1 cup all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 teaspoon sesame oil
½ cup water, or more if needed
vegetable oil for frying
5 tablespoons cornstarch
1 pinch ground white pepper
4 boneless skinless chicken breasts, cubed

Steps:

  • Mix flour, baking powder, and salt together in a bowl. Drizzle in sesame oil. Gradually add water, whisking constantly until smooth; batter should be the consistency of cream. Let sit for at least 30 minutes.
  • Fill a deep pan or wok with oil and slowly heat to 375 degrees F (190 degrees C).
  • Mix cornstarch and white pepper together in a large shallow dish. Dust chicken in the cornstarch mixture and dip into the batter, evenly coating each piece. Transfer to the hot oil in batches and fry until golden and no longer pink in the center, 4 to 5 minutes. Scoop fried chicken out with a slotted spoon. Drain on a clean kitchen towel. Repeat with remaining chicken.

¾ cup Bread Crumbs
1 Egg
2 tablespoons Cajun seasoning
3 Garlic Cloves (minced)
¼ cup grated Parmesan
1 ¼ pounds ground Chicken
3 tablespoons Olive Oil
Salt to taste
1 tablespoon Olive Oil
1 tablespoon Butter
2 Garlic Cloves (minced)
½ cup chopped Onions
2 tablespoons Flour
1 ½ cups low sodium Chicken Broth
1 tablespoon Cajun Seasoning
1/2 teaspoon Paprika
Salt and Pepper to taste
½ cup Heavy Cream

Steps:

  • In a bowl mix together all the ingredients for the meatballs except oil till just combined. Form them into approximately 18 meatballs.
  • Heat olive oil in a pan and add the meatballs to the pan. Do not overcrowd the pan and if its not large enough, cook the meatballs in batches. Brown the meatballs on all sides and remove them on a plate.
  • To start making the sauce, heat olive oil and butter in the same pan and add garlic and onions. Saute for 2-3 minutes and add the flour. Cook the flour for a minute or two to cook it so that it doesn't taste raw. Slowly add the chicken broth and keep whisking continuously till the sauce thickens.
  • Add the cajun seasoning, paprika, salt, pepper and the meatballs. Simmer the meatballs for 10 minutes till they are cooked through.
  • Mix in the heavy cream and turn off the flame. Serve hot.

1 - 1 1/4 lb ground chicken (I used ground chicken thighs)
1 cup cooked white rice (cooled to room temp or colder)
1 large egg
1 small onion (grated)
1 garlic clove (pressed)
1/2 tsp salt (I used sea salt)
1/4 tsp pepper
1/2 cup flour for dredging
2 Tbsp oil (I used extra LIGHT olive oil)
2 Tbsp unsalted butter
2 Tbsp flour
2 cups reduced sodium chicken broth
1/4 cup sour cream (or greek yogurt, or heavy cream)
1/2 to 1 tsp paprika (more if you like a little spice in your life)
Salt and Pepper to taste
Freshly chopped parsley for garnish

Steps:

  • In a large bowl, combine ground chicken, 1 cup cooked rice, 1 egg, grated onion, 1 pressed garlic clove, 1/2 tsp salt and 1/4 tsp pepper. Mix well.
  • Roll the meat into 1 to 1 1/4" balls, then roll the balls in flour, dusting off excess.
  • Heat a large skillet over medium heat and add 2 Tbsp oil. Transfer meatballs into the skillet and saute 4 minutes on the first side, then flip them over with tongs, cover and cook another 3 minutes or until golden brown on all sides and cooked through, then remove to a plate.
  • In the same pan over medium heat, melt 2 Tbsp butter then whisk in 2 Tbsp flour and continue mixing until golden in color. Whisk in 2 cups chicken broth and stir until it starts to thicken. Add 1/4 cup sour cream and season to taste. I added: 1/2 tsp paprika, 1/2 tsp sea salt 1/8 tsp black pepper.
  • Bring sauce to a simmer and stir until sauce thickens enough to lightly coat a meatball then stir in the meatballs, turning them to coat (keep in mind sauce will thicken more as it cools). Once the meatballs are warmed up, remove from heat and sprinkle with fresh parsley or dill. Serve warm.

  • Heat two tablespoons Olive Oil in a pan and add as many meatballs as will fit into the pan without overcrowding. You may have to do this in batches. On high heat, brown the meatballs on all sides and remove them on a plate.
  • Heat two tablespoons olive oil and a tablespoon of butter in the same pan. Add garlic and onions. Cook till the onions soften and become translucent. Add the mushrooms and cook for another 2-3 minutes.
  • Stir in the flour and cook for another minute to get rid of the raw flour flavour. Slowly add the chicken broth and keep whisking continuously till the sauce thickens.
  • Stir in the rosemary, parsley, paprika, salt, pepper and meatballs. Add a little more stock or water if the sauce is too thick. Simmer the meatballs for ten minutes. Stir in the heavy cream and switch off the flame. Serve hot with noodles, rice or mashed potatoes.

  • Using wet hands form the meat mixture into about 1-inch balls. Gently roll them in flour, shaking any excess.
  • Heat a large non-stick pan over medium heat. Drizzle with about 2 Tbsps oil and carefully add in the meatballs. Cook for about 2 minutes on each side, or until cooked through and golden-brown.
  • Meanwhile, in a small bowl, mix cranberry sauce with remaining ingredients until well combined.
  • Pour cranberry sauce and stir well. Reduce the heat to low and simmer until bubbly, about 5 minute

4 large boneless skinless chicken breast halves, cooked and shredded
2 (8 ounce) cream cheese, softened
1 garlic clove, minced (or 1/2 tsp. garlic powder)
1 teaspoon ground sage
1 (4 ounce) can sliced mushrooms, drained
2 (8 ounce) packages crescent roll dough
2 cups corn flake crumbs
2 (10 3/4 ounce) cans cream of chicken soup, undiluted

Steps:

  • Poach chicken in boiling water until tender. Cut into chunks and shred between 2 forks.
  • Add cream cheese, garlic, sage & mushrooms.
  • Separate crescent rolls into triangles. Place a rounded Tblsp of filling on each triangle and pull all edges up to seal.
  • Roll in corn flakes and place on cookie sheet.

3 medium Idaho potatoes
2 medium red bell peppers
1 small boneless, skinless chicken breast (about 6 ounces)
2 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
1 small onion, finely chopped
2 teaspoons balsamic vinegar
2 cloves garlic, coarsely chopped
1 cup chicken broth or stock
7 ounces cream cheese spread, Arla® Original Cream Cheese
3 packed cups baby spinach, finely chopped (about 2 ounces), plus whole leaves for garnish
1/2 cup fresh flat-leaf parsley, chopped
Vegetable oil, for frying
2 large eggs
1/2 cup all-purpose flour
1 cup panko

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the potatoes and bell peppers on a baking sheet. Put the chicken breast on a sheet of foil and fold up the sides to make a boat. Drizzle the chicken with olive oil and sprinkle with salt and black pepper. Put on the baking sheet next to the potatoes and bell peppers.
  • Bake until the chicken registers 165 degrees F on an instant-read thermometer, about 25 minutes. Remove the chicken, set aside to cool and then finely chop. Continue to bake the bell peppers and potatoes, turning occasionally, until the bell peppers are soft and their skins wrinkly, about 5 minutes more (about 30 minutes total) and until a knife slips easily into the potatoes, about 35 minutes more (about 1 hour total). When the bell peppers are done, put in a bowl, cover and let steam for 10 minutes. Remove the skins and seeds under cold running water and then roughly chop and set aside. When the potatoes are done and cool enough to handle, remove the skins and let cool completely.
  • For the red pepper coulis: Heat 1 tablespoon of the olive oil in medium skillet over medium heat. Add half of the onion and cook, stirring, until soft, about 5 minutes. Add the vinegar and half the garlic and cook, stirring, for 1 minute. Add the chopped bell peppers, chicken broth, 2 tablespoons of the cream cheese, 1/2 teaspoon salt and a few grinds of black pepper. Bring to a simmer and cook until reduced by about half, about 5 minutes. Transfer to a food processor and process until smooth. Transfer to a small bowl and set side. Wipe out the skillet.
  • For the chicken filling: Heat the remaining tablespoon olive oil in the skillet over medium heat. Add the remaining onion and cook, stirring, until soft, about 5 minutes. Add the spinach and remaining garlic and cook, stirring, until the spinach is completely wilted, about 3 minutes. Add the parsley, chopped chicken, a heaping 1/4 cup cream cheese, 1/2 teaspoon salt and a few grinds of black pepper and stir until smooth and creamy. Set aside to cool. Divide the filling into 12 even mounds and put on a baking sheet.
  • For the potato dough: Shred the cooled potatoes on a box grater over a large bowl. Add the remaining cream cheese and 2 teaspoons salt. Use your hands to work into a dough (if the dough is sticky, dip your hands into cold water). Divide into 12 even mounds. Roll each mound into a ball.
  • Line a baking sheet or large plate with parchment. Split a ball of potato dough in half. Make a deep pocket in one of the halves and stuff it with a mound of chicken filling. Flatten the other ball half with your palm, cover the filling with it and then pinch and roll until the dough is smooth and sealed. Put on the prepared baking sheet and repeat with the remaining dough and filling to make 12 balls. Transfer to the prepared baking sheet and freeze until the balls are chilled and firm, about 20 minutes.
  • Fill a large pot with 3 inches of vegetable oil and bring to 360 degrees F on a deep-fry thermometer over medium heat. Beat the eggs in shallow bowl, put the flour in another shallow bowl and the panko in a third shallow bowl. Add a large pinch of salt to each and whisk. Roll a potato ball in the flour, then dip in the egg, letting the excess drip off, and then coat in the panko. Return to the baking sheet and bread the remaining balls.
  • Working in two batches, fry the balls, turning as needed, until golden brown, about 5 minutes. Remove to a paper towel-lined plate and sprinkle with salt.
  • Spread the coulis on a platter, add the fried balls and garnish with the spinach.

  • Meatballs: In a medium mixing bowl, mix together 2 tablespoons of cajun seasoning, ½ the garlic, and all the other ingredients except the ground chicken. Add ½ teaspoon of black pepper and mix using a fork. The mixture will resemble a coarse breading. Add the ground chicken and mix until *just* combined. Do not overwork the meat. Roll into 18-22 meatballs. Mine were about 1 ½ tablespoons each.
  • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the meatballs to the skillet but do not overcrowd the pan. Cooke in batches if they don't all fit. Sear the meatballs for 4-5 minutes, flipping to brown all sides evenly. Remember you want to just brown the outside and not cook them all the way through. Remove meatballs to a plate. Repeat until all the meatballs are cooked.
  • Sauce: Add 2 tablespoons of olive oil to the pan along with the remaining garlic and the onion and sauté for 2 minutes or until the onion begins to turn translucent. Add the peppers and mushrooms and continue to cook until the mushrooms and peppers soften, about 2-3 minutes. Sprinkle the flour and the remaining teaspoon of cajun seasoning over the veggies and push the veggies around the pan to coat evenly and cook for about a minute or until the flour starts to deepen in color.
  • Stir the mixture as you pour in the chicken broth. Lower the heat, whisk in the sour cream until it dissolves completely. Allow sauce to come back to a gentle simmer before lowering the heat and letting the sauce thicken, about 6-12 minutes. When the sauce is halfway there, add the chicken meatballs and let cook for 5 minutes. Sprinkle with the basil before serving.

  • Heat 2 tablespoons olive oil in a skillet on medium heat. Sauté meatballs until just brown on one side, 3-4 minutes, then flip and cover pan with a lid to cook for 3-4 more minutes. Remove meatballs from skillet.
  • Add 2 tablespoons butter to the same pan, over medium heat. Whisk in 2 tablespoons flour until butter and flour become golden in color. Slowly add chicken broth, gently whisking until sauce starts to thicken. Add sour cream, ½ teaspoon kosher salt and ½ teaspoon black pepper.
  • Bring meatballs and sauce to a simmer, turning the meatballs occasionally to evenly cook. Just prior to serving, top each meatball with shredded mozzarella cheese and sprinkle 1 teaspoon paprika over top. Garnish with reserved dill and extra black pepper, if desired. Cover for 3-5 minutes or until cheese has melted. Serve meatballs warm and covered with sauce.
