Easy and quick recipe for celery root soup or cream of celeriac soup, made with potatoes, vegetable broth, garlic, onions, cumin and dill. Served with trio of toppings including crispy pancetta, smoked salmon and roasted pepper yogurt sauce.

2 tablespoons olive oil
1 cup chopped white onion
4 garlic cloves (chopped)
1 tsp ground cumin
3 celery roots (peeled and chopped in medium pieces)
2 potatoes (peeled and chopped in medium pieces)
5 cups vegetable broth
1 cup milk
1 bunch dill (chopped)
Salt to taste
Crispy fried pancetta or bacon
Smoked salmon
Spicy roasted pepper yogurt sauce

Steps:

  • Heat the olive oil in large saucepan and add the onions, garlic, cumin and salt to make a quick refrito or sofrito (sautéed onions/garlic/spices) as the base for this soup, cook until the onions are soft, about 5 minutes.
  • Add the chopped celery roots and potatoes; cook them for another 5 minutes, stirring occasionally to avoid burning them.
  • Add the vegetable broth, bring to a boil, then reduce the temperature and simmer until the potatoes and celery root are tender, about 20 minutes.
  • Let the soup cool down a little and then blend the celery root and potato to obtain a smooth puree.
  • Reheat the soup until warm and add the chopped dill, serve with the topping on the side.

1 large celery root (about 1-1/2 pounds), peeled and cubed
3 tablespoons butter
1 package (14.4 ounces) pearl onions, thawed
3/4 cup chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1-1/2 cups heavy whipping cream
2 tablespoons minced fresh parsley
1/2 teaspoon pepper

Steps:

  • Place celery root in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 4-6 minutes. Drain; set aside., In a large skillet or Dutch oven, heat butter over medium heat. Add pearl onions, broth, sugar and salt. Cook onions, stirring often, until onions begin to brown, 12-15 minutes. Add celery root and cream; simmer until slightly thickened, 3-5 minutes. Stir in parsley and pepper.

This dish is comforting and delicious, compliments pretty much any main course, and would also be a good dish for a brunch buffet. I made this up one evening when I needed a vegetable side dish, and it was so good I plan to continue making it for years to come! A good way to describe this dish is a healthier, more vegetable-y version of your favorite cream of celery soup in side dish form! So, tweak the recipe to adjust it to your tastes and what you have on hand, and enjoy!

1 head celery
1 medium white onion, finely diced
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 1/2 cups milk
1/2 teaspoon nutmeg
2 tablespoons extra virgin olive oil
2 tablespoons kosher salt
1 tablespoon melted butter
1/2 cup breadcrumbs

Steps:

  • Clean the celery, washing off all dirt. Chop into desired size. I suggest cutting the ribs into approximately 1 inch pieces (I cut on the diagonal to try to make it look fancier). Include the ribs and as much of the leafy greens as you can--they're tasty too! (My cleaning approach for a particularly muddy head of celery was to chop first, discarding the dried out tops, dunk it all in a bowl of cold water and swish around to get the dirt to fall to the bottom, and then scoop out the celery pieces into a salad spinner to remove excess water.).
  • In a medium to large size saucepan on the stove top, saute the celery (you may need to work in two to three batches depending on your pan size and amount of celery) in the 1 tbsp extra virgin olive oil. (If you saute in batches, only use a total of 1 tbsp oil--e.g. if you saute in two batches use about 1/2 tbsp per batch.) When sauteing, try to develop a little of the browning/carmelization that will give the dish extra flavor by not stirring constantly. When the celery has cooked to your desired done-ness (e.g., I like mine lightly sauteed and still a little crispy), lightly salt and transfer to a 8 x 8 square glass baking dish. Repeat until all celery is sauteed and in the baking dish.
  • (Assuming you have not burned the celery in the pot) Using the same hot pot you just emptied of the last batch of sauteed celery, over medium heat add another 1 tbsp of olive oil and the diced onion. Saute for a few minutes to your desired done-ness. Add the 1 1/2 tbsp butter and allow to thoroughly melt, stirring in to the onions. Once melted, add the 1 1/2 tbsp flour and stir well. Keep stirring for a few minutes--not allowing to burn--as the roux comes together. (Just keep it moving in the pan, and take it off the heat if you think it is starting to burn.).
  • Slowly add small amount of the milk, stirring well after each addition to thoroughly incorporate. Add the nutmeg and taste for seasoning. You'll probably need to add more salt, maybe even a few tablespoons (depending on the type of salt you use). Keep stirring the mixture over medium heat until you get the seasonings right and the mixture comes just up to a boil and thickens. Turn off the heat.
  • Mix the melted butter with the bread crumbs.
  • Add the sauteed celery back in and stir to coat the celery with the creamy mixture. Transfer the creamy celery mixture back to the baking dish. Top with the butter/bread crumb mixture and bake (or broil if you pan can handle it) in the oven just to brown the bread crumbs.
  • Variations: You could add or substitute other vegetables in this dish, e.g., peas, carrots, potatoes, brussel sprouts, cubed squash, asparagus, leafy greens. You could also add herbs and spices to your liking. You could add shredded cheese to the roux once it comes together to give it a cheesier flavor. You can omit the bread crumb topping--I often do.

This soup is smooth and delicate, and its elegant celery leaf garnish makes it a perfect first course for a dinner party. Adding celery root (a relative of celery) imbues the soup with even deeper celery flavor.

2 Tbs. unsalted butter
6 cups thinly sliced celery (reserve 1/4 cup celery leaves)
1 medium yellow onion, chopped
Kosher salt
3 cups peeled, small-diced celery root
6 cups lower-salt chicken broth
3 sprigs fresh thyme
1 fresh or 1/2 dried bay leaf
2 Tbs. crème fraîche
Freshly ground black pepper
Canola oil for frying

Steps:

  • In a 4-quart pot, melt the butter over medium heat. Add the celery, onion, and a generous pinch of salt. Cook until tender and just beginning to color, 6 to 8 minutes. Add the celery root and stir to coat with the butter. Pour in the chicken broth, and then add the thyme, bay leaf, and 1/2 tsp. salt. Bring to a boil; then reduce the heat and simmer until the vegetables are very tender, about 15 minutes. Discard the thyme sprigs and bay leaf and purée the soup in a blender until smooth. Pass the soup through a medium-fine sieve and transfer to a clean pot. Bring the soup back up to a simmer, whisk in the crème fraîche, and season to taste with salt and pepper. Keep hot. Heat 1/2 inch of canola oil in a 1-quart pot over medium-high heat. Add the celery leaves and cook until crisp, 1 to 2 minutes. Using a slotted spoon, transfer the celery leaves to a plate lined with paper towels. Ladle the soup into bowls and top with the celery leaves.
