GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.
GRILLED POTATO VOLCANOES RECIPE BY TASTY

- Preheat the grill to 400˚F (200˚C).
- Thoroughly scrub the potatoes and poke a few holes in them to vent. Wrap in aluminum foil and place on the grill over direct heat to cook for 20 minutes.
- In the meantime, mix 1 ½ cups (150g) of cheddar cheese, the cream cheese, and green onions in a medium bowl until well-combined. Set aside.
- Remove the potatoes from the grill and let them rest until they are cool enough to handle. Unwrap each potato and cut off the ends so they can stand up. Using a melon baller or a spoon, carve out the center of each potato, being careful not to make the walls too thin, and to leave a bit of thickness at the bottom as well. Fill the potatoes with the cheese mixture and wrap 2 slices of bacon around each one. Secure the bacon with toothpicks, if necessary.
- Reduce the grill temperature to about 350˚F (175˚C) and place the potatoes on the grill over indirect heat for 30 minutes with the lid closed.
- After 30 minutes, top the potatoes with the remaining cheddar cheese and cook for another 15 minutes. Before serving, garnish with a dollop of sour cream and some green onions.

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

- Preheat grill to medium-high, or oven to 425°F.
- Place the potatoes in the center of a large piece of aluminum foil or in a bowl.
- Pour the melted butter evenly over the potatoes, season with salt and pepper and toss to coat.
- Sprinkle on half of the cheddar cheese.
- Wrap the potatoes tightly in the aluminum foil and place on the preheated grill, or in the oven.
- Cook for 15 minutes, then flip the packet and cook for an addition 15 minutes, or until the potatoes are fork tender.
- Open the top of the foil packet and sprinkle on the remaining cheddar cheese.
- Leave the packet open and place it back on the grill, or in the oven. Cook for an additional 3-4 minutes, or until the cheese is melted.

- 1. Cut three pieces of aluminum foil and place two of them cross-ways on top of each other, shiny side up. Fold the edges of the bottom piece over the top piece and then fold the edges of the top piece over. Set aside.
- 2. Cut the potatoes into cubes and mix them with the onion and garlic. Place on the folded aluminum foil. Put each tablespoon of butter on top of potatoes, spaced out. Sprinkle with seasoning.
- 3. Fold in two sides of the aluminum foil over the potatoes, then roll the other two sides in. Take the third piece of aluminum foil and fold over the top.
- 4. Put in grill at 200 degrees for 1 hour. It's helpful to put them on right when the charcoal is lit and leave them in while you're getting the rest of your meal prepared, Matt will even leave them in and put whatever meat we're having in with them.
- 5. RIGHT when you take them off the grill, open up the foil and put the cheese on top to melt. TA-DA!!!!

- Prepare 4 sheets 12" x 10" of aluminum foil.
- Peel and dice potatoes.
- Place one diced potato per sheet of foil. Add one tablespoon of diced onion. Place one tablespoon of butter on top of potatoes and drizzle one tablespoon of olive oil. Season potatoes with salt and pepper. Bring the longer sides of foil sheet together and make a couple of 1" folds to close. Make sure to leave enough room for the steam. Close tightly the shorter sides.
- Place foil packets on a large baking sheet.
- If baking in the oven: preheat to 375 degrees F. Place baking sheet in the oven and bake for 18 to 20 minutes. Carefully, open the pockets and allow steam to escape. Check if potatoes are soft. Sprinkle shredded cheese, dividing evenly over all pockets. Scrunch down the sides of foil and place sheet back in the oven to melt the cheese. You can broil them for 2 minutes, if desired.
- If cooking on the grill: preheat grill to medium heat. Place foil packs on the grill, close and cook for 10 minutes. Flip over and cook for 10 more minutes. Carefully open packs and allow steam to escape. Check if potatoes are done. Top with cheese and close packs for few more minutes to melt the cheese.
- Serve.

- Preheat your oven to 400 °F. Grease a 2 quart casserole dish with butter and set aside.
- In a medium sized sauce pan, melt the butter over medium-high heat. Add in the grated onions and cook until tender and soft.

- Preheat the oven to 375 degrees F. Spray a 2 quart square baking dish (or an 8x12 is good) with nonstick cooking spray or grease with butter or oil.
- Place sliced potatoes in three tight slanted rows as indicated in the photos. You don't want them to be overly tight, make sure you leave enough space so the potato slices are slightly slanted. Add in onion slices in between the rows and on top of potatoes. Basically wherever you can fit them.
- Next make your sauce: add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a simmer; it should be a similar consistency to creamy gravy.
- Turn heat to low and stir in shredded cheddar cheese, garlic powder, salt and pepper. Taste and add more salt and pepper, if necessary.
- Pour the sauce evenly over the potatoes and onions to cover them. Don't worry, the sauce will get nice and creamy while baking.
- Cover the pan with foil, then bake for 45 minutes.
- After 45 minutes, remove foil, sprinkle top of potatoes with 1/2 cup shredded gruyere (or more cheddar) and ¼ cup parmesan. Return to the oven and bake for 30-45 more minutes or until potatoes are done and nice and golden brown on top. (Potatoes are done when the middle of the potatoes can be easily pierced with a fork.) Remove from the oven and garnish with fresh chopped parsley. Enjoy!
