Bow-Ties with Peas and Ham image

This colorful pasta dish is easy to make and kid-friendly.

1 pound bow-tie pasta (farfalle)
Coarse salt and ground pepper
3 tablespoons butter
1 onion, diced
10 ounces (2 cups) frozen peas
1 cup half-and-half
1/2 pound cooked ham
Grated Parmesan cheese, for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Drain pasta; return to pot.
  • Meanwhile, heat butter in a saucepan over medium heat. Add onion; cook, stirring, until soft, 3 to 4 minutes. Add peas and half-and-half; season with salt and pepper. Simmer until thickened, 3 to 4 minutes.
  • Cut ham into strips. Add to sauce; cook until heated through, 1 to 2 minutes. Toss sauce with pasta. Serve with grated Parmesan.

1/2 cup reduced-fat chives-and-onion cream cheese (from 8-oz container)
3/4 cup half-and-half
1 cup ready-to-eat baby-cut carrots, cut lengthwise in half if large
8 oz fresh asparagus spears, cut into 1 1/2-inch pieces
1 1/2 cups cooked ham strips (1x1/4-inch)
1/4 teaspoon dried marjoram leaves

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch nonstick skillet, mix cream cheese and half-and-half. Cook over medium heat 2 to 3 minutes, stirring constantly, until melted and smooth.
  • Stir in carrots. Cook 4 minutes, stirring occasionally. Stir in asparagus. Cover; cook 4 to 5 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Stir in pasta, ham and marjoram. Cook, stirring occasionally, just until thoroughly heated.

3 cups uncooked bow-tie (farfalle) pasta (6 oz)
1 jar (16 oz) Alfredo pasta sauce
10 medium asparagus spears, cut into 1-inch pieces (about 1 cup)
1/2 cup sun-dried tomatoes in oil and herbs, drained, chopped
1 cup diced (1/4 to 1/2 inch) cooked ham
1 cup shredded Havarti cheese (4 oz)

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in 3-quart saucepan, heat Alfredo sauce over medium heat, stirring frequently, until hot. Gently stir in cooked pasta, asparagus, tomatoes and ham. Stir in 1/2 cup of the cheese. Pour into casserole.
  • Cover; bake 35 to 45 minutes or until bubbly. Top with remaining cheese.

This is like homemade macaroni and cheese but with the fun bow tie pasta and hearty ham. While this makes perfect use of leftover ham, there usually aren't any leftovers when I serve this! My family gobbles it right up.

8 ounces farfalle (bow tie) pasta
¼ cup butter
1 clove garlic, minced
¼ cup all-purpose flour
½ teaspoon salt
⅛ teaspoon ground black pepper
2 cups milk
½ teaspoon prepared mustard
2 ½ cups shredded Colby cheese
4 ounces cooked ham, julienned
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan over medium heat, melt butter. Saute garlic 30 seconds. Whisk in flour, salt and pepper. Cook and stir until smooth. Pour in milk, a little at a time, stirring constantly. Bring to a boil for 1 minute. Stir in mustard and Colby. Continue to cook, stirring occasionally, until cheese is melted. Remove from heat and stir in pasta and ham.
  • Pour into a 2 quart baking dish. Sprinkle with Parmesan.
  • Bake 20 to 25 minutes, until bubbly and golden.

4 oz fresh asparagus, cut into 1 1/2-inch pieces (3/4 cup)
1/2 cup ready-to-eat baby-cut carrots, quartered lengthwise
1/4 cup frozen sweet peas
3/4 cup cooked ham strips (1x1/4 inch)
1/4 cup light garlic-and-herbs spreadable cheese (from 6.5-oz container)
1 teaspoon butter or margarine, softened
1/8 teaspoon dried dill weed

Steps:

  • Bake rolls as directed on bag.
  • Meanwhile, in 4-quart saucepan, cook pasta as directed on package, adding asparagus, carrots and peas the last 6 minutes of cooking time. After adding vegetables, return to boiling; cook until pasta is tender and vegetables are crisp-tender. Drain; return to saucepan.
  • Add ham and spreadable cheese to pasta mixture. Cook over low heat, stirring constantly, until cheese is melted and smooth.
  • Remove rolls from oven. Brush with butter; sprinkle with dill weed. Serve warm with pasta mixture.

3/4 cup cubed ham ((100g))
3/4 cup sliced cucumbers ((70g))
3/4 cup broccoli florets ((50g))

1 tomato (halved, squeezed dry, and chopped)
2/3 cup ranch dressing
2 tablespoons mayonnaise
2 tablespoons oil ((canola or other))
3/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a large pot of boiled, salted water, cook pasta until al dente according to package directions. Drain.
  • To cool pasta quickly, pour into a large colander and run under cold water. Pour cooled pasta into a large bowl.
  • Stir together the ranch dressing, mayonnaise, oil, salt and pepper and pour over pasta. Add ham, cucumbers, broccoli, cheese, and tomato and stir just to combine.
  • Cover and refrigerate until completely chilled, at least 2-3 hours. Serve cold.
