Creamy Chicken-Apple Chili image

Got this recipe from Everyday by Rachael Ray. I am a beginner cook. My husband tried this and said that it was his favorite! He said that he would give it five stars and would like to have this served more often. Easy to make and most of the ingredients are already on hand. YUM. The recipe is customizable! Use substitutes if you have to. :)

1/4 cup extra virgin olive oil
2 lbs chicken tenders, cut into 1/2 inch thick slices
4 teaspoons chili powder
2 teaspoons ground cumin
salt and pepper
2 apples, cut into 1/2 inch cubes
1 onion, chopped
2 tablespoons butter
1/4 cup flour
2 cups chicken broth
3/4 cup milk
2 (15 ounce) cans pinto beans or 2 (15 ounce) cans white beans, drained and rinsed
2 cups monterey jack cheese (about 8 ounces)
toasted tortilla, optional for serving (optional)
chopped scallion, optional for serving (optional)

Steps:

  • In a large dutch oven, heat 2 tablespoons of olive oil over med-high heat.
  • Add chicken, chili powder, and cumin (don't worry, it was NOT spicy to us, my toddler ate it.).
  • Season with salt and pepper and cook for 5 minutes, stirring occasionally; transfer to a bowl and set aside.
  • In the same pot, heat the remaining 2 tablespoons of olive oil. Add the apples and onion and cook, stir, until softened - about 6 minutes; Add to bowl with chicken.
  • In the same pot, melt the butter over med-low heat. Whisk in flour for about a minute; whisk in the chicken broth and milk, until thickened - about 3 to 4 minutes.
  • Stir in the apples, chicken, and beans. Bring to a simmer.
  • Stir in cheese and cook until the cheese has melted.
  • Serve with the tortillas and scallions.
  • ENJOY!

1/2 pound butter, plus 1/4 pound and 1/4 pound
1 whole chicken, deboned and cut into 1-inch cubes
1/2 pound blanched French green beans
1 cup apple cider
1 pound mushrooms
1 pint heavy cream
1 teaspoon nutmeg
1 apple
Salt and pepper
Tomato, as a garnish
Parsley, as a garnish

Steps:

  • Place 1/2 pound butter into hot skillet. Place cubed chicken in skillet and cook until golden brown.
  • In another skillet place, blanched green beans with 1/2 pound butter to heat up. Add mushrooms to another skillet and cook until soft.
  • Once the chicken is golden in color, add the cider to pan. We let the cider reduce to give the chicken an apple flavor. The butter and cider will begin to form a coating of caramel on the chicken. When the sauce is reduced to a glaze, add the cream, and a little salt, and pepper. The secret is to add the nutmeg at the end for a special flavor.
  • To serve: Place chicken on plate with sauce. Slice apple and create a fan and place on plate for decoration. Finally add mushrooms and green beans next to chicken, and place a little tomato for color, and parsley.

1 (5.7 ounce) package Knorr® Rice Sides™ - Creamy Chicken
1 (10 ounce) can low-sodium diced tomatoes and green chilies
1 (16 ounce) can low-sodium refried beans
1 tablespoon chopped fresh cilantro
½ cup shredded cheese

Steps:

  • Cook ground chicken and onion in a heavy pot over medium heat until no longer pink and onions begin to turn translucent, about 6 minutes. Drain excess fat. Stir in garlic and chili powder until chicken is coated and fragrant, 1 minute. Transfer chicken and onion mixture to a bowl.
  • Prepare the Knorr® Rice Sides™ - Creamy Chicken (using the same pot) as directed on package instructions. When the rice is cooked and tender, add the ground chicken, diced tomatoes and green chilies, and refried bean to the rice. Stir until heated through, about 4 minutes. 2 pounds skinless, boneless chicken breast halves
3 cups water
1 medium green bell pepper, chopped
3 stalks celery, chopped
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon seasoned salt
1 teaspoon dried oregano
1 ½ (16 ounce) cans great northern beans, rinsed and drained
1 (8 ounce) jar salsa
1 (4 ounce) can chopped green chile peppers
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) package Monterey Jack cheese, cubed

Steps:

  • Combine chicken, water, bell pepper, celery, onion, garlic, seasoned salt, and oregano in a pot. Bring to a boil; continue to boil until chicken is no longer pink in the center and juices run clear, 15 to 20 minutes.
  • Remove from heat, shred chicken with 2 forks, and return to the pot. Add beans, salsa, and chile peppers, and return to a boil. Reduce heat to low and add cream cheese and Monterey Jack cheese. Do not allow to boil once cheeses are added; if boiling you can remove from the heat entirely. Stir until melted.
