PEACH BASIL CHICKEN SALAD



Peach Basil Chicken Salad image

Peach and Basil make this Chicken Salad out of this world! The colors and flavors are so pretty and so delicious!

For the Dressing:
1 ripe peach, peeled and cut into quarters
2 Tablespoons lemon juice
1 Tablespoon extra virgin olive oil
1/2 Tablespoon fresh basil, chopped
2 1/2 Tablespoon vinegar (I used Tarragon)
1/2 teaspoon salt
1/2 teaspoon celery seed
2 t. sugar or to taste
1/8 teaspoon coarse ground pepper
1/3 cup mayonnaise
For the Salad:
2 ripe peaches peeled and cubed
2 large chicken breasts, cooked and shredded (2 cups)
3 ribs of celery, chopped
1/2 cup green onion, chopped
1/2 cup sweet red bell pepper, chopped

Steps:

  • Shred chicken, and combine with peaches, celery, onion and red pepper. Set aside.
  • In either a blender or using your hand blender, combine dressing ingredients,. blending until smooth. Pour over chicken mixture, stir to combine.
  • Cover and place in the refrigerator overnight.
  • Serve on rolls or a bed of lettuce.

Number Of Ingredients 6

2 large ripe peaches or nectarines
2 cups dried cooked chicken
1/2 cup thinly sliced red onion
1/3 to 1/2 cup (about) purchased poppy seed salad dressing
6 cups mixed baby lettuces
1/2 cup chopped walnuts, toasted

Steps:

  • Cut 1 peach into 1/3-inch pieces; place in large bowl. Add chicken and onion. Toss with enough dressing to coat. Cover and chill 15 minutes to 2 hours.
  • Add lettuces and walnuts to chicken mixture and toss to coat, adding more dressing, if desired. Mound salad on large plate. Cut remaining peach into thin wedges. Garnish salad with peach wedges and serve.

4 large peaches
3 cups cooked chicken, chopped
1/2 cup green onions or 1/2 cup chives
8 cups salad greens
1/2 cup walnuts, chopped
3/4 cup mayonnaise
1 tablespoon lime juice
2 teaspoons sugar
1 1/2 tablespoons gingerroot, grated

Steps:

  • Boil chicken breasts for 20 minute cool and cube.
  • peel peaches (if desired) and dice.
  • roughly chop walnuts.
  • thinly slice green onions.
  • combine chicken, peaches, onion and walnuts in large bowl.
  • combine dressing ingredients, mix well.
  • pour over chicken mixture and refrigerate until ready to serve.
  • To serve put salad greens into individual bowls and mound chicken/dressing mixture on top.
  • Or place serving bowls of both the chicken and salad greens and let people dish their own.
  • A fresh loaf of herb bread compliments this salad for a complete meal.
