CREAMY SPAGHETTI AND BEANS



Creamy Spaghetti and Beans image

Risotto meets pasta e fagioli in this Tuscan classic.

5 to 6 cups chicken stock
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1/4 pound chunk pancetta chopped into small dice
4 cloves garlic, chopped
1 pound spaghetti
1 medium onion, chopped
2 carrots, cut into a small dice
1 fresh bay leaf
5 to 6 sprigs fresh thyme
1 (15-ounce) can Roman beans or small white beans (recommended: Goya brand)
Salt and freshly ground black pepper
1 cup dry white wine, eyeball it
1 cup grated Parmigiano-Reggiano
A generous handful flat-leaf parsley, finely chopped

Steps:

  • Place the stock in a sauce pot and warm it over medium heat then reduce to simmer.
  • Heat the extra-virgin olive oil and the butter in a large, deep skillet over medium to medium-high heat. Add the pancetta to brown slightly. Next add the garlic and spaghetti and toast the noodles lightly, 3 to 4 minutes. Add onions and carrots, bay leaf and thyme, and season with salt and pepper. Soften veggies a bit, 5 minutes. Add wine and allow it to be completely absorbed. Add beans then add a few ladles of stock and stir the pasta. Keep adding stock a few ladles at a time allowing liquids to be mostly absorbed before adding more, as if you were preparing a risotto. When liquids are absorbed and spaghetti is cooked to al dente, 12-15 minutes, stir in cheese. Adjust salt and pepper. Turn off heat and stir another minute. Remove the bay leaf and thyme stems. Serve in shallow bowls and garnish with lots of parsley.

1 1/2 teaspoons kosher salt, plus more for the pasta
1 pound shell pasta
1/4 cup olive oil
1 carrot, peeled and diced
1 small red onion, diced
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
1/4 teaspoon dried thyme
One 15-ounce can cannellini beans, drained and rinsed
1 cup low-sodium chicken broth
8 ounces smoked provolone or smoked mozzarella, grated (about 2 cups)
One 5-ounce container baby spinach, chopped

Steps:

  • Bring a large pot of water to a boil. Season well with salt. Add the pasta and cook for 3 minutes less than indicated in the package directions, about 7 minutes. Drain well reserving 1/2 cup pasta water.
  • Heat a large skillet over medium-high heat until hot. Add the oil, carrot and onion to the skillet. Season with 1 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 3 minutes. Add the pepper flakes and thyme and cook another minute. Stir in the drained beans and chicken broth. Reduce the heat to medium to maintain a simmer and cook for 5 minutes, stirring occasionally. Use the back of a spoon to gently mash some of the beans. Set aside.
  • Add the cooked pasta to the sauce. Sprinkle the grated cheese over the pasta and toss to coat well. Stir in the remaining 1/2 teaspoon salt and add the 1/2 cup pasta water as needed to maintain a creamy, broth-like sauce. Sprinkle in the spinach and cook until wilted.

1 (8 ounce) package small seashell pasta
2 yellow squash, chopped
1 zucchini, chopped
½ cup chopped banana squash
1 (15 ounce) can kidney beans, drained and rinsed
½ (15 ounce) can canned corn
2 (5 ounce) cans tuna, drained
½ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
  • Place squash and zucchini in a medium saucepan with 2 cups of water. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.
  • In a large bowl, combine pasta, squash, zucchini, kidney beans, corn and tuna. Mix well and chill for at least 30 minutes. After salad is chilled, stir in dressing and serve.

1 small leek, white part only, sliced
4 cups broccoli florets
½ cup vegetable broth, divided
1 (14 ounce) can butter beans, rinsed and drained
¼ cup nutritional yeast
3 tablespoons freshly squeezed lemon juice
1 clove garlic
¼ teaspoon onion powder
1 teaspoon salt
freshly ground black pepper to taste
¼ cup chopped roasted walnuts

Steps:

  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes. Drain, reserving a cup of cooking water.
  • Heat 1 tablespoon olive oil in a large skillet over medium-low heat. Add leek and cook until soft, 3 to 5 minutes; do not brown. Add broccoli and 1/4 cup vegetable broth. Reduce heat to low, cover, and cook until tender, 5 to 8 minutes.
  • Meanwhile, combine butter beans, remaining vegetable broth, remaining olive oil, nutritional yeast, lemon juice, garlic, onion powder, salt, and pepper in a blender. Process until sauce is smooth.
  • Add cooked pasta and sauce to the skillet with the broccoli; toss to coat. Add reserved cooking water, a few tablespoons at a time, if the sauce appears too dry. Evenly divide among 4 bowls and top with nuts.

250 g fettuccine
1 tablespoon olive oil
1 garlic clove, chopped
1 brown onion, diced
300 g butter beans, drained and rinsed
2 tablespoons flour
2 cups soymilk or 2 cups dairy milk
1/4 cup parmesan cheese, grated
1/4 cup lemon juice
1/4 cup fresh basil, chopped
2 zucchini, sliced and steamed
1 cup broccoli, steamed
1/4 cup pine nuts, toasted

Steps:

  • Cook pasta according to instructions on the packet. Heat oil in a frypan and saute garlic and onion until golden. Add butter beans and stir until heated through.
  • Combine flour and milk. Place butter bean mixture, Parmesan cheese, lemon juice and milk in blender and puree until smooth.
  • Pour bean puree back into frypan, add chopped basil and steamed vegetables. Bring to boil, reduce heat and simmer until mixture slightly thickens.
  • Drain fettuccine and stir through sauce. Serve immediately sprinkled with pine nuts.

Creamy Butter Beans have lots of smoked ham flavor. They're so thick and creamy and make a fantastic side for any southern meal.

1 pound dried large lima beans
1 tablespoon bacon grease or butter
1/2 cup diced onion
1/3 cup diced celery
1/4 cup diced carrot
1 1/2 cups chopped smoked ham
2 ham hocks
1 (32-ounce) carton chicken broth
4 cups water
2 bay leaves
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
4 tablespoons butter
1/2 teaspoon Cajun or Creole seasoning

Steps:

  • Rinse and sort the beans, getting rid of any broken pieces. Place in a stockpot or Dutch oven and cover with 1-inch of water. Bring to a boil. Place lid on pot and remove from heat. Let sit 1 hour.
  • Meanwhile, in a large pot or Dutch oven, heat bacon fat over medium heat.
  • Add onion, celery, and carrots and saute until soft, about 3 to 5 minutes.
  • Add ham, ham hocks, chicken broth, water, bay leaves, garlic powder, thyme, black pepper, and red pepper flakes.
  • Bring to a boil and reduce heat to maintain a simmer. Simmer for 1 hour.
  • Once beans have been sitting for an hour, drain them.
  • Add beans, butter, and Cajun or Creole seasoning to the chicken broth mixture after it has simmered for 1 hour. Continue to simmer for 60 to 90 minutes. If liquid level gets too low (ie not all the beans are submerged), add more water.
  • Remove ham hocks. Let cool slightly and then remove any meat from the bone, chop it up and return it to the pot.
  • Serve as is for a side dish or serve over rice with a side of cornbread for a main dish.

4 tbsp breadcrumbs

Steps:

  • Heat the butter beans in a small pan for 3-4 mins. Remove a quarter of them to a bowl and mash with a fork until smooth and creamy. Stir back into the rest of the beans in the pan with the soft cheese and chives, then heat for a few mins more until warmed through.
  • Transfer to a small baking dish and sprinkle with breadcrumbs. Drizzle over oil and flash under a hot grill for 1-2 mins until the crumbs are crunchy and golden.
