Pork Chops in Creamy Champagne Sauce with Rustic Garlic Mashed Potatoes image

Number Of Ingredients 13

4 medium red potatoes, unpeeled and quartered
4 peeled garlic cloves
1/2 cup sour cream
2 tablespoons freshly chopped parsley leaves
Salt and freshly ground black pepper
1 tablespoon olive oil
6 pork loin chops (about 5 ounces each)
1/4 cup chopped shallots
2 teaspoons dried thyme
1 teaspoon dried tarragon
1 cup sparkling wine or dry Champagne
1 tablespoon all-purpose flour
1 cup milk

Steps:

  • Place potatoes and garlic in a medium saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Cook 8 minutes, until potatoes are fork-tender. Drain and return potatoes and garlic to pan. Add sour cream and mash until almost smooth (or lumpy if desired). Stir in parsley and season, to taste, with salt and black pepper.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Season pork with salt and black pepper and add to hot pan. Cook 2 minutes per side, until golden brown. Remove pork from pan and set aside. To the same pan, add shallots and cook 2 minutes, until soft. Add thyme and tarragon and cook 1 minute, until fragrant. Add sparkling wine and cook 1 minute. Whisk flour into milk and add to pan. Return pork to pan and simmer 3 to 5 minutes, until pork is cooked through and sauce thickens. Serve 4 pork chops with all of the sauce and mashed potatoes. Reserve remaining pork for rice.

6 - 8 Boneless Pork Chops (see notes)
3/4 cup Cornflake Crumbs (see notes)
3/4 cup Plain Bread Crumbs
1/4 cup Grated Parmesan Cheese (*bottled kind works great)
1 1/2 tbsp Season Salt (*more or less to taste)
3/4 cup Flour
salt and pepper to taste, added to flour
4 Eggs, beaten
1/2 tsp Season Salt, added to eggs
6-7 tbsp Olive Oil or canola oil (*for frying)
3 tbsp Butter
3 tbsp Flour
1 can Chicken Broth
1/2 cup Sour Cream
1/4 tsp Dill Seed
1/4 tsp Dill Weed (*dried kind in bottle)

Steps:

  • Pound your pork chops to about 1/4 inch thickness, a little thicker if desired.

4 pork chops
1 medium sliced onion
1 c sour cream
1 Tbsp dried dill
1/2 c champagne or white wine
salt and pepper to taste

Steps:

  • 1. Mix sour cream dill, salt, and pepper; set aside.
  • 2. Brown onions and pork chops, remove pork chops.
  • 3. Deglaze pan with champagne, making sure to lift all bits from the bottom of the pan. When combined add sour cream mixture, whisk.
  • 4. Add pork chops back in the pan, stir, simmer on low heat covered for 20-25 min.
  • 5. Serve over noodles or mashed potatoes. Top with fresh dill.

1 tablespoon Dijon mustard
1 to 1-1/2 teaspoons dill weed
1/8 teaspoon garlic powder

Steps:

  • In a small bowl, combine the first five ingredients; spoon over both sides of pork. , Broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving.

3 tablespoons vegetable oil
4 large sirloin pork chops (each about 1/2 inch thick)
1/3 cup all-purpose flour, plus
1 tablespoon all-purpose flour
1/2 cup chopped onion
2 teaspoons paprika
1 clove garlic, crushed
3/4 cup canned low sodium chicken broth, to taste
1/2 teaspoon dried marjoram
1/2 teaspoon caraway seed
1 cup sour cream
2 tablespoons chopped fresh dill

Steps:

  • Heat vegetable oil in large skillet over medium-high heat.
  • Season pork chops with salt and pepper.
  • Place 1/3 cup flour in shallow bowl.
  • Coat pork chops with flour, shaking off excess.
  • Add to skillet and cook until brown, about 4 minutes per side.
  • Transfer to platter.
  • Drain all but 1 tablespoon fat from skillet.
  • Add onion to skillet and sauté until light golden, about 5 minutes.
  • Add paprika and crushed garlic clove and stir 30 seconds.
  • Mix in 3/4 cup chicken broth, marjoram and caraway seeds.
  • Simmer 3 minutes.
  • Return pork chops to skillet.
  • Cover and simmer until pork chops are almost cooked through, adding more chicken broth by tablespoonfuls if liquid evaporates, about 10 minutes per side.
  • Reduce heat to low.
  • Whisk 1 cup sour cream, chopped fresh dill and remaining 1 tablespoon flour in small bowl to blend.
  • Add to skillet and stir until pork chops are tender and sauce thickens, about 5 minutes (do not boil).

¼ cup sour cream
2 tablespoons dill pickle relish
2 tablespoons chopped fresh dill, plus more for garnish
4 boneless pork loin chops (about 1 pound), trimmed
1 teaspoon garlic powder
¼ teaspoon salt
2 tablespoons all-purpose flour
1 large egg
1 cup panko breadcrumbs
¼ cup extra-virgin olive oil
⅛ teaspoon ground pepper
4 lemon wedges

Steps:

  • Combine sour cream, relish and dill in a small bowl. Set aside.
  • Using a meat mallet or a small heavy saucepan, pound each pork chop between pieces of plastic wrap to an even 1/4-inch thickness. Sprinkle the pork with garlic powder and salt.
  • Place flour in a shallow dish. Lightly beat egg in another shallow dish. Add panko to a third shallow dish. Dredge the pork in the flour, shaking off any excess. Dip in the egg, then dredge in the panko, pressing to adhere.
  • Heat oil in a large skillet over medium heat. Working in batches if necessary, cook the pork, flipping once, until golden and crispy and an instant-read thermometer inserted in the thickest part registers 145°F, 4 to 6 minutes. (Alternatively, use an air fryer: Coat the basket with cooking spray. Place the pork in a single layer in the basket. Cook, in batches if necessary, at 360°F until an instant-read thermometer inserted in the center registers 145°, about 10 minutes. If preparing in batches, cooking time for the second batch may be shorter.)
  • Sprinkle the pork with pepper. Garnish with additional chopped dill, if desired, and serve with the reserved sauce and lemon wedges.
