thigh, skin removed
300ml dry white wine
2 large onions, cut into large wedges
4 celery sticks, quartered
3 leeks, quartered
2 sprigs thyme, plus extra leaves for sprinkling
2 bay leaves
½ tsp ground white pepper (optional)
40g plain flour
300ml pot double cream

Steps:

  • Put the chicken thighs in a very large, heavy-based pan and fry for a few mins, turning frequently to lightly colour them. Providing the heat is low, there is no need to add any oil. Pour in the wine, turn up the heat and boil rapidly to evaporate the alcohol. Pile in the veg and herbs, add 1 tsp salt and the white pepper (or you can use black pepper). Pour in 2 litres boiling water. Cover the pan and simmer for 45 mins until the chicken and veg are tender. Take out the bay leaves and thyme sprigs and cool for about 30 mins.
  • Remove chicken from the soup, then strip the meat from the bones. Put all but 140g of the chicken back into the pan. Blitz the soup with a hand blender or in batches in a food processor until very smooth, then return to the pan.
  • Blend the flour and cream together with a couple of ladles of the soup, then stir the creamy mixture into the rest of the soup and heat, stirring continuously until thickened. You can blitz again if it looks a little lumpy. Chop the remaining chicken and stir into the soup. Scatter with thyme leaves, to serve.

Time 1h

Number Of Ingredients 18

1 teaspoon olive oil
1 1/2 cups peeled diced carrots (about 3-4 medium carrots)
3/4 cup diced celery (about 3 stalks)
1/2 cup diced onion (about 1 small onion)
4 cups chicken broth (I use low sodium)
2 cubes chicken bouillon or 1 tablespoon chicken bouillon paste or granules (optional (see note))
3 bay leaves
1 tablespoon dried parsley
1 1/2 teaspoons herbs de provence (see note)
1 teaspoon turmeric
1/2 teaspoon garlic powder or 2-3 cloves garlic (finely minced)
1/2 teaspoon coarsely ground black pepper
3 1/2 cups milk or half-and-half or a combo (see note)
3-4 cups cooked chopped chicken
Shredded parmesan, asiago or gruyere cheese, for topping (optional)
6 tablespoons all-purpose flour
3 tablespoons olive oil
3 tablespoons butter

Steps:

  • For the soup, in a 4-quart or larger saucepan, heat the olive oil over medium heat. Add the carrots, celery and onion. Pour in the broth and add the chicken bouillon, bay leaves, parsley, herbs de provence, turmeric, garlic powder, and pepper. Stir to combine.
  • Bring the mixture to a simmer and cook, uncovered or partially covered, for 12-15 minutes until the vegetables are tender.
  • For the roux, while the soup simmers, in a small saucepan, add the olive oil and butter and cook on medium heat until the butter is melted. Add the flour and whisk to combine until a smooth paste forms. Remove from the heat.
  • Add the milk (and/or half-and-half) to the soup and heat through. Add the roux to the soup and cook, stirring or whisking constantly, over medium heat until the soup thickens and gently simmers, 5-7 minutes.
  • Stir in the chicken, season to taste with salt and pepper (this is important for flavor!) and heat through.
  • Remove the bay leaves and serve with a sprinkle of Parmesan, asiago or gruyere on top.

CREAMY CHICKEN SOUP

Creamy Chicken Soup image

Creamy Chicken Soup. Tender chicken, aromatic vegetables and herbs, cream, a splash of wine topped with a touch of nutty Gruyere. The ultimate comfort food.

Provided by Susie Gall

Categories     Soup

Time 1h

Number Of Ingredients 26

For the Roux:
2 tablespoons oil
2 tablespoons unsalted butter
4 tablespoons all-purpose flour
1- cup reduced-salt chicken stock
For the Soup:
2 tablespoons unsalted butter
2 tablespoons oil
4-6 carrots (peeled and cut into 1/8" slices)
2 celery stalks (cut into 1/8" slices)
1 medium yellow onion (diced)
1 garlic clove (minced)
3 cups reduced-salt chicken broth
¼ cup dry or semi-dry white wine; a good drinking wine
3½ cups milk (cream or half and half (or a mixture of cream and skim milk))
2 tablespoons chicken base granules or chicken cubes
½ teaspoon freshly cracked black pepper
1 tablespoon dried parsley or 2 tablespoons minced fresh parsley
3 dried bay leaves
1½ teaspoon Herbs de Provence
1/2 teaspoon turmeric (optional)
½ teaspoon paprika (optional)
¼ teaspoon red pepper flakes (optional)
4-5 cups cooked chicken (cubed or shredded - rotisserie chicken works well, but do NOT use smoked chicken.)
Garnish: Shredded Gruyere cheese
Chopped fresh parsley

Steps:

  • For the Roux:
  • Heat 2 tablespoons oil and 2 tablespoons butter in a medium saucepan then sprinkle the flour on top. Whisk quickly until well combined. Cook, whisking occasionally, until the roux turns light golden brown. Slowly, while whisking, add 1-cup chicken broth to the roux and whisk vigorously until smooth. Remove the roux from the heat and set it aside while combining other ingredients.
  • For the Soup:
  • In a large Dutch oven, heat 2 tablespoons butter and 2 tablespoons oil over MED-HIGH heat. Add the carrots and celery, sauté 5 minutes; stir occasionally. Add the diced onions and cook 3 additional minutes or until the onions are translucent. Add the minced garlic and cook 30 seconds - just long enough for the garlic to bloom.
  • Slowly add 1 cup of broth while scraping the bottom of the pot to deglaze the pan. Add the rest of the broth and the wine, the roux and stir well. Bring the mixture to a boil and stir often..
  • Reduce the heat to LOW and add all other ingredients except the garnishes.
  • Simmer 15 minutes then taste and adjust seasonings, if necessary. This is the time to add salt or pepper, if desired. Continue to simmer the soup until it thickens, about 30-45 minutes more, or to the desired consistency.
  • Discard the bay leaves.
  • Garnish with sprinklings of shredded Gruyere and fresh parsley.
  • Serve with crusty bread. Mmm-Mmm GREAT!
  • Enjoy!!

  • In a large soup pot, combine 6 cups broth, 5 cups water and 1/2 Tbsp salt. Bring to a boil then add chicken thighs (no need to trim fat), and boil uncovered 20 min. Skim off impurities that rise to the top. While chicken is cooking, proceed with step 2.
  • Place a large pan over medium heat and add 2 Tbsp olive oil. Add chopped onion and sauté until softened (5 min), then increase heat to med/high and add grated carrots, chopped celery and sauté 5-7 min, stirring often until soft and golden then transfer to soup pot.
  • Remove chicken thighs from the pot and let rest until cool enough to handle, then use forks or hands to shred chicken, discarding any bones and fat (which should come off easily). Return shredded chicken to the pot (by the time it's cooled and shredded, this is usually after step 4).
  • Add 2 cups pasta, sliced carrots and corn to the soup pot and continue cooking 15 min at a low boil until pasta is at desired softness. You can skim off any excess oil from the top at this point if you want the soup to be a little lighter.

Transfer the cooked chicken bits in white wine to a separate cup.
